Potato Casserole

4 pounds potatoes, cut into 1/4-inch cubes


2 tablespoons olive or canola oil
2 teaspoons chili powder
1 teaspoon salt
1/2 teaspoon black pepper
1 cup cheddar cheese, grated
1/2 cup light sour cream
1/2 cup light cottage cheese

Mix potatoes, oil and spices in a 9x13-inch lasagna pan. Cover with foil and bake at 400
degrees F for one hour, stirring occasionally.

Mix together cheeses and sour cream. Stir into cooked potatoes and bake 10 minutes
longer.
