Homemade Teriyaki Sauce Many kinds of bottled teriyaki sauce are sold at grocery stores, but basic sauce

is easy to make at home with a few ingredients. The key ingredient is mirin whi ch adds luster to ingredients when cooking with the sauce. Ingredients: 1/2 cup soy sauce 1/2 cup mirin 2 Tbsp sugar Preparation: Combine all ingredients in a saucepan. Stir the mixture well. Put it on medium h eat and bring to a boil. Turn down the heat to low and simmer for a couple minut es. Stop the heat and cool the mixture. *If you don't have mirin, you can substitute sake and sugar for mirin. The rati o of sake to sugar is 3 to 1. Adjust the amount of sugar, depending on your pref erence.

Original recipe makes 1 2/3 cups Change Servings 2/3 cup mirin (Japanese sweet rice wine) 1 cup soy sauce 4 1/2 teaspoons rice vinegar 1 teaspoon sesame oil 1/3 cup white sugar 7 cloves garlic, minced 1 tablespoon minced fresh ginger 1 dash red pepper flakes black pepper to taste Directions Bring mirin to a boil in a saucepan over high heat. Reduce heat to medium-low, a nd simmer for 10 minutes. Pour in soy sauce, rice vinegar, sesame oil, and sugar . Season with garlic, ginger, pepper flakes, and black pepper; simmer an additio nal 5 minutes. Store in a tightly sealed container in the refrigerator.
