Recipe Analysis for Lentil Soup
The first recipe that I analyzed was from a cookbook called Simple Italian Cookery. This
cookbook was written in 1912 by Antonia Isola. The lentil soup recipe is called lentil soup but
below, bodo di lenticchie is written because this cookbook has Italian recipes. This lentil soup
recipe is very simple with few ingredients. The only ingredients are dried lentils, cream, butter,
and meat stock. This is the only recipe with cream and butter. The recipe is written in a standardized form and there is a paragraph following the ingredients with a narrative explaining how to
cook the soup. There is not any pictures or much information about the soup besides the recipe.
You can tell that the cook book is old based upon its little detail in describing how to cook the
dish.
The next recipe that I looked at was from a cookbook called Good Old Food by Irena
Chalmers. This cookbook was written in 1988. The lentil soup is called lentil soup and the recipe
is written in a standardized from with a narrative following. Plus, there is a colored picture of the
lentil soup on the next page. This soup has a lot more ingredients than the soup from Simple Italian Cookery. The soups ingredients are lentils, olive oil, onion, carrots, celery, water, 2 ham
hocks, parsley, thyme, salt and pepper. The narration is a lot longer than the recipe from 1912
and I was surprised that the Italian version did not include olive oil like this recipe.

The recipe from 1970-1980 that I analyzed was baked lentils from A Librarians Cook
Book by Liselotte F. Glozer. This book was published in 1970. The recipe is written in standard
form and there is a narrative following the ingredients. The ingredients are lentils, salt, rashers of
bacon, flour, broth, vinegar, sugar, and pepper. One thing different about this cook book is that
the author on the next page talks about what type of lentils she prefer, which are brown lentils.
Also, this recipe involves frying bacon before adding it to the lentils. I believe that this will add a
lot more flavor than the soup from 1912.
The last recipe I found was from Food Network and it is a lentil soup recipe from Alton
Brown. It is written in a standardized form and there is a paragraph after describing how to make
the soup. Out of all of the recipes, this is the only one with nutritional value. Plus, this is the only
recipe from the twenty first century and it has the time value of how long it takes to make. The
ingredients are olive oil, onion, carrot, celery, salt, lentils, tomatoes, chicken or vegetable broth,
coriander, cumin, and grains of paradise. In my opinion, this is a very simple recipe and it has
similar ingredients to the other recipes, such as olive oil and vegetables.
Out of all of the recipes, the lentil soup from Food Network and from Good Old Food are
the most similar and they are the close in year. Plus, they describe how to cook the soup in the
most detail. Also, Good Old Food and A Librarians Cook Book are similar because they use
some form of pork to season the lentils. However, A Librarians Cook Book dish is less soupy. It
seems as if throughout the years, more ingredients were added to food and more details describing how to cook the food was added in cook books. The recipe in 1912 has few details.
I have an interest in recipe development. It was interesting to see how the recipe for lentil
soup stayed similar throughout years, but still had some minor changes. All the soups had some

type of meat involved for flavor. However, over the years, more ingredients were added. I would
like to look up other recipes to see how they changed over many years. In addition, I found it interning that lentil soup has been around for so long.
I could not see myself creating my own recipe book because I do not have the creativity
to make dishes. However, I could see myself cooking in a show if someone was there to help me
make the dishes and recipes. I love to watch cooking shows and my favorite food network star is
Ina Garden. I love how much effort she uses while cooking and all of her dishes look very good.
I definitely would like to work for a food company when I am older. I love food and not only do
I love to eat, but I am interested in the food science and management behind a food company.
My dream is to work for a vegan food company and help to create vegan dishes that taste and
look as good as non-vegan foods. I wish that one of the lentil soup dishes were vegan, but I
would know how to create a vegan version.
