Lch s:

9/1907, sau khi tr v Nht, tin s - nh ha hc Kikunae Ikeda bt u pht trin v umami

Hin nay, tp on Ajinomoto c 110 nh my sn xut ti 16 quc gia trn ton cu, sn
phm ca Ajinomoto ang c bn ti hn 100 quc gia v khu vc; to ra hn 30.000 vic lm
v t doanh thu hn 10 t la M mi nm.. Vi hn 1700 sn phm thuc 4 nhm chnh l
thc phm, acid amin,dc phm, sc khe v dinh dng. Trong , acid amin chim hn 60%
th phn trn th gii, l th mnh sn xut ca tp on Ajinomoto trn ton cu.

ngoi u tin trong ngnh ch bin thc phm ti Vit Nam t chng ch ISO 14001:2004 v
h thng qun l mi trng. Cng ty cng ang p dng h thng qun l cht lng theo tiu
chun ISO 9001:2008 nhm m bo sn phm u ra t tiu chun cht lng, v sinh an ton
thc phm, p ng nhu cu ngy cng cao ca ngi tiu dng. Bn cnh cng ty cn thc
hin nhiu chng trnh ci tin v bo v mi trng nh: gim thiu nc thi, cht thi rn;
gim thiu nhim khng kh; tit kim nng lng; ti s dng 100% cht thi, gip s dng

V Umami:
i/ Khi qut:

Umami, thng c gi l v ngt tht, l 1 trong 5 v c bn cng vi v: ngt, mn, chua


v ng.
Trong mt thi gian di, cc nh khoa hc vn tranh ci rng liu umami c thc s l
mt v c bn hay khng; nhng vo nm 1985, ti Hi tho khoa hc quc t v v Umami ln
u tin Hawaii, thut ng Umami chnh thc c cng nhn l thut ng khoa hc m t
v ca glutamate v nucleotit. Hin nay, umami c cng nhn rng ri nh l v c bn th
nm. Umami l v ca axit amin L-glutamate v 5-ribonucleotit nh guanosine
monophosphate (GMP) v inosine monophosphate (IMP). Mc d umami c th c m t nh

glutamic) t to c v umami; trong khi , cc mui ca axit glutamic, c bit n
nh glutamate, c th d dng ion ha v mang n v umami c trng. GMP v IMP gia tng
cng v ca glutamate.
Glutamate c mt lch s lu i trong nu n. Hy Lp c i, nc mm c gi l
Garon cn La M c i, nc mm c gi l Garum hay Liquamen. Nhng ghi chp c cho
thy dng nh phng php sn xut ny rt ging vi phng php sn xut nc mm truyn
thng ca cc nc ng Nam . Nc mm c sn xut vo thi c i rt c th c hm
lng glutamate cao v phng php sn xut ging vi phng php sn xut nc mm
ng Nam ngy nay . V vy, s yu thch v ca glutamate hay v umami c du tch t
hn 2,500 nm trc.

ii/ Khm ph:


Nh khoa hc Nht Bn, tin s Kikunae Ikeda sng c hai nm hc vt l sau khi tt
nghip i hc Hong gia Tokyo ti Nht Bn. Trong sut thi gian sng ti c, ng quan tm
ti v ca nhiu loi thc n khc nhau m ln u tin ng c thng thc nh c chua, pho
mt, mng ty v tht. Vo thi k , cc nh khoa hc tin rng ch c bn v c bn. Tuy nhin,
tin s Ikeda cm thy c th c mt v c trng khc vi bn v c bn .

Sau hai nm sng ti c, Tin s Ikeda quay v Nht Bn. ng nhn
thy c mt v cha c nhn bit trong cc mn n ngon, khc bit hon

ny r rt nht trong nc dng nu t to bin kh - kombu dashi, mt

Tin s K.Ikeda

Umami c tnh cht du nh nhng ko di v kh m t. N gy ra s tit nc bt v to


cm gic gn trn b mt li, kch thch c hng, vm ming v pha sau vm ming (theo nhn
xt ca Yamaguchi, 1998). V umami khng ngon mt cch t thn, m n lm cho nhiu loi
thc phm khc tr nn hp dn, c bit khi thc phm c mi hng hi ha. Nhng cng
nh cc v c bn khc, ngoi tr v ngt ca ng, umami ch ngon trong ph nng tng
i hp. i vi mt s nhm dn c, chng hn nh nhng ngi cao tui, v umami s c ch
cho h, v cm gic v mi v ca nhng ngi ny km do tui tc v do iu tr. Vic mt
cm nhn mi v c th dn ti tnh trng suy dinh dng, lm tng nguy c bnh tt.

iv/ Thc phm giu umami:


Glutamate (cht to v umami) l mt thnh phn chnh ca protein thc phm (rau c qu v
tht). Thm vo , glutamate t do tn ti t nhin trong phn ln thc phm nh tht gia sc
gia cm, hi sn v rau c qu. Trong c th chng ta, gn 70% th trng l nc, 20% l protein
v khong 2% l glutamate. Glutamate c th tm thy trong c, no, thn, gan; mt s c quan
v m khc. Mt ngi trung bnh hp th khong 10 20 gam glutamate lin kt v 1 gam
glutamate t do t thc phm mi ngy. Bn cnh , hng ngy c th ngi cng tng hp
khong 50 gam glutamate t do.
Con ngi thng nm v umami ln u tin l t sa m. Sa m c cha nhiu glutamate
hn cc loi sa khc (19mg/100ml - trong khi sa b v sa d ch t 1-4mg/100ml).
C chua c bit giu glutamate(245mg/ 100g), v y l mt trong nhng l do c chua l
loi qu c s dng rng ri trn th gii gip mang li v umami cho rt nhiu mn n khc
nhau. Hm lng glutamate trong c chua thay i trong qu trnh chn ca qu.

Cc loi rau giu glutamate khc l : ng (106mg/ 100g), nm (150mg/100g), khoai ty
(102mg/100g). Cc loi tht cng giu glutamate, tht b (107mg/ 100g), tht ln (337mg/100g),
tht g (40mg/100g). V th, nu khng mun s dng m chnh v lo ngi s an ton, bn hon

Phn 2: Cc sn phm chnh.


T nhng ngun nguyn liu thin nhin di do vi cng ngh hin i, tin tin ca Nht
Bn, Cng ty Ajinomoto Vit Nam sn xut ra nhng sn phm cht lng, an ton cung cp cho
hng triu ngi tiu dng Vit Nam trn khp mi min t nc.
Vi mc tiu tr thnh cng ty hng u ti Vit Nam trong lnh vc gia v, Ajinomoto Vit
Nam a ra th trng nhiu dng sn phm gia v ph hp vi khu v ca ngi Vit Nam,
gip to ra nhng ba n ngon gp phn mang n nim hnh phc cho mi ngi.
Bn cnh cc gia v truyn thng, Ajinomoto Vit Nam cn to ra nhng gia v mi gp phn
lm phong ph thm ba n cho ngi tiu dng, ng thi m bo mang n s tin dng cho
ngi s dng v ph hp vi cuc sng hin i.
Hin nay vi hn 1700 sn phm c phn phi trn ton th gii, vi a dng cc chng
loi, ph hp vi vn ha m thc ca tng quc gia. Ring ti Vit Nam, hin cng ty
