He even owns his own small stone mill, imported from Austria, which he bought to experiment with doughs made using five-minute milled flour. “It behaves – the bread of the day on Saturdays. “It’s 20% organic rye and 80% organic , a South African heritage wheat with a low protein profile and sweet flavour.”
