ALMONDCOOKIERECIPE Makes30cookies PrepTime:15minutes CookTime:25minutes TotalTime:160(refrigeration)minutes Ingredients: 2cupsofglutenfreeflour teaspoonofbakingpowder teaspoonofbakingsoda teaspoonofsalt cupofEarthBalanceNonDairyVeganMargarine cupofCriscoAllVegetableShortening 1cupofwhitesugar 1organicbrownegg 2teaspoonsofMcCormickPureAlmondExtract 30whole,blanchedalmonds(oneforeachcookie) Preparation: 1. Preheatovento325degreesFahrenheit. 2. Inalargebowl,sifttheflour,bakingpowder,bakingsoda,andsalt.Inamedium bowl,useanelectricmixertobeatthemargarine,shortening,andsugar.Addthe eggandalmondextractandbeatuntilwellblended.Addtotheflourmixtureandmix well.Note:thedoughwillbecrumblyatthispoint,butdontworrythatiswhatits supposedtobelike. 3. Useyourfingerstoformthemixtureintoadough,andthenformthedoughinto2 rollsorlogsthatare1012incheslong.Wrapandrefrigeratefor2hours. 4. Takealogandlightlyscorethedoughatinchintervalssothatyouhave15pieces andcutthedough.Rolleachpieceintoaballandplaceonalightlygreasedcookie tray,approximately1inchesapart.Placeanalmondinthecenterofeachcookie andpressdownlightly.Repeatwiththeremainingdough.

12/11/13 (steps2and3werenotphotographed) Step 1 was not completed today because the dough needed to be refrigerated for 2 hoursbeforebaking. Step 2 was completed today.I hadmy brother, Cameron,timeme onhis phonewhile I worked(at normalspeed,itwasnotarace),sothatIcouldfilloutthepartofthechartthat askedmeto recordtheactualtimeittooktocompletethatcertainstep.Imixedtheflour, baking powder, baking soda, and salt all by myself. For the electric mixer I put the ingredients in and my brother and mother operated the mixer for me and scraped the sides down. I added the almond extract but my mother cracked the egg because she could do it without getting the shell in the mixture better than Icould. Ialso pouredthe flourmixtureintheelectricmixer,butIstilldidnotoperateit. Step3was completed today.My motherhelpedme withthis part bydemonstrating how to do it withone logfirst,andthenI did thesecond one. Mymothershowedmehowshe justwrappedthe doughinsaranwrapinordertoshapeit,soshekilledtwobirdswithone stone.Ishapedthesecondlogusingthemethodshehadpreviouslydemonstrated. 12/12/13 (steps1and4werephotographedthistime) Step1wasdoneattheverybeginningbyme. Step2and3hadpreviouslybeencompleted. Step4was completed today.My mothermadetickmarks on the logsof doughto mark where I was supposed to cutthem,and when she didthat Icut the dough. Together,we shaped thepieces of doughintoballsandputthemonthecookingtrays.Wealsolightly pressed the almonds on top of each cookie. For the second log of dough we did the same thing, except I was the one whomadethetickmarks and cut thedough.She put onetrayintheoven,andIputtheothertrayintheoven. Thecookieswerethenputintothepreheatedovenfor25minutes.Isetthetimermyself. Whenthe cookies were removed from theoven,theyhadspreadsomuchthattheywere all connected. Mymothercutthemtobeseparatebecauseshehadjustgottennewmats to put in the cooking trays, and she wantedthem toremain unharmed for a while. After they were all separate again, they were then left tocoolandmymotherand Iput them awayfortomorrow. 12/13/13 (nophotographswereneeded) ThecookieswerebroughttoschoolfortheYummative,and(hopefully)enjoyed.
