Cornish Fairings Biscuits (118)

18 Biscuits

8oz / 225g plain flour


1/2 tsp salt
2 tsp baking powder
2 tsp bicarbonate of soda
2 tsp ground mixed spice
3 tsp ground ginger
1 tsp cinnamon
4oz/ 110g butter
4oz/110g caster sugar
4 tbsp golden syrup, gently heated

Heat the oven to 200C/400F/gas mark 6. Sieve together the flour, salt, baking
powder, bicarbonate of soda, mixed spice, ginger and cinnamon. Rub in the
butter with your fingertips until the mixture resembles breadcrumbs. Add the
sugar. Pour in the syrup and mix thoroughly to a reasonably stiff consistency.
With floured hands, roll the mixture into walnut-sized balls. Place them on a
greased baking sheet, well spaced to allow them room to spread. Bake for 1012 minutes, moving the baking sheet from the top of the oven to the bottom
after 5-7 minutes or as soon as the biscuits start to brown.
Leave the fairings to stand until completely cooled.
