Vinification
Cabernet Sauvignon grapes have a slower maturity and are
usually the last to be picked in our vineyard. They are
picked at their optimum level of maturity. Specially selected
yeast is used to extract maximum aromas and flavours. The
grapes are fermented for 15 to 25 days on the skins. A small
part of this wine is kept in barrels.
Wine tasting
Dark purple plum in colour with delicately coloured edges.
Ripe fruited blackcurrants, dusty cassis, spices and cherry
chocolate. Ripe fruit follows through from the nose, dark
cherries and tobacco. Elegance from tip to tail.
Food pairing
Barbecued meat, pork, lamb and beef.
Serving temperature: 18 - 20C.
