Abstract

This research was conducted to find out the relationship of meatballs food street hygiene and
sanitation toward Escherichia coli and Salmonella sp. bacterial contamination at all
elementary schools in Kelurahan Kapuk, West Jakarta on February 2015. Meatballs are the
most popular street food in Indonesia and the most favorite food for society especially for
elementary students. Meatballs which are processed meat products could be contaminated by
bacteria so that it becomes one of the main sources of foodborne disease. The research
purpose is to find out the relationship of meatballs street food hygiene and sanitation toward
Escherichia coli and Salmonella sp. contaminant level at all elementary schools in Kelurahan
Kapuk, West Jakarta. The research type was descriptive analytics by cross sectional design.
The total sample is 25 meatballs sellers. There are 24 samples which are positively
contaminated by Escherichia coli and 21 samples are positively contaminated by Salmonella
sp. After the research conducted using Standard Plate Count (SPC) method, the total amount
of Escherichia coli and Salmonella sp. exceeds the Maximum Contaminant Level for
microbiological contaminants in National Standard (SNI) of food 7388:2009. In general,
meatballs street food hygiene and sanitation at all elementary schools in Kelurahan Kapuk
have completed the condition, and based on Fishers test result, it was found that there is no
relationship between sellers hygiene and sanitation practices with the existence of
Escherichia coli and Salmonella sp. in meatballs which are sold at all elementary schools in
Kelurahan Kapuk, West Jakarta.
