Broccoli and Blue Cheese Quiche (83)

A simple, delicious quiche. The blue cheese is lovely but if you're not keen, use a tub of soft
cheese instead.

175 g (6 oz) plain flour


Pinch of salt
75 g (3 oz) margarine
2 tbsp cold water
500 g (1 lb) broccoli
125 g (5 oz) blue cheese
150 ml (5 fl oz) milk
3 eggs

1. Sift the flour and salt into a bowl. Cut the margarine into small pieces and
rub into the flour until the mixture resembles fine breadcrumbs. Add the
water to mix to a firm dough, then wrap in cling film and chill for 30 minutes.
2. Meanwhile, cut the broccoli into florets and steam for 10 minutes until just
tender. 3. Roll out the pastry on a lightly floured surface to line a 20 cm (8
inch) flan dish.
Prick the surface with a fork and bake blind at 200C/400F/Mark 6 for 15
minutes until just firm to the touch.
4. Arrange the broccoli in the pastry case and crumble the cheese on top. Beat
the eggs with the milk and pour over the broccoli.
5. Bake at 200C/400F/Mark 6 for 35 minutes until set and browned.
