Crepe Batter

3 eggs flour 1 C milk, low fat

Yields 4 servings (2 crepes/person)

Whisk all the ingredients together. Let ingredients rest for 20 minutes if you can. Add some vegetable oil to a hot pan and remove the excess oil with a paper towel. Tilt pan up to a 45 degree angel, pour batter into the middle of the pand to coat the bottom and rotate it to create a film on the pan. Let it heat up and turn golden (15 sec.) and then flip it (5 sec). Place cooked crepe on a plate and fill with any ingredients!!! Place filling in middle, fold up both sides, then roll them up.
