Lesson Background

Subject: Advanced Baking Grade Level: 11-12

Differentiation Narrative (rationale how you are differentiating and why):
Differentiation for students with an IEP because of low reading should have the assignment read aloud.
Teacher should remain close at hand to assist the student in any way. A partner for the IEP student
could be assigned to assist the student.

Differentiation for Honors level students. These students should be asked to assist the teacher in helping
the students that fall behind. Also, honors level students should have a project extension where they will
cost out an entire meal.

Content Standard 8: Demonstrate the integration of knowledge, skills, and practices required for careers
in hospitality, food science, dietetics, food production and services.

Students will be able to use the computer to visit Shopfromhome.com and price out a chocolate chip
cookie recipe.


Materials, Media, Resources:
1. Computer
2. Chocolate Chip cookie recipe
3. Caluclator
4. Pencil
5. Food Cost sheet
6. Equivalent handout
7. Smartboard or some type of projection device for the computer.






Lesson Procedure


Initiation (hook to lesson, explanation of objectives, engage students):
1. Do now: Write on the board: How do bakers know how much money to
charge for one cookie?
2. Read the lesson objective to the students: At the end of the period, students
will be able to use shopfromhome.com to price out a grocery list.
3. Ask student to share their Do now answers.

Timing:
5 minutes
Performance Tasks:
1. Hand students a chocolate chip cookie recipe and a food cost sheet.
2. Ask students to go to shopfromhome.com
3. Direct students to write down all of the ingredients on the food cost sheet.
4. Show students the price/unit for flour.
5. Have students gather all of the prices for the recipe.
6. Students should then determine the amount of product needed for each
food item and do the math calculation to find the price point per unit.

Development of Lesson:
On the SMARTboard, show the students the shopfromhome.com website.
Point out the price per unit. Ask students how much flour do you need for the
recipe? How is the flour being sold at shopfromhome? by pound? by ounce?
Look at your equivalent sheets. How can you make your recipe match the way
the flour is sold at shopfromhome.com? Travel from student to student to
make sure that each student is able to find the prices for each ingredient.
If students are unable to finish the math during class, they will finish it for
homework.

Closure:
Exit slip: Write down three questions you have about finding the cost of a
recipe. If you have no questions, write down three things that you will
remember for tomorrow.

Assessment Strategies:
Teacher will use the Do now as a type of pretest to find out how much students know about recipe
costing.
Teacher will monitor students while they are on the computer finding the prices of the ingredients.
Students will complete the food cost sheet and turn it into the teach as formative assessment.
Teacher will use the exit slip as a means of checking for understanding.
