DOUBLE CHOCOLATE CHIP COOKIES Makes 24

Ingredients: 115g butter, softened, plus extra for greasing 110g sugar, granulated (regular sugar you use at home) 1 egg, beaten or 1/4th tin condensed milk (in this case reduce 20g sugar) tsp vanilla essence 115g refined wheat flour (maida) 2 tbsp cocoa powder tsp soda bicarbonate 100g chocolate chips (or you could chop up a piece of chocolate into tiny pieces) 50g roughly chopped walnuts

Method: 1. Preheat the oven to 180 degrees Centigrade/ 350 degrees Fahrenheit/ Gas Mark 4, and then grease 2 baking trays and set aside. Beat together the butter and sugar in a bowl till light and fluffy. Then beat in the egg and Vanilla essence.

2. Sift the maida, cocoa and soda bicarbonate into the mixture and stir in carefully. Stir in the chocolate chips and walnuts.

3. Drop dessert spoonfuls of the mixture onto the greased baking sheet, spaced well apart to allow for spreading. And bake in the oven for 10-15 minutes or until the mixture has spread and the cookies are beginning to feel firm. Leave to cool on the baking sheet for 2 minutes then remove and allow cooling completely. Repeat step 3 for the remaining mixture.
