Old Fashion Spinelli Raisin Bread..Anthony Spinelli.

This old style raisin bread was made by my mother who passed
away in 2003 and is now with the Lord in Heaven!!!Thank you
mom for teaching me these super old time recipes!
These are the ingredients for this Spinelli Style Raisin Bread!
5-cups all purpose flour.
1-cup sugar.
1-tablespoon cinnamon.
1-1/2 cups of raisins.(soak in warm water for 10 minutes)
1/2-cup milk with two ounces of warm water.
2-packets of yeast mixed with 1 tablespoon sugar and 8 ounces
of warm water.....105 degree water..
Total liquid of milk,and water,not to exceed 14 ounces..
Mix yeast,water,and 1 tablespoon sugar into 8 ounces of warm
105 degree water and let sit for 10 minutes..
Mix all dry ingredients and drain raisins before adding to flour
mixture..add water and yeast mixture and mix in a bowl with a large
spoon...Once incorporated,dump on a floured board and knead for
ten minutes...let rise in a covered bowl for 2 hours...
Split dough into two sections and roll each one out into a
rectangular shape,roll up like a jellyroll,seal ends by tucking
under...place into two greased and floured loaf pans and let rise
one more hour...Coat top with a mixture of brown sugar and water..
Bake in a 350 degree oven for for 50 minutes or until internal
temperature reaches 195 degrees with a thermometer pierced in
the center...This will be done at this internal temperature.
