Pork and vegetable curry stir-fry

Ingredients:
250ml (1 cup) vegetable oil 2.7kg (6lb) stripped pork 60g (2 oz) minced garlic 30ml (2 tbs) curry powder

1.75kg (1 bag) Arctic Gardens Thai Style Stir-Fry frozen mixed vegetables 180ml ( cup) soy sauce 250ml (1 cup) water 60ml (4 tbs) corn starch to taste salt and pepper

Method:
In a large saucepan, heat oil, sear pork until light brown colouration. Put aside and reserve. In the same pan, add garlic, curry powder and vegetable mix, stir for 3 minutes. Mix together, soy sauce, water and corn starch, pour over vegetables. Add pork, and stir until sauce thickens and vegetables are tender. Salt and pepper to taste Serve.

Presentation Suggestions:
Serve on rice noodles or Indian rice.
