water Cocoa White granulated sugar Shortening Eggs, separated Sifted cake flour Baking powder Baking soda Salt Soured milk or buttermilk Vanilla Oven Temp ~ 375 Baking Time ~ 25 Min. Pan Type ~ Two 9 inch round pans Preheat oven, spray pan with non-stick spray and line pans with parchment paper. Pour boiling water over cocoa. Stir until mixture is smooth. Cream sugar and shortening. Add egg yolks. Beat again. Sift dry ingredients together 3 times. Add alternately to creamed mixture, the dry ingredients and the milk. Add cocoa mixture and vanilla. Lastly fold in stiffly beaten egg whites. Bake in prepared pans for allotted time. Ice with desired frosting.
