    Most recipes require about an hour from start to finish. Some are better suited for those times when you want something quick you can have on the table in 30 minutes. No crazy exotic ingredients here – everything can be readily found in most supermarkets during the appropriate season. Every recipe has also been given the thumbs up from my family, most of whom are not vegetarian.

    If you dig into the recipe archives on my blog, thiswifecooks.com, you’ll see that I am a former meat eater. Don’t panic, friend! We’re here to cook, not judge each other. Whether you are a dedicated vegan foodie or a dyed-in-the-wool meathead, you’ll find something to appeal to your culinary senses in this book. I have been cooking and eating completely meat-free since 2011, and one thing I have discovered is that vegetarian ingredients are not only prettier on the plate but also add so much more flavor to a meal!

    Admittedly, I am a work in progress. My cheese addiction is the one thing that keeps me from going full-on vegan in my diet, for now anyway. Progress has been made toward the elimination of dairy though. For example, when milk is called for in a recipe, it is almond or coconut milk I reach for in place of the cow’s milk that used
