How to Select, Ripen and Store
sELEcting MAngos

dont focus on color. it is not the best indicator of ripeness. squeeze the mango gently. a ripe mango will be slightly soft to the touch. Use your experience with produce such as peaches or avocados, which also become soft to the touch when ripe. a firmer mango would be a good choice if you dont plan to eat it for several days. ripe mangos will often have a fruity aroma at their stem ends.

ripEning And storing MAngos

Keep unripe mangos at room temperature. never refrigerate mangos before they are ripe. to speed up ripening, place mangos in a paper bag at room temperature. once ripe, mangos should be moved to the refrigerator, which will slow down the ripening process. whole, ripe mangos may be stored for up to five days in the refrigerator. mango may be peeled, cubed and placed in an airtight container in the refrigerator for several days or in the freezer for up to six months.

ripe mango, peeled, pitted and finely diced, divided 3 tablespoons sugar, divided 2 tablespoons raisins 1 cups all purpose flour 1 tablespoon baking powder teaspoon salt 8 tablespoons unsalted butter, melted 1 cup milk 3 large eggs, beaten cup coconut milk
instructions:

ripe mangos, peeled, pitted and diced cup ice cubes cup low-fat vanilla yogurt tablespoons fresh squeezed orange juice

instructions:

combine all ingredients in a blender. Blend until smooth. serve immediately.

set aside 3 tablespoons of mango. toss the remaining mango, 2 tablespoons sugar and raisins in a medium bowl. cover and let stand about 90 minutes to make compote. heat a waffle iron according to the manufacturers directions. lightly oil the grids. meanwhile, whisk the flour, remaining 1 tablespoon sugar, baking powder and salt in a large bowl to combine. make a well in the center and pour in the melted butter, milk, eggs and coconut milk. whisk just until smooth; do not over-mix. mix in the 3 tablespoons mango that was set aside. spoon about 2 heaping tablespoons of the batter into the center of each quadrant of the waffle iron and close the iron. cook until the waffle is golden brown, according to manufacturers instructions. serve the waffles hot, topping with the mango compote.

Mango Almond Crepes

tablespoons butter cup brown sugar teaspoon almond extract tablespoons heavy cream medium mangos, peeled, pitted and sliced cups low-fat ricotta cheese tablespoons honey teaspoon cinnamon prepared crepes tablespoons butter

to prepare sauce, melt butter in a medium saucepan. add brown sugar and extract; cook and stir until dissolved. cook over low heat for 5 minutes then remove from heat. stir in cream and cook for 1 minute more; stir in mango and set aside. to prepare crepes, stir together ricotta cheese, honey and cinnamon in a medium bowl. spread about 2 heaping tablespoons onto half of each crepe. Fold in half, then in half again. melt butter in a large skillet. add crepes and cook over medium heat for a few minutes on each side to lightly brown and warm. transfer to serving plates and top with mango sauce.

cup butter cup sugar medium very ripe, soft mangos, peeled and pitted (1 mangos pureed and mango diced) 1 large egg, slightly beaten 1 teaspoon pure vanilla extract 2 tablespoons lime juice 1 cups all purpose flour 1 teaspoons baking powder teaspoon baking soda teaspoon ground cinnamon 1 cup chopped walnuts
instructions:

to prepare batter, cream the butter and sugar in a large mixing bowl. add the mango puree, egg, vanilla and lime juice. in a separate large bowl, combine the flour, baking powder, baking soda and cinnamon. add the mango mixture to the flour mixture, stirring until the dry ingredients are just moistened. stir in the walnuts and diced mango.

to bake the mango bread, preheat the oven to 350F. coat a 9 x 5 x 3-inch pan with cooking spray. pour the batter into the prepared loaf pan. Bake for 40 minutes, or until a toothpick inserted in the center comes out clean. cool in the pan for 10 minutes before removing from the loaf pan. allow to cool for 1 hour on a rack before serving.

Mango Macadamia Caramel Rolls

cups brown sugar teaspoon cinnamon teaspoon ground allspice cup softened butter, divided large ripe mango, peeled, pitted and chopped cup macadamia nuts, chopped loaf frozen bread dough, thawed

instructions: stir together brown sugar,

cinnamon and allspice in a small bowl. place 1 cup mixture in a medium saucepan with 6 tablespoons butter. cook over low heat for 5 minutes, stirring frequently. stir in mango and cook for a few minutes more until brown sugar is dissolved. spread in the bottom of a 13 x 9-inch baking pan and sprinkle with nuts; set aside. roll thawed dough into a 12 x 12-inch square on a lightly floured board and spread with remaining 2 tablespoons butter. spread remaining brown sugar mixture over butter and press into dough. roll up tightly and pinch seams to seal. cut dough into 1-inch slices. place in prepared baking dish; cover and let rise in a warm place until doubled in size, about 1 hour. Bake in preheated 350F oven for 20 to 25 minutes. let stand for 5 minutes, then invert onto a serving platter. and place in the refrigerator overnight. let stand at room temperature for 1 hour before baking.

large ripe mangos, peeled, pitted and pureed cup brown sugar tablespoons butter, melted egg teaspoon vanilla extract cup flour cup oat bran teaspoon cinnamon teaspoon baking soda teaspoon salt cups rolled oats cup chopped walnuts

saucepan. simmer over medium-low heat for about 20 minutes, stirring frequently, until excess liquid has cooked off and mixture is very thick but is still moist. preheat oven to 375F and spray an 8-inch square baking dish with non-stick cooking spray. stir together brown sugar and butter in a medium bowl. add egg and vanilla and mix until smooth. stir in flour, oat bran, cinnamon, baking

instructions: place pureed mango in a medium

soda and salt, then stir in oats. spread into prepared pan, then spread mango mixture over top; sprinkle with walnuts. Bake for 30 minutes. let cool completely before cutting into squares.

Mango Yogurt Parfaits

instructions: puree 1 mango and spoon equal

amounts into 6 clear plastic cups. top each with cup yogurt. spoon cubed mango over the top, saving a few pieces for garnish. top with remaining cup yogurt and reserved mango. (recipe may be made ahead at this point. cover and refrigerate until ready to serve.) top each serving with a tablespoon of granola just before serving. and refrigerate.

Turkey Burger and Mango Pita Melt

The classic burger gets a lighter, sweeter update with this instant favorite turkey burger.

pound ground turkey teaspoon kosher salt tablespoons grated parmesan teaspoon oregano teaspoon garlic powder olive oil spray ripe mango cut in slices slices cheddar cheese cup honey mustard pieces whole wheat pita leaves butter lettuce

instructions:

to prepare the burger, in a medium bowl, gently mix the turkey, salt, parmesan, oregano and garlic. Form into 4 patties, each about 1 inch thick. spray with olive oil. to cook the burgers, use a non stick griddle pan. heat on high. spray the pan lightly with olive oil. Griddle the burgers for 3 to 4 minutes on each side until cooked through. to prepare the pita melt, preheat the oven to 350F. split the pita open and place one turkey burger in each. top with slices of mango, cheddar cheese and then spread the top side of pita with honey mustard and close the pita sandwich. spray lightly with olive oil. place in the oven for 5 minutes until the cheese is melted. serve immediately with butter lettuce in each pita.

instructions:

to create the sauce, place the mango, yogurt, cumin and cayenne in a blender and blend together well. add 1 tablespoon water to thin the mixture if necessary. refrigerate until ready to use. in a small bowl whisk together the garlic, salt, lime juice and olive oil to make the dressing.

place chicken and lettuce in a large bowl and add dressing. Fold in the cilantro and mango. place the tortilla on a clear work space. spread 1 tablespoon sauce over the wrap. next scoop to cup of the mango chicken salad in the center, fold up both sides and roll up. repeat with remaining tortillas. serve with remaining sauce on the side.

Little Chica Mango Chicken

tablespoons reduced sodium soy sauce tablespoons honey tablespoon peeled, minced fresh ginger five-ounce boneless, skinless chicken breasts non-stick cooking spray large ripe mangos, peeled and cubed cup chopped fresh cilantro

sErving tips:

if you like it spicy, add teaspoon crushed red pepper to mango and cilantro mixture. you could also add one cup chopped red bell pepper to the mango and cilantro.

instructions:

preheat broiler to high and make sure oven rack is in highest position. combine soy sauce, honey and ginger in a small bowl, and whisk together until well mixed. place chicken in a medium sized bowl. reserve two tablespoons of sauce and pour remaining sauce over chicken, turning chicken to coat well. spray a broiler pan with cooking spray. place chicken on broiler pan and place in oven to cook 5 to 7 minutes until turning golden. remove from broiler, turn chicken over and spoon remaining sauce on top of chicken. return to broiler and cook for additional 5 to 6 minutes or until juices run clear or internal temperature reads 165 F on instant read thermometer when inserted into thickest part of chicken. meanwhile, combine mango cubes and cilantro in a medium bowl and toss together gently. to serve, place chicken on a platter in a diagonal row. top with mango and cilantro and serve.

Coconut Shrimp with Ginger Mango Sauce

large ripe mango, peeled and pitted tablespoons rice vinegar (unseasoned) tablespoons honey teaspoon grated fresh ginger pound large raw tail on shrimp, peeled and deveined cup honey teaspoons soy sauce teaspoons hot chili oil cups flaked coconut

instructions:

puree mango, vinegar, honey and ginger in a blender or food processor; set aside. preheat oven to 400F and spray a large baking sheet with nonstick cooking spray. rinse shrimp and pat very dry between paper towels. in a medium bowl stir together honey, soy sauce and chili oil. dip shrimp in mixture then roll in coconut, pressing so that it sticks to the shrimp; place on baking sheet and sprinkle with some of the excess coconut. Bake for 6 to 8 minutes or until shrimp is firm and coconut is golden brown. carefully remove from baking sheet with a spatula to a platter. serve mango sauce on the side for dipping.

Mango Stir-Fry

Mango Stir-Fry: 2 tablespoons grape seed oil 2 chicken breasts, cut into strips cup yellow bell pepper, julienned cup orange bell pepper, julienned cup mango, diced 1 cup of teriyaki sauce cup mango, sliced chow mein noodles for serving Teriyaki Sauce: cup scallions, diced, plus more for garnish 1 tablespoon ginger, minced 1 teaspoons garlic, minced cup soy sauce 1 teaspoons sesame oil 1 cups mango juice 2 teaspoons sesame seeds, toasted, plus more for garnish 5 tablespoons honey

add oil to heated wok. add chicken breast. cook until golden brown, turning occasionally. while chicken is cooking, make the teriyaki sauce by combining all ingredients and whisking together. once the chicken starts to brown, add yellow bell pepper, orange bell pepper and diced mango. saut for about 3 to 4 minutes. next, add teriyaki sauce. reduce until thick, about 6 to 8 minutes, add sliced mango about 2 to 3 minutes before it is completely done reducing. in a separate pan, add about cup of the teriyaki sauce and reduce for garnish. serve on a plate of chow mein noodles. Garnish with sliced scallions, toasted sesame seeds, and the separately reduced teriyaki sauce.

Island-Style Skewers

cup olive oil cup prepared mango chutney, chopped if coarse cup bottled teriyaki sauce tablespoons balsamic vinegar pound boneless, skinless chicken breast, cut into 1 to 2-inch cubes medium shrimp, shelled and deveined medium yellow onion, peeled with both ends trimmed off and cut into 6 wedges approximately -inch wide medium red onion, peeled with both ends trimmed off and cut into 6 wedges approximately -inch wide firm-ripe mangos, peeled, pitted and cut into large cubes large red or green bell pepper, halved, trimmed, seeded and cubed nonstick cooking spray, as needed mango, peeled, pitted and diced (about 1 cup) cup frozen orange juice concentrate tablespoons water teaspoons grated fresh ginger

For marinade, combine oil, chutney, teriyaki sauce and vinegar. set aside half to use for basting. place chicken and shrimp in wide, shallow glass dish

or pan. pour remaining marinade mixture over, then cover and marinate in refrigerator for at least 3 hours or overnight. soak 18 large bamboo skewers (about 12 inches long) in water at least 1 hour before using. separate the onion wedges into double layers. to prepare kabobs, alternate chicken, onions, mango, green or red pepper, and shrimp (or you can make separate skewers of shrimp and chicken) onto soaked skewers, keeping them near the pointed end of each skewer, leaving a long handle of skewer open. coat the grill grate with nonstick cooking spray. place skewers over medium coals for 15 to 20 minutes. Brush often with remaining marinade mixture and turn skewers until cooked through. to prepare the dipping sauce, combine mango, frozen orange juice concentrate, water and ginger in electric blender. puree until smooth and serve with skewers.

over a double boiler, melt the chocolate then set aside to cool. sift the flour, cinnamon and salt together, set aside. Using a whisk, mix the olive oil, vanilla and almond extracts. add in the sugar to the oil mixture, and then the eggs one at a time. stir in the cooled chocolate. Using a spatula, fold in the flour mixture until just incorporated. stir in walnuts and half of mangos. preheat the oven to 350F. Using a non stick prepared baking spray with flour, spray an 8 x 8-inch pan. pour batter into the prepared pan. if needed, spread using a spatula to make an even layer. sprinkle remaining mango evenly over top of batter. Bake for 40 minutes until a toothpick inserted into the center comes out clean. remove from oven and let cool completely before cutting into 16 pieces.

with an electric mixer until the mixture is light and fluffy. add the eggs, one at a time, beating well after each addition. Beat in the vanilla. in a food processor, puree remaining mangos to make cup. add the flour mixture alternately in batches with the pureed mangos, beginning and ending with the flour mixture and beating well after each addition. pour the batter into the pan, spreading it evenly, and bake the cake in the middle of the oven for 45 to 55 minutes, or until a toothpick comes out clean. let the cake cool in the pan on a rack for 15 minutes; run a thin knife around the edge and invert onto a platter.

preheat oven to 350F. to make the crust, mix pretzels, melted butter and sugar together with your hands until well mixed. then press evenly into a non-greased 9 x 13-inch glass pan. Bake for 4 minutes at 350F. when done, let cool for approximately 30 minutes. while crust is cooling, begin to make filling. with an electric mixer, beat the cream cheese, extra creamy whipped cream, pureed mango and sugar until well blended and smooth. then spread evenly over top of pretzel crust. take a butter knife and run along edges to seal.
