FLAVOURS 2012

Introduction School of Hospitality, Lovely Professional University is organizing its 1st Culinary Fest Flavours 2012 on 3rd November, 2012 to promote the Chefs Profession amongst young students of Hotel Management. During this fest there are events which will provide the budding professionals a platform to showcase their culinary skills which in turn will motivate them to build strong foundations in Hospitality Industry. The Indian Hospitality industry has emerged as one of the key industries driving growth of the services sector in India. It has evolved into an industry that is sensitive to the needs and desires of people. The fortunes of the hospitality industry have always been linked to the prospects of the tourism industry and tourism is the foremost demand driver of the industry. The Indian hospitality industry has recorded healthy growth fuelled by robust inflow of foreign tourists as well as increased tourist movement within the country and it has become one of the leading players in the global industry. School of Hospitality's constant endeavour is to impart knowledge, skills, concepts and techniques in the right environment for the students to learn and emerge as global hospitality service providers.

Registration
Registration process will commence from 15 Oct till 28 Oct 2012. The registration fee is Rs1200 for each team. The team will comprise of four students and one faculty member. Extra additional member will be charged Rs 500 per person. Accommodation will be provided to outstation institutes. It will be served on first cum first basis.

Goals of the Competition The goal of the competition is to develop and promote the culinary skills amongst the budding professionals in Food & Beverage Industry. a) Competition will inspire the students interested in Food Production budding professionals to come out with an innovative styles of Food preparation and presentation. b) To cultivate the development of presentations skills amongst the students which are viable in terms of terms of food cost and nutrition. c) Strengthen the creativity of individuals by encouraging their participation. d) Furnishing the student with a platform to potray individual skills, techniques and styles.

GENERAL COMPETITION RULES AND REGULATIONS


1. A team will comprise of four chefs. All the chefs are required to bring their own uniform and chef kits. List of events: a. b. c. d. e. Innovative Soup with accompaniment Healthy Breakfast Menu Contest Most innovative menu Most creative dessert Culinary Quiz

Menus prepared by the chefs must

reflect modern techniques, cost effectiveness and nutritional

balance.
Innovative Soup with accompaniment (Vegetarian) 1. One member form each team will be required to produce an innovative soup along with the accompaniment based on their creativity. 2. The duration of cooking is 01 Hour and 15 minutes will be given for presentation. 3. Students are required to submit the recipe for each and every category Healthy Breakfast Dish 1. Each team will comprised of two team members 2. Time duration to prepare the breakfast will be 45 minutes 3. Participants have to use the ingredients which are provided in the basket 4. The prepared menu should be nutritious and attractive Most Nobel menu (Vegetarian) 1. Two members from each team will be required to produce an innovative three course menu from the basket of ingredients allotted to them along with the accompaniment based on their creativity. 2. The duration of cooking is 03 Hours and 15 minutes will be given for presentation. 3. Students are required to submit the recipe for each and every category Most Creative Dessert (Vegetarian) 1. Two team members out of each team will be required to produce a creative dessert of his/her own choice for two pax. 2. Main ingredients are required to be brought by the participants, basic supplies will be provided by the school of Hospitality, Lovely Professional University. 3. The duration of cooking is 1 Hour and 30 minutes. 4. Students are required to submit the recipe for each and every category

Culinary Quiz
1. Two participants per team 2. Quiz will be based on Food & Beverage 3. Negative marking will be there

General Rules 1. Use of ingredients other than those issued will lead to disqualification. 2. All participants are required to maintain cordial relations with other participants. Any participant found misbehaving or instigating other participants, will lead to disqualification of his /her team. 3. All participants must carry their Institute identity card with them at all times during the competition and show them to the event supervisor whenever demanded. 4. Basket for the competition will be allotted through a lucky draw in the presence of participants. No teams can make a choice or exchange their baskets. 5. Participation Fees once paid is not refundable 6. The organizers reserves the right to publish or use the recipes prepared at the competition without seeking any approval for the same from the teams.

Awards

a. The awards will be based on individual events.


b. Winners will be decided on the basis of Judgment scale as mentioned above. c. Participation certificate will be given to each participant of the competition.
