Here is a delicious (and easy) butternut squash soup to share with family and friends!
1 package cubed butternut squash 2-3 large red potatoes cubed medium red onion -- chopped coarsely 2 cups baby carrots 2 bay leaves 2+ boxes of chicken broth

In a large soup pan, soften onions in a small amount of olive oilthen throw in everything else! The chicken broth should just cover the vegetables. Bring to a boil, then simmer until vegetables are soft. Remove bay leaves. Mill in food processor until smooth (you will have to do this in batches) and voilayou have a great soup!!
