2011 Futurosa:
Futurosa is a great Rose inviting to be optimistic and to enjoy an easy drink glass of wine as an aperitif or during the happy hour with friends. Rose in color. Fine and intense, very fruity with notes of wild strawberries and red berries. Medium bodies wine, fresh, elegant, and persistent. Drink this wine with starters and appetizers, pastas, grilled fish dishes and shellfish, light meat courses, or enjoy it with fresh middle aged cheeses. Suggested serving temperature: 50/54* F
The importance of old vines: California's boom since the late 1980s has largely been built around new plantings and fashionable clones. With another replanting wave set to wash over the state, young vines are driving much of the industry. That's all the more reason for mature plantings to get their due. These aren't just historically important; they can offer a more complex expression of wine than the exuberant fruit of young plants - a truism that was accepted for centuries until the young-vine obsession of recent years. It is perhaps inconvenient that old vines give a particular depth of flavor, although it helps that fruit from many of California's old vineyards remain a relative bargain, certainly compared with the modern costs of replanting, often $50,000 per acre. Perhaps this will be the year when the industry acknowledges that sustainability, in its true sense, means planning for the full life span of a perennial plant that can survive 50 years or more. That long view is long overdue.

Rollone is a unique blend of Barbera and Pinot Noir. The first vintage was in 2003 when we decided to blend the wines from our youngest Barbera and Pinot Noir vineyards. Since then, it has been a successful union; the elegance of Pinot Noir and the strength of Barbera. The two wines are vinified separately, then blended and aged together for 6 months in small oak barrels. A great wine to drink for the duration of the meal. Well suited for starters, chicken, Rich ruby red in color. When young, this wine is fresh with red berries and summer fruits. Watermelon and cranberry. Tropical flowers like gardenia and jasmine. Fields of freshly cut green grass.. Medium -bodied, balanced and dry with a crisp fresh finish. Red currant, dark chocolate and black pepper. Generous on the palate. Persistent. Delicious.

An excellent structure allows this wine high quality for up to 10 years. The bottle should be stored in the dark, at a constant temperature of 15 C/59 F, in a horizontal position. Drink this wine during the entire meal. It is particularly suited to red meats, steaks. A deep ruby red hue, Intense with notes of violet and maraschino (pronounced 'mara-SKEE-noh) cherries. Rich middle notes nostalgic of dates and figs. Powerful and fresh, white pepper and chocolate. Balance with a persistent finish.

Only two barrels of this wine was produced. Our first try at this hill top vine-
yard of Rockpile clone zinfandel was awarded a Double Gold Medal at the San Francisco Chronicle Wine Competition. Winemakers notes- Very similar to the previous vintage, the wine is garnet in color with peppery spice and raspberry aromas. Blackberries and raspberries are pronounced on the palate with a touch of spice. The alcohol is balanced with the fruit and acidity. Tannins are very soft. The purity of fruit begs for grilled beef or pork.

Greek settlers in Sicily and Southern parts of Italy found the moderate Italian climate conducive to grape cultivation and winemaking. They termed the place Enotria i.e. a land of wines and introduced winemaking techniques around 800 B.C. Etruscans from Asia Minor who settled mostly in central Italy also produced wine. Spaniards introduced wine into Sardinia. Italian wine production flourished around second century B.C. after the Carthaginians were defeated by the Romans. Romans improved the techniques previously introduced and perfected the art of winemaking. They contributed to the spread of organized cultivation of vineyards, mass manufacture of wine, and storage of wine in barrels and bottles. Between 300 B.C. to the beginning of the Christian era the population of Rome crossed one million and there was a sudden spurt in the demand for wine. Famous Roman poets like Horace and Virgil mention the names of wines like Falernum, Caecubum, and Mamertinum. Romans considered the Falernian region near Naples as their best wine-growing region. White wine produced in this region was treasured and most renowned. Honey was mixed with white wine to produce an aperitif called Mulsum. Romans produced both red and white wines and the alcoholic content was high. This made the wine unpalatable due to a strong acidic taste and therefore they mixed large amount of water. Romans preferred sweet wine and drank it with almost every meal. They mixed additives like herbs, spices, chalk, and salt water with the wine. Romans made immense contribution to viniculture by classifying grapes and describing the climate that best suits cultivation of each variety. They introduced props and trellises that increased yield. They improvised the presses used to extract juice from grapes that were introduced by the Greeks. Romans were the first to store wines in tightly closed wooden barrels. They recognized the importance of aging wines to improve flavor and taste. They preferred wines that matured for ten to twenty five years. Romans are believed to have introduced the use of glass jars and corks. Their expertise was passed on to other parts of Europe and remained unchanged for centuries. Demand for wine decreased with the decline and fall of the Roman Empire. Christian monks of the Roman Catholic Church documented their grape cultivation and wine making techniques during the Dark Ages. Wine regained its popularity from the fourteenth century. During the nineteenth and early part of twentieth century Italian wine was criticized for its inferior quality and the government stepped in to introduce regulation and stringent quality control measures. These measures bore fruit and Italy today accounts for twenty percent of the worlds total wine production.

Wine is one of man's greatest creations, and without a doubt, an amazing achievement. Wine is a drink that has been through much of our history. The ancient Egyptians made and consumed wine, Jesus was a wine drinker, and Christopher Columbus and his crew drank wine on their boats as they found the Americas. History traces Spain as one the oldest wine producing countries, with the first grape vines being planted around 1100 B.C. in the region of Andaluca. However there have been some studies that believe that grape seeds were planted in Spain between 4000 and 3000 B.C. Either way, we know that Spain has at least been making wine for the past 3000 years, and has a rich history on the development of wine and what is has become today. When Spain was conquered by the Phoenicians around 1100 B.C., they planted what is considered the first grape vines in Cadiz and started the production of wine. When the Romans conquered Spain around 210 B.C. wine production expanded throughout the country and it became a main source of work and income for the people. The quality of the wine varied from region to region, but it can said that the province of Tarragona and the Region of Andaluca produced and exported most of the best wine throughout the Roman empire. When the Roman Empire fell, the Moors conquered most of Spain (A.D. 711) and forbid the use of alcohol, which was their religious belief. Though wine was still produced during the Moorish rule, most grapes where used for "food and wine was no longer a major trade in Spain. However, the Moors did keep some vineyards for wine and started the production of fortified wine, which was the birth of "Sherry", Spain's sweet fortified wine. To this date, Sherry is still being produced in the region of Andaluca and is one of Spain's most popular exported items. Spaniards fought battle after battle to re-gain control of Spain, and finally ejected the moors in 1492 to take back control of their country. At that time, wine production came back to life. Many new vineyards were planted and the country was ready to open its market to the rest of Europe. After Christopher Columbus found the Americas, it opened the door for the Spaniards to export much of its wine to Latin America and once again, wine became a big part of Spain's economy. Through much of Spain's wine history (and the rest of the worlds), Spanish wine was light in color, had herbal fragrances, and made to be consumed right after it was made. Let's fast forward to around 1850. The country of France, known as the kings of wine at the time, had a bug called the "phylloxera", it destroyed most of the vineyards in France. At that time, many French winemakers moved to neighboring Spain as the bug had not attacked Spain. When the French arrived, they brought many new wine making styles and techniques that the Spaniards did not know, around that time is when Spanish wine really started to get more color, better fragrance, more fruit, and giving it a longer shelve life. In the past, wineries in Spain usually picked grapes well before they were mature or even ripened, and would sometimes mix red and white grapes together. The wine would usually stay in wine barrels for a long period of time (10+ years) so the wine would become smoother and not rancid. At some point during the 1960's new wine techniques started evolving in La Rioja. Most wine makers started to leave the grapes on the vine for a longer period before harvesting them, and left the wines on the barrels for a shorter amount of time. This method offered fruiter wines with a smoother finish and a fuller body, which has evolved to what Spanish wine is today. Around 1900 is when Spain's Cava (Spain's version of Champagne) started in the region of Catalonia. Cava rivaled Champagne from the start, as the quality was in par with Champagne, but the price was much lower. To this date, Cava is one of the most popular sparkling wines in the world, providing that "Champagne" taste, for a fraction of the price. Not to say that Cava is better than Champagne, with respect to the French, Champagne will always be King, but the price for a bottle can be out of most peoples reach. Thanks to the sparkling wines from Cava, the rest of us can open a bottle and celebrate the good times. 104

Shortly after the Civil War, our great-grandfather, Francesco Passalacqua, arrived in California from San Lorenzo della Costa, Italy. Like many Italian immigrants during this time, Francesco settled in Sonoma County hoping to achieve the American Dream. He financially supported himself by selling produce from a vegetable wagon. By 1896 Francesco had earned enough money to purchase a ranch in Alexander Valley for the cost of ten gold coins. Francesco and his son Emil, our grandfather, planted Zinfandel grapes on this ranch. Emil used the grapes from those vines to make wine at the then family owned Fitch Mountain Winery and Oliveto Winery. Emil owned and managed this ranch. He married Camille Young, and they raised their children on this land. Today, Emils son and our father, Fred, oversees the day -to -day operations of the vineyard. Under Freds ownership and management, the vineyard now includes varietals such as Merlot, Syrah; trellis Zinfandel as well as the original old vine Zinfandel. In 2005, we began Dancing Lady Wines. With a population of 65 million, wine is the dominant preferred drink and has a much greater wine consumption rate than US, per capita. The French traditions of winemaking originated in the 6th BC century and evolved over hundreds of years. Winemaking in a French Chteau is a traditional workmanship that has developed over many years of experience and is handed down from generation to generation. It is not through scientific methodology, advanced studies and technology that wine is ordinarily made in France. Although, this has been changing over the past decade. French consumers (since childhood) grow accustomed to wine drinking. Wine is almost always served with meals, lunch and dinner. France is the largest producer of wine in the world. In France, wine is drunk either socially or mainly paired with food. Red wines from the Bordeaux region are produced with the intention to be drunk within 15 -20 years of aging when they reach complete maturity. Pale straw in color. Typically aromatic the wine offers citrus zest, grapefruit and passion fruit complimented with herbs, spice and slate characters adding some depth and terroir. The palate is intense and tight at this stage. Beautiful mineral acidity threads through the rich fruit. Sturdy in structure, well balanced this is a serious wine offering New World fruit and Old World intensity and complexity. The fruit for the 2011 vintage was sourced exclusively from our Estate vineyards in the Mayacama Mountains, overlooking Sonoma Valley. One third of the fruit came from our home block on Cavedale Rd and the remainder from our Trinity Ranch vineyard. The Cavedale parcel offers ripe and generous fruit, tropical notes and a floral bouquet, well complimented with the tight structure, herbal notes and mineral steeliness from the Trinity Ranch. Our St. Helena Sauvignon Blanc hails from Wilson Ranch, a valley floor vineyard north of town, west of the Napa River. The vines for this wine are large, trained in a modified VSP quad with root systems in a deep composite soil of grey clay, sand, and large gravel. This is traditional and varietal driven Napa Valley Sauvignon Blanc at its best, with ultra-ripe notes of candied apricots, quince, pear, and vanilla on the finish.

Years ago, my dad wanted to create a club called the Bastardo Club after the eponymous grape variety that forms the foundation of our Tawny Port. He saw himself as the Big or Grand Bastard, and other members as little bastards. His title was fitting. Not literally, but in a figurative or metaphorical sense consistent with his humor, and the difficult nature of the Bastardo grape. It was mostly tasting room chit chat, and the club never came to be. Over the years many of you have asked us to start a traditional wine club. Im not really sure why we resisted, but ultimately we wanted to make sure we did it right. With that in mind, weve decided to launch the St. Amant Wine Club or Bootleg Society as it will be known. Instead of being a little bastard, club members get to join us as fellow Bootleggers. For those that may not know the story, our winery came to be in 1981, when a less than scrupulous winery filed bankruptcy on us shortly after harvest. We had sold them all our grapes. My father bootlegged the young wines out of their cellar and launched St. Amant Winery. Our intent is to build upon that original adventuresome spirit, more closely connect our customers with our hand crafted wines and to extend that experience through memorable events, tastings, and all around fun.

This wine is blended from 3 barrels one from 2003,2004 and 2005. The barrels were left untouched for the past 6-8 years to slowly age. These barrels were untouched and left in their metal shed to bake throughout the summer concentrating the flavors to reveal an intensely complex wine. The Tawny Port boasts a deep amber hue with stunning aromas that leap out of the glass and fill the room. The flavors envelop your mouth, coat your tongue and leave long nutty smoky finish that lingers for minutes. A rare wine not to be missed!
2009 Tempranillo:
The 2009 Tempranillo is their ninth vintage with this noble Spanish variety that has found a natural home in our estate vineyard. The wine is a big, chewy, well structured red with full , round aromas of spice, tobacco, and dark fruits. It has a ripe mouth coating texture that provides a good and healthy finish.
