Cheese and Red Pepper Jelly Thumbprints

1 cup flour
1/2 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon black pepper
1/2 teaspoon dried parsley
or 1-1/2 teaspoons fresh parsley
1/3 cup cold butter, chopped
2 cups old cheddar cheese, shredded
1/2 cup red pepper jelly

Combine flour with spices. Stir in fresh parsley if using.
Cut in butter with a pastry cutter until it resembles coarse meal.
Stir in cheese and press together to make a dough. If it doesnt stick together
add more butter or a bit of oil.
Wrap dough in plastic wrap and refrigerate for 30 minutes.
Roll dough into 1-inch balls.
Bake on a cookie sheet at 400 degrees F for 5 minutes. Press centres to
make a thumbprint and spoon red pepper jelly into the depressions. Continue
baking for 15 minutes or until edges turn a golden brown.
Serve warm or cold.
