I love May. Everythings green and flowering, the air is fresh, the bugs arent out yet, and any day can be perfect. Its the springtime of hope, if we make it so. Its time to plant seeds and dream of abundant harvests. Last month we helped make that a reality for more of our neighbors by raising funds and donating seeds for Helena Community Gardens. This month weve got lots more in store. Well be participating in Bike/Walk Helena all month and providing free Cafe Mam coffee from Jim Barngrover for participants on May 30th. Live music in our deli, Open Streets in downtown Helena, Fountain of Youth at Carroll College, a talk in our deli on eating dairyfree, free tastes of fennel-pollen carrot cake on Mothers Dayall these are on our plate in May. Whats also on our plates is the best foods of the season, including strawberries whose flavor comes alive in May, asparagus and artichokes, mangoes at their peak and some great, plump, creamy avocados. In case you havent noticed, weve got the best selection of local and organic produce in Helena. Were also improving our business in every way we can, not just with the bright new colors of our store, but with new products and better prices. Right now the big excitement is in our bulk herb department (see below), but spring is springing everywhere. LW

Brigid learned to yodel at the age of two, picked up the fiddle a few years later, and has been making music ever since. An accomplished musician already at the age of twelve, Brigid has performed on stages around Montana and the West, including appearances at the National Cowboy Poetry Gathering in Elko, Nevada. Her musical repertoire spans a wide range of American music, from traditional cowboy and fiddle tunes through blues and swing and into contemporary Americana singersongwriter fare. Brigid will be performing with her dad, musician/writer/photographer John Reedy, accompanying on guitar. Free seating in the deli. We turned our backs on our bulk herb department, and the next thing we knew, the best in Helena became one of the best in the region. Our selection of seasonings, healing herbs and teas was not only doubled, but elegantly displayed in new, cleanly-labeled, sparkling glass jars. The man behind this is our herb guy, Andrew Jones. He is, quite simply, an enthusiast extraordinaire with a passion for exotic tastes. In his words, seasonings make bad food good and good food great. We now have 350 bulk culinary seasonings and other ingredients in the department, including 14 different chili powders that vary in qualities such as heat and smokiness, about as many dried mushrooms, and various curries, rubs and spice blends. You want paprika on your deviled eggs? There are 6 to choose from. Powdered honey, powdered egg, powdered orange rind (for your own natural Tang)its all there. Then from Australia theres wattle seed, which Andrew says tastes like coffee and is used in everything from meat rubs to ice cream. You can see what were doing with fennel pollen in our carrot cake recipe on page 2. Andrew is personally most excited about a French pepper called Piment dEspelette, which, like Champagne and Reggiano Parmesan, is a controlled name for a regional product. We have the distinction of being the only retail store that sells Meadow finishing salts in bulk, 6 dozen of them.

Medicinal herbs are of course a world of their own, and they are well represented. For the more familiar, closer-to-home products, there are the tea blends like Evening in Missoula from Montana Tea & Spice, along with the Tumblewood Teas line from Big Timber. Browsing by the rows of jars, its hard not to get lost in wonder. Luckily Andrew is there to find you, at least at the most likely times. Hell help you find whatever you were looking for, but dont be surprised if you discover something more than that. Just think: if you tried a new product each day, it would take you more than a year to go through them all.

Our Plant A Flower In Our Window campaign raised $224 and the 3 for 1 seed sale earned Helena Community Gardens 223 seed packets of their choice. Thank you for your support on this great community project.

Just like a love relationship, your relationship with food can be more or less healthy. It can be based on need or pleasure. It can join you to others or separate you from them. It can be nurturing or toxic, creative or dull. It can be addictive or empowering. In various ways Ive been encouraging myself and others to eat a healthy diet based on whole, natural foods. Some rules Ive embraced are these: Eat foods that are colorful, not colored. Eat foods that are sweet, not sweetened. Eat foods that are flavorful, not flavored. It seems that such a diet, which would avoid processed manufactured foods, would satisfy your hunger better than junk foods, because it would be a nourishing diet. Ive also argued that it would be a pleasurable diet. I certainly delight in my morning bowl of fresh berries, yogurt and nuts, sprinkled with bee pollen and cacao nibs. On the other hand, it seems that the addictive appeal of junk foods is that

they provide intense experiences, whether because they are concentrated sources of fat, salt and sugar or because they have flavors added to them. Its like getting the makeup without the person behind it. Even so-called natural flavorings seem to be making up for foods that lack substance and dont really feed you. So our newly-expanded bulk herb, seasonings and teas department struck a chord with me. There are worlds within worlds of exotic flavors to be found, and theyre the natural legacy of the ancient arts of preparing and preserving foods in ways that enhance both enjoyment and health. Now Im more convinced than ever that your relationship with food can be everything you want it to be. It can be healing and nurturing, and it can be pleasurable in ways you have not yet imagined. So if your relationship with real food is getting dull, spice it up. Now is the perfect time.

Real Food is not only Helenas best place for organic fruit and vegetables, we also offer the best selection of fresh organic herbs. Fresh herbs are a wonderful way to enhance whatever youre cooking, from vegetables to meats and fish. Our year-round selection of herbs includes bunches of cilantro, curly and Italian parsley and a wide variety of packaged herbs from Herbco. Herbco packages their herbs in convenient clamshells for ease of storage and increased longevity. Some of theirs we carry include basil, chives, dill, rosemary, oregano, marjoram, lime leaves, Thai basil, lemon grass, mint, lemon thyme, sage, thyme and tarragon. We also carry a selection of their medleys, which are herb mixes specifically suited to a particular dish. Theres Lamb Medley with lemon thyme, Italian parsley and mint; Poultry Medley with rosemary, sage and thyme; Seafood Medley with Italian parsley, dill and thyme; Pork Medley, which has oregano, sage, tarragon and thyme, and several others including Prime Rub and everybodys favorite for the turkey, the Herbed Bird. During the summer season we also carry bulk fresh herbs from the Western Montana Growers Co-op and a few select local growers such as Glory Farm. Look for bulk basil for homemade pesto or Caprese Salad, bulk mint for mint iced tea and pickling dill bunches for home canning projects. Fresh herbs arent just for cooking either. I love to add a few sprigs of dill and Italian parsley to a tossed salad. A

few mint leaves add a nice touch to a bowl of mixed berries, and fresh cilantro really makes a homemade burrito. Herbed butter adds a perfect touch to warm rolls or fresh bread. You can use a single herb or a combination of your favorites. I like to chop the herbs fine and then blend into softened butter with an electric mixer. These herbed butters also are wonderful accompaniments to everything from grilled salmon to porterhouse steak. Let your creativity flow by adding favorites like fresh garlic, lemon juice or fresh ground pepper to an herbed butter. When cooking with herbs, the finer they are chopped, the more intense the flavor. If you prefer a very delicate flavor, the herb can be placed into cheese cloth or a tea ball during cooking. For the best storage of fresh herbs, pat them dry with paper towels after rinsing and store in the refrigerator. Basil, however prefers temperatures of 55 to 65 F, so a cool place in your house might be better than the refrigerator. Leftover herbs can also be frozen to be used in cooking at a later date. Carrot Cake with a Twist!


Classic carrot cake spiced up with a sprinkle from the wings of angels using fennel pollen. While all the original flavors and textures are still there, your taste buds will discover a delightful new one.

Fennel Pollen Carrot Cake


Ingredients
3 eggs 3/4 C buttermilk 3/4 C vegetable oil 1 C sugar 2 tsp vanilla extract 2 tsp fennel pollen 1/4 tsp salt 1 C unbleached white flour 1 C whole wheat flour 2 tsp baking soda 2 C shredded carrots 1 C flaked coconut 1 C chopped walnuts 1 8 oz. can crushed pineapple with juice 1 cup raisins

Directions:

1. Preheat oven to 350F; grease and flour 2 10 pans. 2. In a medium bowl, sift together flour, baking soda, salt and spices. Set aside. 3. In a large bowl, combine eggs, buttermilk, oil, sugar and vanilla. Mix well. Add flour mixture and mix well. 4. In a medium bowl combine carrots, coconut, walnuts, pineapple and raisins. 5. Blend carrot mixture into batter until thoroughly mixed. 6. Pour into prepared pans and bake for 30 minutes. Note: If cake has browned in hour, cover top with foil and continue baking. Check with a toothpick. 7. Cool at least 20 minutes before icing with fennel pollen enhanced cream cheese frosting (add aprox. 1 tsp fennel pollen).

Ask the Doctor: Phytoestrogens

When I was in medical school I was drawn to learning about the effects of botanical medicine on human health. One of the most interesting topics was phytoestrogens, or plant-based chemicals that have an estrogen-like effect when consumed. The beauty of these compounds is that they have a modulating effect, thus providing a true solution to many problems caused either by too much estrogen or even too little. Phytoestrogens are found in everyday foods as well as not-so-common medicinal herbs. The most common foods include whole grains, flax seeds and soy products, the latter two gaining the most attention. Herbs with high phytoestrogen content include but are not limited to red clover, alfalfa, licorice root, verbena, and thyme. Observational studies suggest that when these foods or herbs are consistently consumed over longer periods of time, they may provide a protective effect against certain disease such as certain cancers and cardiovascular disease. Determining phytoestrogens effects on these conditions has been difficult at best, but they do appear to have some very useful applications in other areas of our health.

Flaxseeds I encourage many patients to consume flaxseeds, usually ground in a daily smoothie, as a good source of dietary fiber and omega-3 fatty acids. But the lignan component of flaxseeds may have a beneficial effect for women after menopause. In a preliminary trial, supplementation with crushed flaxseeds for six weeks improved the average hot flash score by 57 percent in post-menopausal women who were not receiving estrogen therapy. The treatment consisted of 2 tablespoons of flaxseeds twice daily. While the response and side effects, mostly digestive complaints, are variable, I dont hesitate to make this suggestion because of the number of benefits it also offers. Soy We often hear about the benefits that soy may have regarding bone density or reducing symptoms of premenstrual syndrome, but one real impact soy appears to have is in lowering cholesterol. A controlled trial showed that soy preparations containing high amounts of isoflavones effectively lowered

total cholesterol and LDL (bad) cholesterol, whereas low-isoflavone preparations did not. This effect seems to take place when at least 20 grams of soy protein is consumed each day in place of animal protein. Red Clover Like flaxseeds, red clover appears to have multiple health benefits, especially for post-menopausal women. In a double-blind study administration of 80 mg per day of red clover isoflavones reduced the frequency of hot flashes over 12 weeks. It also appears to be beneficial for anxiety and depression in this same group when taken for three months. So consider these foods and plants as a part of a greater healthcare treatment plan. If estrogen is the problem, phytoestrogens just may be the solution.
