Creating Balance is the most important part of making a fine tasting beer. Anybody can put together a simple recipe of the 4 ingredients, malt, hops, water and yeast but its the balance between those ingredients that will determine the identity of the beer. Collaboration is fun, challenging and sometimes uncomfortable. Its an opportunity to try something different, to see something from another perspective and in brewing, to taste something new. Tea in beer is something I might never have tried before so its been all of these things. Tea is a natural product that varies with climate, weather, soil and human intervention. When we blend Portsmouth Tea we attempt to create balance from the chaos of these changing factors, so that the end result never changes. Flavouring beer with tea is a fascinating experiment that involves the collision of two quite different products and worlds. You might think that tea and beer are opposites.
