Turkey Burgers

Ingredients: 1lb. ground turkey 1 lb. ground turkey sausage 2 eggs 1 cup rolled oats 2 Tablespoons Spike seasoning 1 apple, grated 1 bell pepper (any color), minced 1 onion, minced Suggesons For Serving: Whole wheat buns Leuce, tomato, onion & pickles Ketchup and mustard
Grate the apple and chop the pepper and onion. (Always get permission and ask an adult for help when you need to use a knife in the kitchen.) In a large bowl, mix the ground turkey and turkey sausage with a fork. Add the chopped veggies and apple and mix to combine. Add the eggs, Spike seasoning and oats. The easiest way to mix this is with your hands! (Be sure theyre super clean.) The turkey mixture will not hold together in the same way that hamburger does. It will be more loose and seem really juicy, but that is good. Your burgers will be moist and delicious! Shape the burger paes and lay them on a cookie sheet. (We made six large burger paes and had enough meat mixture le over to make 12 big meatballs to eat with our spaghe lunch, the next day. ) Place the cookie sheet in the fridge for at least an hour. This helps your burgers to become a lile rmer. While your burgers are chilling, you can get potatoes ready and bake them, plus, get the broiler pan ready to cook your burgers. Cover the top rack of your broiler pan with foil. Your turkey burgers will be vey juicy as they cook and this will make cleaning your pan so much easier.

When the burgers are done chilling, move them to the broiler pan. Your potatoes will be done baking, by now, and you can cover them and set them aside while you nish prepping your meal. With an adults permission and help, set the broiler temperature on high and put the burgers on the rack in the middle of your oven. Broil for 8 minutes on each side. You may need an adult to help you turn them aer the rst 8 minutes. When your burgers are done, nd an adult to help you remove the broiler pan from the oven and put it on a wire cooling rack. Put the burgers on a plate and carry them to the table to serve with the rest of your meal. Then build your burgers! We had some fresh leuce from our garden to put on the whole wheat buns and since we couldnt nd large slicing tomatoes, we added cherry tomatoes sliced in half. You could also use onions and pickles or any of your favorite toppings to make your burgers. We ate our burgers with baked potatoes and a tossed green salad with lots of veggies. Turkey Meatballs
I told you that we had enough turkey mixture le over to make 12 meatballs, so I wanted to show you how easy it is to make TWO healthy meals from one recipe. With the leover meat mixture, roll meatballs about the size of a golf ball. Place the meatballs on an ungreased cookie sheet and bake them in the oven for 25 -30 minutes. Remove the meatballs and let them cool. Youll be able to store them in the fridge for a yummy midnight snack or serve them for lunch tomorrow, with your favorite spaghe and sauce!

Baked Potatoes
Baked potatoes are good as a side dish, like with your turkey burgers, but they can also be a really great lunch, with a few healthy toppings added. This is how we bake potatoes at our house. Ingredients: 8-12 medium sized russet potatoes Suggesons For Serving: Chopped raw veggies, like tomatoes, onions, celery, kale, carrots, or bell peppers Diced turkey ham Grated cheese Buer or sour cream At our house we like to save money AND save me. We oen buy a 10 lb bag of russet potatoes and bake them, all at once , to save electricity and extra baking me through the week. Baked potatoes can be kept in the fridge in a ziptop bag for 3 or 4 days and reheated in the microwave for a minute or two when youre ready to eat them. That makes them a quick and nutrious lunch opon! Choose enough potatoes to make baked potatoes for your family. Scrub the skins clean under cold water and then prick the skins with a fork, so the steam doesnt make them burst in the oven. Place all the potatoes on a cookie sheet, so they are easy to put in, and take out of, the oven. Be sure you have an adult s permission and help to put the potatoes in the oven. Bake them at 350 degrees for about 45 minutes or unl a fork slides into them easily. SECRET TIP: If your baked potatoes are done before the rest of your meal is complete, you can wrap them in a clean dish towel to hold in the heat and keep them warm unl your meal is ready. Eat your baked potatoes hot from the oven or cool some of them and store for lunches, later on. As a side dish we oen eat our baked potatoes with just buer or sour cream, but there are some other delicious opons that are super healthy, too. Especially if you are eang baked potatoes as a lunch, its a good idea to dress them up with some nutrious toppings, like the ones listed above. For our lunch, today, we had turkey ham, onions and tomatoes in the fridge. So, we diced those up and ate them on our baked potatoes with some salt and pepper. Delicious!!!

Fruit Smoothies
Fruit smoothies are great for dessert, a snack or part of a healthy breakfast! Use your imaginaon to create your favorite avors!
Ingredients:

3/4 cup frozen fruit or berries 3 bananas, peeled and broken into pieces 1 teaspoon vanilla 1 cup plain yogurt 1 - 2 cups of almond milk, (varies by how thick you want your smoothies to be)

Place all the ingredients in your blender .

Pulse the blender o and on, unl the frozen fruit begins to break up. Then you can turn the blender on medium or high speed and allow the smoothy to blend unl it is nice and creamy.

Pour into glasses and serve! These are so good and theyre good for you, too! Enjoy!
