Preparation Method
Cut and boil any one of the above mentioned vegetables in water with tamarind. Heat the oil and fry the channa dhal, toovar dhal, fenugreek seeds, cumin seeds and green chillies. To this mixture, add shredded coconut and fresh coriander leaves. Dry grind all of them together and add it to the boiling vegetables. Allow it to continue to boil for few minutes and then add salt to it Bring it down from the stove and after it cools add the buttermilk to it. Garnish it with fried mustard seeds and curry leaves. For those not wanting a tangy taste boil the vegetables in plain water instead of the water with tamarind

Preparation Method
Cook the vegetables in water.Add salt as required.Blend coconut,curry leaves and green chilly and add it to the boiled vegetables and cook till required consistency is reached.Make sure water is not too much else the dish will be watery and not thick when done.Once done switch off flame and add thick curd (1/4th or 1/2 cup)and mix.If sourness is not as required u may add lemon juice on top but very little.Now add coconut oil on top and serve your aviyal hot.

Onion Vegetables of your choice like drumstick,carrot,potato,tomato, plaintains,beans,ladys finger etc Fenugreek Urad dal Mustard seeds jeera chily powder- 1 tsp sambhar powder(optional) turmeric powder-1/2 tsp coriander powder-2 tsp salt to taste Tamarind water-1/4 cup or as required toor dal

Preparation Method
Pressure cook toor dal .Add turmeric powder 1/4 tsp and a pinch of salt and ghee when pressure cooking.In a pan splutter mustard seeds,fenugreek,urad dal and jeera.Now add onion and saute for a while till very light golden in color.Now add coriander powder ,chilly powder and turmeric powder 1/2 tsp and if required a tsp of sambhar powder which is ofcourse not necessary. and saute will till the raw smell goes.Now add the vegetables of your choice to this and add little water and also the tamarind water and cook the vegetables in a closed the pan.Add salt as required.Once the vegetables are cooked add it to the cooked toor dal and mix well.Add little water and bring to a boil or till required consistency is reached.Sambhar is ready.If you want you can add corainder leaves on top once the sambhar is ready.

Ingredients
1) 1 kg of small pieces of cauliflower 2) Soy Sauce - 300 gms 3) 200 gms Ginger cut into small pieces 4) 300gms Garlic cut into small pieces 5) Coriander leaves 6)1 Onions cut into long pieces 7) All purpose flour - 200 gms 8) Egg - 1 9) Bell pepper - 1 cut into small pieces 10) Agin-o- motto (china salt) - a pinch 11) chilli powder, salt, black pepper to taste

Preparation Method
1) Mix the all purpose flour, beaten egg, ginger garlic paste, salt, chilli powder to make a paste. 2) Add the cauliflower to the paste and let it for 45 minutes 3) Heat some oil in a pan add the cauliflower pieces. 4) Heat a little oil in a pan and fry the onions, bell pepper, ginger and garlic pieces. 5) Add the soy sauce and let it boil 6) Add the fried cauliflower pieces to the boiling mixture. 7) Add the agin-o-motto and coriander leaves.
