A) Who is credited with bringing pasta to Italy? Where was it supposedly
from? Venetian merchant Marco Polo was said to brought back pasta from
Italy although some thought otherwise. People said the pasta supposedly
originated from Polos journey to China.
B) What is the all important flour used in making pasta? What is the name
of the hard wheat that it is derived from? Lagane and it is derived from
durum wheat.
C) What was spaghetti called in 1895? Spaghetti in 1895 was called
macaroni.
D) When was the first tomato and pasta recipe recorded? It wasnt until 1839
that the first pasta and tomato dish was documented.
E) How much pasta do Italians eat compared to Americans? Its estimated
that Italians eat sixty pounds of pasta per person per year, easily beating
Americans who eat about twenty pounds per person.
F) What is the Italian word for dried? What is the Italian word for fresh? Today
the Italian word for dried is Pasta Secca and the Italian word for fresh is
Pasta Fresca
G) Approximately how many different shapes of pasta are there in Italy?
There are roughly 350 different shapes of pasta in Italy.
H) By law, what are the ingredients in Italian pasta? By law dried Italian pasta
must be made with 100% durum semolina flour and water.
I) What is the purpose of ridges on pasta? These ridges on the pasta are
made to hold onto sauce well.
J) How long is Italian pasta dried? Most pasta is dried for 50 hours at a low
temperature.

serve pasta fresh to a guest you are showing them that you care, you have
exceptional preparation skills and that you take pride in your pasta.

pasta has been made in the household of many Italians for generations
however; the region of Emilia- Romagna is home to the best fresh pasta in
Italy.

The term used to describe the doneness of pasta is called al dente.
N) Why should a large quantity of water be used to cook pasta? What other
ingredients should be added to the water and why? Cooking pasta in a large
quantity of water helps to ensure that it wont stick while cooking and
ensures that it will be cooked all the way through. Also adding plenty of salt
makes for the perfect pasta. Pasta doesnt come with a noticeable amount of
salt on otherwise.
O) Why should you never rinse your pasta? If you rinse your pasta youre
allowing the flavor to drain out of it.
P) What is a good rule to remember when deciding the sauce for your pasta?
When deciding on what sauce to use for what pasta remember simple pasta
is good with simple sauces and more complex sauces work better for thicker
more complex shaped noodles.

acini di pepe, and tubettini.
D) What ingredients are used in lasagna to make it vegetarian? Things like
beans, tofu and vegetables.

PASTA RECIPES
Chessy Baked Tortellini

Ingredients

Olive oil

2 cups marinara sauce

1/3 cup mascarpone cheese

1/4 cup chopped fresh Italian parsley leaves

2 teaspoons chopped fresh thyme leaves

1 pound purchased cheese tortellini

2 ounces thinly sliced smoked mozzarella

1/4 cup freshly grated Parmesan


Directions
Preheat the oven to 350 degrees F. Lightly oil an 8 by 8 by 2-inch baking
dish.
Whisk the sauce, mascarpone cheese, parsley and thyme in a large bowl to
blend. Cook the tortellini in a large pot of boiling salted water until just
tender, about 2 minutes. Drain. Add the tortellini to the sauce and toss to
coat. Transfer the tortellini mixture to the prepared baking dish. Top the
mixture with the smoked mozzarella and Parmesan. Cover and bake until the
sauce bubbles and the cheeses on top melt, about 30 minutes.

Baked Ziti
Ingredients:
1 pound of dry ziti pasta
parmesan cheese

2 jars of spaghetti sauce

1 onion chopped

6 ounces of provolone cheese slices

1 pound ground lean beef

1/12 cups of mozzarella cheese

2 tblsp

Directions:
Bring a large pot of slated water to a boil. Add ziti pasta and cook until al
dente.
In a large skillet brown onion and ground beef on medium heat, add
spaghetti sauce, and simmer for 15 minutes.
Preheat the oven to 350; butter a 9x13 inch baking dish. Layer as followed;
of the ziti, provolone cheese, sour cream, sauce mixture, remaining ziti
mozzarella cheese and remaining sauce mixture. Top with grated parmesan
cheese. Bake for 30 minutes.
Gnocchi with Cinnamon Butter
Ingredients:21
cups of butter
1 cinnamon stick
1 package of store bought gnocchi
Salt
1 tblsp of sugar plus more to taste
1 tsp of ground cinnamon

Directions:
Melt the butter with the cinnamon stick in a heavy medium skillet over
medium heat until melted. Remove the heat and set aside.
Cook the gnocchi in a large pot of salted boiling water until the gnocchi rise
to the surface. Discard the cinnamon stick from the butter sauce and reheat
the sauce over low heat. Using a slotted spoon, transfer the cooked gnocchi
to the hot cinnamon butter in the skillet. Sprinkle with cinnamon and sugar.
