Fermentasi asam laktat dari tepung ubi kayu (Manihot esculenta Crantz) oleh Rhizopus oryzae dengan variasi

konsentrasi substrat dan waktu fermentasi Hartatik

Rhizopus oryzae is a microbe that can hydrolyze starch and use for carbon source and energy source to produce lactic acid. Cassava contain a lot of starch, there was easy to find, and potential to become fermentation substrates. The aim of the research was to know the medium concentration to produce the highest lactic acid concentration with cassava starch as medium by mold R. oryzae. The medium was 5%, 10%, and 15% (w/v) cassava starch in aquadest. The medium (100 ml) was inoculated with 1 ml R. oryzae 108 spores/ml. The medium pH value was set at 6 0,1 and added 12 mg CaCO3 as acid neutralizer then shaked o n 90 rpm. Fermentation has done for 3 days. The concentration of starch, reducing sugar, lactic acid and pH value were calculated every day. The result of the research showed that 10% medium produced the highest concentration of lactic acid with amount 10.94 g/l o n 3rd day with production rate 5.4x10-4 g/ l h.
