Cooking with Tahini

Steamed Greens with Brown Rice, Tahini & Lemon

I love eating simply. This is truly my favourite dinner; I could eat it every night. It’s so quick and easy to make and is absolutely delicious.

Serves: 4

8 baby bok choy, sliced in 4 lengthways
4 cups broccoli, cut into florets
2 zucchinis, cut into batons 2 cups cooked brown rice
1 cup tahini
2 lemons, cut in half
Salt & pepper, to taste

Steam vegetables for a few mins until bright green and al dente.

Place cooked rice and steamed vegetables into four bowls and top with ¼ cup of tahini each, lemon juice and salt and pepper.

Tahini is a good source of beneficial polyunsaturated fats that help improve brain function and memory. Tahini is also a rich source of magnesium for strong bones and reduced risk of osteoporosis, which makes it beneficial for balancing blood sugar levels.

Makes: 1 cake

Cake

½ cup almond meal
1/3 cup cocoa powder
1 tsp baking soda
½ tsp sea salt
2 eggs
1/3 cup maple syrup
2 tsp vanilla bean paste or essence

Caramel Frosting

¼ cup tahini6 Medjool dates, pits removed3 tbsp maple syrup3 tbsp coconut cream2 tbsp
