See steo 12 on nage 10 for how to remove the kneader blade from the loaf. Why ia broad flour used in most of the recipes ? Bread flour is high in arotein. When kneaded the protein araduces oluten that gives bread a strong structure more tolerant of variations in the recipe, weather constions, tc, than all-purpose flour Can | use all-purpose flour in my breadmaker? You may use all-purpose ‘ior, however. the bread will be lower in volume and the texture wil be slightly cifferent than bread made with bread flour. Because the breed structure is less strong than when bread flour is used, breads made with all-purpose flour arent a5 tolerant to additonal ingredients such as ‘uit, rans or vegetables, Can | use solf-rising tour in my breedmaker? No, the leavening in self-rising flour interferes with the yeast, and the result will not be satisfactory, What is gluten ? Gluten is the insoluble protein found in wheat fours. Hard wheat has a higher oluten content than soft wheat. Guten is formed which liquid is added to flour ana kneaded. Guten is the foundation of 2 good lost of bread Can | use my favorite bread recipes in my breedmaker? You can if you are wiling to experiment. Unfortunately, there ig ne tried-and-true formula for doing this because bread recipes vary. The recipe needs to be scaled down to fit the flour restrictions of your breadmsker (4 34 cups for BAKE setuings, 4% cups for DOUGH setting). You wil have to figure amounts mathematical.
