Orange, Banana and Cranberry Loaf`

Self raising flour 90 g 175 g


Baking powder ¼ tsp ½ tsp
Soft brown sugar 75 g 150 g
Bananas mashed 1 2
Chopped mixed peel 25 g 50 g
Chopped mixed nuts 40 g 75 g
Cranberries dried 75 g 150
Orange juice 45 ml 90 ml
Eggs 1 2
Sunflower oil 75 g 150 ml
Method

1. grease and line a 1 lb loaf tin


2. sieve the flour and baking powder into a mixing bowl
3. Stir in the sugar, peel, nuts and cranberries
4. Mix the orange bananas, juice, eggs and oil together stir well.
5. Add to the mixture and stir until the mixture is well blended together.
6. Pour the mixture into the baking tin and place into a preheated oven 180°C for
about 30 – 40 minutes or until firm. You can check to see if your cake is cooked by
inserting a skewer into the centre of the cake, if it comes out clean it is cooked.
7. Turn out on a wire rack and leave to cool.

Icing sugar 75 g
Orange grated rind and juice 1
1. Peel the orange zest from the outside of the orange, cut into thin strips and bring to
the boil in water, refresh.
2. Return the orange zest to the pan and just cover with water, add the sugar and boil
until the zest is caramelised. Using a fork lift out onto silicon paper and leave to
cool.
3. Mix the icing sugar with a little orange juice.
4. Drizzle the orange icing over the cake and decorate with the orange zest.
