Huevos Rancheros

Ingredients 1/2 cup salsa l teaspoon butter tortillas- 1 per lab member eggs- 1 per lab member

1. Melt butter in skillet. Add tortilla and fry lightly on both sides for 30 seconds. Do not allow tortillas to become too crisp. A healthier alternative is to heat tortillas directly on top of burners or microwave until warm. 2. Drain tortillas on a paper towel and place on a serving plate. 3. Fry or scramble eggs- heat butter in skillet. 4. Break and slip 1 egg into skillet. Reduce heat immediately. 5. Cook slowly until egg white is completely firm. (You may break the yolk if you dont want the egg runny.) 6. Baste egg with butter occasionally to coagulate film of egg white over surface of yolk. 7. Place eggs on tortillas; cover with salsa and serve. (optional: add 1 T. cheese and sour cream)
