Baked Rhubarb with Vanilla (148)

To make enough for 4, you will need:


A roasting tin.
500g (1lb 2oz) fresh rhubarb
200g (7oz) white sugar
2 vanilla pods

Preheat the oven to 200C/gas 6. Trim the ends off each piece of fruit, cut into
any size piece you wish, then put in a roasting tin and top with the sugar. Run
a knife through the centre of the vanilla pods and place on top of the sugar.
Cover the tin with foil and seal well. Cook in the oven for 20 minutes, then
remove, but leave the foil in place for 10 minutes. Serve hot or cold with icecream or clotted cream.
