RESUMEN El contexto de globalizacin en el que nos hallamos ha conducido a los expertos de la educacin a la unnime conviccin de que, para adaptarse a los cambios sociales, l a universidad debe cambiar tambin en diferentes dimensiones; en lo administrativo , en la formacin profesional, en la pertinencia, en los sistemas de acceso, en lo s estndares de calidad. En el plano regional, se propone un Modelo de la gestin educativa sustentada en la teora de la administracin educativa para desarrollar una Escuela Profesional Gast ronoma en la Facultad de Ciencias Histrico Sociales y Educacin de la Universidad Na cional Pedro Ruiz Gallo, que es el TTULO de esta tesis. La propuesta nace despus de observar el PROBLEMA de que los gastrnomos lambayecanos carecen de oportunidades para ampliar de manera ptima su perfil profesional. Esto trae como consecuencia: falta de desarrollo en habilidades administrativas, deficiencia en las tcnicas d e servicio o carencia de dominio de tcnicas de alta cocina. El OBJETIVO de esta tesis es disear y fundamentar un modelo de gestin educativa su stentada en la administracin educativa para desarrollar la Escuela de Gastronoma e n la Facultad de Ciencias Histrico Sociales y Educacin (FACHSE), que permita la fo rmacin de un profesional gastrnomo con valores tico morales slidos y altamente compe titivo. La HIPTESIS de este trabajo se fundamenta en que si se propone un modelo de gestin sustentada en la administracin educativa, entonces es posible desarrollar una es cuela profesional de gastronoma de calidad en la FACHSE. La METODOLOGA que se propone para disear la carrera profesional de gastronoma const a de cuatro etapas: Primera etapa: Fundamentacin de la carrera profesional de gastronoma; segunda etap a: elaboracin del perfil profesional; tercera etapa: organizacin y estructuracin cu rricular; y, cuarta etapa: evaluacin continua del currculo. La CONCLUSIN ms importante de esta tesis es que se demuestra la necesidad y, al mi smo tiempo, la posibilidad de desarrollar la escuela de gastronoma en la FACHSE, lo que permitir la formacin integral de un profesional gastrnomo de calidad. Con la concrecin de esta propuesta se beneficiarn cientos de jvenes que, al estudia r la carrera, encontrarn mucho espacio en el mercado laboral interno y externo. A dems, de esta manera la universidad responder a las necesidades de la sociedad. ABSTRACT The context of globalization in which we are situated has led the experts of the education to the unanimous conviction of which, to adapt to the social changes, the university must change also in different dimensions; in the administrative thing, in the vocational training, in the relevancy, in the systems of access, i n the qualit standards. In the regional plane, there proposes himself a "Model of the educational manage ment sustained in the theory of the educational administration to develop a Voca tional school Gastronomy in the Faculty of Sciences Historically Social and Educ ation of the National University Pedro Ruiz Gallo ", that is the TITLE of this t hesis. The offer is born after it observes the PROBLEM of which the gastronomers lambayecanos lack opportunities to extend in an ideal way his professional. Thi s brings as consequence: lack of development in administrative skills, deficienc y in the technologies of service or lack of domain of technologies of discharge cooks. The AIM of this thesis is designs and to base a model of educational management sustained in the educational administration to develop the School of Gastronomy in the Faculty of Sciences Historically Social and Education (FACHSE), which all ows the formation of a professional gastronomer with values ethically solid mulb erry trees and highly competitivly. The HYPOTHESIS of this work is based in that if he proposes a model of managemen t sustained in the educational, at the time administration is possible to develo p a vocational school of qualit gastronomy in the FACHSE. The METHODOLOGY that one proposes to design the professional career of gastrono my consists of four stages: The first stage: Foundation of the professional career of gastronomy; the second stage: production of the professional profile; third stage: organization and st ructure curricular; and, fourth stage: continuous assessment of the curriculum. The most important CONCLUSION of this thesis is that there is demonstrated the need and, at the same time, the possibility of developing the school of gastrono my in the FACHSE, which will allow the integral formation of a professional gast ronomer of quality. With the concretion of this offer there will be of benefit hundreds of young wom en who, on having studied the career, will find very much I spread on the labor internal and external market. In addition, hereby the university will answer to the needs of the company.
