What wines match best with Asian cuisine?


The popular types of Asian foods Chinese, Japanese, Thai and Indian are paired almost exclusively with white wines. While matching food with wine is subjective and your personal preferences should always rule, the white wines I like to serve with these dishes are ones that are served chilled and may even have a slight sweetness to them. The reason red wines dont work as well is because the tannin in red wine, originating from the grape skins, seeds and stems, clashes with the delicate textures of Asian food. Tannins are desired in wine when paired with foods with some fat content. The tannins cleanse the pallet of the fattiness with each sip. Thus, big, tannic wines like Cabernet Sauvignon are served with big, fatty foods, like steak. Pinot Noir or Beaujolais wine from France, popular red wines with little tannin, often work well when combining with Asian food. A wineenthusiast friend of mine likes his Thai food with shiraz from Australia, which is a peppery, full-bodied red with rich tannin. Although Ive never tried this combination I would probably agree with him if the dish included meat. White wines that are crisp with acidity and have a little sweetness, or residual sugar, blend well with the fish, vegetables, black pepper, spices and stir-fried methods used in Asian foods. Usually, my first choice is to drink Riesling with these dishes, for its flowery aromas, tingling texture and mild sweetness. It complements the saltiness of soy sauces or the spicy heat from wasabi. But on the other hand I also like drier whites, such as Fum Blanc for its vegetal qualities. If you want to look further than these options, try Riesling and Gewrztraminer wines from Germany, or the Alsace region of France. They are a little more complex than the domestic wines and will match up with the most flavorful Asian dishes.

If I Could Keep Time in a Barrel


June brings heat, and with it, lots of things happen in the cellar. Over the winter and into early spring, with cellars cold, wines in barrel tend to slowly blurb along, the yeasts gently doing their thing with the last percent or two of residual sugars or the bacteria finishing up the conversion of malic to lactic acid, both of which are good for aroma and mouthfeel, but come the warmth of late spring, the wines in barrel come alive again because heat speeds up reactions just like in your high school chem lab which means decision time once again. For whites, generally Chardonnay but occasionally Sauvignon Blanc or another oaked variety, this is when the secondary malolactic fermentation finishes if it has not already, and with the exception of those who are going for a long time in barrel, this is when the previous falls white wines are bottled. Some whites, like Sauvignon Blanc or Riesling, generally made in steel the whole time, would be released immediately, the freshness and vibrancy preserved for exactly how appealing these wines are when young. Most producers, however, would bottle oaked whites and then allow them to age under glass for at least a few months, if not longer. This is not just about bottle shock from bottling, which does tend to mute or cause otherwise great wines to taste a bit off for a month or two. No, the anaerobic conditions actually allow the wines to again undergo a slow maturation, bringing out more mouthfeel and complexity through the lack of oxygen. This is why the wines wake up when opened they have returned to aerobic conditions, activating bouquet and flavors through the reintroduction of oxygen. Red wines, of course, take a parallel but different trajectory than the whites. Just about all reds spend time in oak, and spring will mean time to transfer, or rack, again as every few months barrels need to be topped up to reduce the oxygen of headspace, and the best way to address this is to conslidate into fewer barrels. This causes a gradual reduction of the overall wine in the cellar as barreled wines are racked out of their homes and then into either a new barrel or a tank, some folks deciding to maintain the integrity of each wine lot while others allow for a general mixing in a larger tank before going back to individual barrels again. Any given red spends eighteen to twenty-four months in this cycle, and along the way, each racking creates a natural fining effect as particles fall out of solution and end up in the belly of each barrel. These lees provide for complexity but also possible microbial contamination, which is why the monitoring of each wine in barrel and as it is racked is most important of all we can taste and smell problems far quicker through sensory monitoring, and knowing that Spring brings warmth, and warmth speeds things up, simply means paying closer attention rather than necessarily doing anything at all. As I hope is clear, the reality of winemaking is that every step of the process presents a series of options. Regardless of which are chosen, or not, each time the winegrower chooses to tweak or not, to rack or not, how often, the logistics of the racking, etc., all leave an impact on the final wine. While the processes are scientific, measurable, and generally predictable, the application is where experience and creativity come to the fore. Those willing to experiment intentionally create an alternate path for their wines, choosing differently at the moments above, while those calling themselves minimally impactful or conservative seek to decide or disturb as little as possible. There is no one right answer, which is what makes winegrowing so much fun. If we knew all the answers ahead of time, thered be no point in doing it since wines tend to have mnds of their own. Consider that when you pop the next bottle and enjoy!

Heading to the Tasting Room

Do not be intimidated for any reason. That is rule number one (and there are very few real rules after that). For the most part, going wine tasting is about the easiest thing in the world, especially here in California where wineries and tasting rooms abound. You can find wineries specializing in red wines of all types, those that are famous for their white wines and others who pour sparkling wine. It is a matter of doing a little research and planning your day. Most tasting rooms open around 10 a.m. and close between 4:30 and 6 p.m. Before you start off pack a few essentials: Water (plenty of water) and something to snack on crackers or a baguette. Many wineries have picnic areas and there are plenty of delis and bakeries that can make up a lunch for you, or make your own. Which brings us to eating and drinking, the kind that doesnt directly involve wine. Be sure to nibble during the day and make sure you make time for lunch. Two tips: drink at least twice as much water as you do wine, and remember that you dont have to drink everything poured into your glass. There is a reason tasting bars have dump buckets and a pitcher of water to wash out your glass. That said, here are some tips that have proven to be helpful and are designed to help make the sensory adventure of wine tasting all the more enjoyable. Dont be afraid to ask questions. Time and time again I have heard knowledgeable winery workers say that there is no such thing as a stupid question, and they mean that. You can drink what you want, in the order you want. If you only like reds, say so; if you dont like sweet wines, speak up. But the idea of starting with whites, then going on to reds and then sweet wines is a good guide. Zinfandel is red. I am sure you know that but it never hurts to remind everyone. If there is a particular wine you want to try and it is not on the list, ask. There might be a bottle around that was opened for a trade tasting or by the winemaker. Most tasting rooms are happy to pour a little if you show enthusiasm. If you plan to take wine home with you, either in the car or on a plane, buy a cardboard box with Styrofoam wine inserts. Fill it during the day and this keeps wine from rolling around in the trunk. Check out the smaller wineries. It is a revelation. Take notes on the wines you most enjoyed. Take advantage of tours when the winery offers them, but keep in mind that they take anywhere from 20 minutes to well over an hour, so one a day is plenty. Buy wines that you can only find at the winery. These often include smaller (375 ml) bottles of limited production Ports or dessert wines. Dont buy a wine you can get at a supermarket back home. Youll pay more, and besides, whats the point? Look for tasting rooms in towns. Many of these are cooperative

tasting rooms, where in one place you might find wines from a dozen or more small-to-medium premium producers. They are scattered throughout the area and more are opening all the time. Dont give too much thought to ratings and vintages. Its like art: if you like it, its a good wine. It is as simple as that. Remember that you dont have to do the driving. It takes no more than a phone call to rent anything from a Town Car or restored classic convertible to stretch limos and a 20-passenger bus. All have drivers that will stow your wine for you and the local companies know the area. As to taking that wine home, ten people sharing one of those impossibly long limousines is fine and fun, but if you all plan to buy a couple of cases the trunk which is no bigger than a normal luxury cars is going to fill up fast and youre going to find yourself filling the interior floor with boxes and using cases of Cabernet as footrest. Tell the transportation company what you have in mind and listen to their advice. They know the territory and the people and personalities. Know your limits. If you get close to it let others taste and you can listen. It beats ending the day in a blur, and if need be calling a taxi is cheaper than the alternative. And if at a seated tasting, dont be afraid to leave a gratuity. Its more than worth the five or ten dollars to get wisdom and wine and a great time.

Crafted from a single block of the Chamisal clone the one used in our estate vineyards original Chardonnay plantings the wine emulates the leaner, elegant style that was prevalent in California in the early 1970s. History
Chamisal was the first vineyard planted in the Edna Valley appellation. It was developed by the Goss family, who named the estate for the fragrant Chamise, a native white-flowered shrub that thrived on the property. The vineyard went dormant several years later but was purchased in the early 1990s by a visionary who recognized its near perfect combination of soil and climate and potential for producing incredible wine grapes. Renamed Domaine Alfred, the vineyard was replanted to a wide range of clones across five grape varieties mainly variations of Pinot Noir and Chardonnay but also Grenache, Syrah and Pinot Gris. When we took ownership of the estate in 2008, we decided to restore the original name Chamisal Vineyards to honor its place in Edna Valley history and especially its importance to our core identity. It is this exceptional vineyard that allows us to make our bold and distinctive wines.

Winemaking
Led by Winemaker Fintan du Fresne, a native of New Zealand whose first crush at Chamisal was in 2006, our winemaking philosophy encompasses a natural approach that is all about bringing our special vineyard to life. All vineyard work is done by hand. During harvest, we take as many as four passes through each block to ensure the fruit is picked at ideal ripeness. We ferment and age each lot separately, tailoring our winemaking, such as the kind of French oak we use, to highlight the characteristics unique to each particular clone and vineyard block. From our painstaking work in the field to the careful handcrafting of our wine, our style is about allowing each varietal to shine, expressing our vineyards naturally bold and complex flavors.

Located half-way between San Francisco and Los Angeles, the Edna Valley is recognized as one of the premier Chardonnay and Pinot Noir growing regions in California. With the Pacific Ocean a mere few miles away, the coastal fog and breezes create one of the states longest growing seasons, extending the amount of time grapes hang on the vine to develop flavor. Celebrating Summer with Wine, Food and Music
Summer is an exciting time at Niner Wine Estates. The plant life in front of the hospitality center including the white meidiland roses, olive trees and fragrant provence lavender are all in full bloom; as is the beautiful surrounding Heart Hill Vineyard. The flora must have gotten word that Niner Wine Estates is planning on welcoming guests throughout the next several weeks during their summer events. In general, the Niner Wine Estates summer event calendar has a common theme of live music, fresh food and wondrous wines. Each event invites guests to enjoy the spacious and well-appointed outdoor patio space, which overlooks the demonstration winery and Heart Hill Vineyard, while sipping on Niner Wine Estates wine and enjoying live music performed by local musicians. There is a new food frenzy occurring in Paso Robles wine country: mobile gourmet food trucks. A selection of these food purveyors are featured on big event weekends at Niner, such as Fundaros Foodstrea, Haute Skillet and Kunfushion. Each mobile gourmet food truck has a unique offering from typical wine country deli items and pulled pork sandwiches to tacos al pastor and Asian-fusion stirfry. Upcoming events include a Fourth of July Celebration, Live & Local Music Saturdays to be held on select weekends, a Labor Day Celebration as well as a food and wine pairing cruise in Morro Bay. Furthermore, the Niners want to capitalize on all the wonderful, fresh produce growing in the area by hosting a series of hands-on, chef taught cooking classes in their Education Kitchen. Each cooking class is designed to be interactive, educational and most importantly, a fun way to experience the gracious wine country lifestyle. When developing the Hospitality Center several years ago, Pam and Dick Niner knew that they would include a state-of-the-art, restaurant grade, education kitchen in the plans. The Niners, having traveled around the world, are enamored by the relationship between wine and food, which seems to be universal, and wanted to share their experience with residents and visitors of Paso Robles. The chef and theme of the cooking classes vary from month-to-month, but some common themes are Spanish Tapas, The Wonderful World of Crab and Farm to Fork, where students actually go on field trip to visit a local, organic farm to pick their produce for that days class. Each class ends with a wonderfully prepared meal, each course paired perfectly with Niner wines, of course. STANGER Vineyards is making a name for itself as one of the premier boutique wineries in Paso Robles. The STANGER estate vineyard is located on the Westside of Paso Robles in the famed Willow Creek region, and at 1500 ft elevation, has views of all the neighboring properties. The second creation of acclaimed chef Santos MacDonal, La Cosecha Bar + Restaurant in Paso Robles, will celebrate its grand opening on July 5. Positioned just off Paso Robles charming City Park, La Cosechas ambiance is casual, sophisticated and engaging. The restaurant is a celebration of Latin cuisine, boasting flavors from Spain, Central and South America and beyond. By trade, Im an Italian chef, said Chef Santos, whose Italian eatery, Il Cortile Ristorante, enjoys accolades far and wide for his fastidiously-crafted pastas and sauces. But Im Honduran by birth. Developing La Cosecha has immersed me back into the tastes, textures and aromas I know best. Spanish for the harvest, La Cosecha will offer a rotating menu inspired by seasonal local produce, proteins and grains; and accented by imported ingredients and spices from Latin America and Spain. SummerWood Winery has long been one of Highway 46 Wests most renowned estates. Passing by the property on the corner of Arbor Road, one can see major changes in the works. That is the SummerWood Inn receiving a complete renovation. Across the street, however, the Tasting Room is open for business and provides a tranquil park-like setting for Paso Robles wine tasting at its best. Pulling into the parking lot is immediately calming, with the inviting visage of building and mature trees that offer ample shade. A lovely brick path leads guests to the tasting room through French doors. Upon entering, guests are welcomed by a comfortable lounge area with sofas and oversized chairs in front of a wood-burning fireplace. The tasting room includes a display of thoughtfully selected wine accessories and seasonal gift merchandise. The tasting bar can accommodate plenty of wine tasters while offering an intimate experience to each group. SummerWood is open daily from 10:00 a.m. to 6:00 p.m. and offers a wide selection of wine for sampling. Guests are welcome to choose five wines for only a $5 fee. A new addition to the white wines is the 2012 Grenache Blanc. The wine is crisp and full of green apple with a zesty finish a perfect summer sipper. The newest

release in the reds is the always-popular Vin Rouge. This 2010 vintage is a wonderfully balanced, backyard BBQ or picnic wine. A standout red is the flagship Rhone blend, Diosa. The wine is exquisitely elegant and perfectly aged. SummerWoods tasting room also has a small deli case which holds cheeses, salamis and non alcoholic beverages so that guests can enjoy accoutrements while relaxing on the charming brick patio on the back of the tasting room. The patio, which overlooks an estate Cabernet Sauvignon and Syrah vineyard, is open to the public. Now for the exciting news - the SummerWood Inn will be open for business in late August! The renovation will result in a warm inviting interior with a modern edge. The theme of the Inn is the idea of culinary style. Included in each day of a stay is a gourmet breakfast, two hours of hors doeuvres in the afternoon, and dessert with turn down service. Each of the nine rooms is named after a grape variety that is grown on the property. The Inn will be available for private parties, including showers, corporate events and weddings. The adjacent vineyard will be replanted in Spring of 2014 with varieties carefully selected for the terroir of the property, with the winery working towards Sustainability in Practice (SIP) certification. SummerWood will be the host venue for the Rhone Rangers Hot Tuesday Varietal Nights tasting on July 30th, where 15 Paso Robles wineries will feature their Grenache Blanc paired with small bites of food. Perfect for warm weather and a big hit among Castoro fans is their Brut Champenoise. This refreshing 60/40 Chardonnay and Pinot Noir has won over the locals and earned Double Gold at the San Francisco Chronicle Wine Competition. This brut was created in the mthode style, or second fermentation, to make for a satisfying mouth feel of fine bubbles along with tastes of grapefruit. Castoro Cellars wines carry the distinction of SIP-certification, or Sustainability in Practice, with more than a third of 687 total acres certified organic. I look forward to lighter wines and the VSJ 2011 Reserve Albario is perfectly paired with this Shellfish Paella Risotto. This recipe is from Bon Apptit and delivers on taste and presentation. There are so many different variations of paella and I appreciated how easy this recipe was to make since other versions need a three or four hour cook time. The key is using the best ingredients you can find. Fresh saffron is a must for providing that beautiful color and added punch of flavor to the dish. The VSJ 2011 Reserve Albario has sensational, perfumed layers of ripe peaches, candied lime and Asian pears. There is a good grapefruit acidity that balances the generous weight of this wine along with the shellfish. The Albario is from the neighboring AVA, Edna Valley, where the maritime influences mirror that of the varietals place of origin, Rias Baixas, Spain. Visitors who venture out into the San Miguel hills get their first glimpse of the Villa as they crest the first range of rolling hills. On arrival at the tasting room visitors are struck by the sheer beauty of the grounds and 14,000 square foot estate. SHELLFISH PAELLA RISOTTO


Yield: Serves 4 The bold flavors of Spains famous paella-sausage, seafood and saffron-meet the luscious, creamy texture of Italys risotto in this beautiful rice dish. Pour a chilled dry white wine during dinner, and offer flan for dessert. 1 tablespoon olive oil 1/2 onion, chopped 1/2 pound hot Italian sausages, casings removed 1 pound clams, scrubbed 1/2 pound mussels, scrubbed, debearded 4 8-ounce bottles clam juice 1 teaspoon saffron threads 2 cups arborio rice or medium-grain rice 1/2 cup dry white wine 1/2 pound uncooked medium shrimp, peeled, deveined 1 10-ounce package frozen peas, thawed 2 large plum tomatoes, seeded, chopped

heat 1 tablespoon olive oil in heavy large saucepan over medium heat. Add chopped onion and cook until almost tender, stirring occasionally, about 5 minutes. Add sausage meat. Cook until sausage is no longer pink, breaking up with fork, about 5 minutes. Add clams and mussels. Increase heat to medium-high, cover and cook until shells open, about 5 minutes. Transfer clams and mussels to medium bowl, discarding any that do not open. Cover shellfish and keep warm. Meanwhile, combine clam juice and saffron threads in small saucepan; bring mixture to simmer. Reduce heat to low; keep warm. Add arborio rice to same saucepan that clams and mussels were cooked in and stir 2 minutes over medium heat. Add dry white wine and cook until wine is evaporated, stirring constantly, about 3 minutes. Add warm clam juice mixture and simmer until rice is just tender and liquid is creamy, stirring frequently, about 20 minutes. Mix shrimp, peas and chopped tomatoes into risotto and cook until shrimp are just cooked through, stirring frequently, about 3 minutes. Season risotto to taste with salt and pepper. Top risotto with clams and mussels and serve immediately.

Wine connoisseurs who pay a visit to Opolo Vineyards in Paso Robles, are sure to mention two of the things that make the tasting room memorable - the quality of the wines and the friendly service. These attributes make patrons come back again and again for a taste of some of Opolos most popular wines, including the Mountain Zinfandel and the Sangiovese. What makes the Opolo tasting room special is the relaxed atmosphere and the emphasis on customer service. There is an indoor area with a bar, posters on the walls and t-shirts and other items for sale, and an outdoor patio with a view overlooking the rolling hills of the vineyard. Its a lovely way to spend a summers day. Patrons who visit Opolos tasting room often mention the friendliness of the servers. This is no accident. Chance Hochschild, wine club and marketing manager, said that customer service is of the utmost importance. We want to have the appropriate number of servers, and make sure everyone is treated in a friendly manner. During your visit to the tasting room, you might find yourself chatting with one of Opolos owners, Rick Quinn or Dave Nichols. They might tell you the story of how two friends bought adjoining vineyards, and a wine label was born. Right now, Opolos tasting room is featuring a 2011 Pinot Grigio, a 2011 Maestro (a Rhone blend of Grenache, Mourvedre, Syrah and Counoise), a 2010 Syrah, a 2010 Tempranillo, and 2009 Mountain Zinfandel. While Opolos wine tasting list includes five varieties of reds and whites, servers can also offer patrons a sampling of the types available only to members of Opolos wine club. This summer there will be two new wines available in the tasting room, including a Chardonnay in July and a Zinfandel in September. The Chardonnay tastes amazing, Hochschild said. At Opolo, the tasting room experience is enhanced by food and wine pairings. There is an outdoor barbecue and wood fired oven in which Opolo employees prepare sausages and pizzas for patrons. Opolos menu includes a pear pizza with goat cheese, caramelized onions, and mozzarella. This items suggested pairing is a glass of Albario. The menu also features some food that is a little bit different. Visitors can order Cevapi wraps (Cevapi is a dish of grilled meat, similar to a kebab, which is a traditional dish found in southeastern Europe). Opolos tasting room, located at 7110 Vineyard Drive in Paso Robles, is open Sunday through Friday from 10:00 a.m. to 5:00 p.m. and Saturdays from 10:00 a.m. to 5:30 p.m.

Rotary Winemakers Cookoff Announces 2013 Lineup of Judges


The Paso Robles Rotary Club announced its lineup of judges for the 2013 Winemakers Cookoff fund raiser scheduled for Saturday, August 10. The judging crew consists of the five respected food and wine industry professionals: Robert Whitley, San Diego-based syndicated wine writer and wine-industry judge; Mike Cervin, Santa Barbara-based food and wine journalist and author; Kathy MarcksHardesty, local wine industry journalist; Brigit Binns, a Central Coast author of 26 cookbooks; and Lisa Pretty, a Paso Robles food and wine writer and owner of Pretty Smith Vineyards and Winery. This is an extremely experienced and cohesive group of judges, says Sharon Ross, the chairwoman if the Rotary Winemakers Cookoff. The judges duties are to sample the wine and food pairings prepared on site and served to event attendees by the 30 participating wineries to determine winners of the Judges Choice awards. In a parallel food and wine pairing competition, participating winemakers solicit votes from attendees for the Peoples Choice awards. Enjoy choice wine and excellent food prepared by some of the best winemakers in the Paso Robles Appellation. Tickle your tastebuds, listen to live music by Julie Beaver & the Bad Dogs, and have a great time while benefiting local high-school seniors. The Paso Robles Rotary will again bring over 30 Paso Robles winemakers together to compete to see who is the best chef, and organizers expect the tickets to sell out fast. The 15th Annual Winemakers Cookoff will be held August 10 from 6 to 9 p.m. at the Paso Robles Event Center. Organizers are limiting attendance to just 1,200 tickets. The Paso Robles Winemakers Cookoff has become one of Paso Robles most-popular wine, food and music events, says event cochairperson Bob Fonarow. This family-owned brewery started by Jim and Jaime Dietenhofer of Los Olivos, has been life-long dream in the making. Centrally located at 1659 Copenhagen Drive in Solvang is the Lions Peak Vineyards tasting room. Inside the thatched roof shop, one finds a multicultural array of art, pottery, ethnic wood carvings, painted glassware wine accessories and more. Artistically labeled bottles, however, reveal handcrafted, award-winning wines sourced from a 120-acre San Miguel vineyard estate located in North San Luis Obispo County. To date, winnings from four major California wine competitions boast a lions share of 24 medals. Im about to bottle 2010 reds, says winemaker Jennifer Soni, who earned the distinction of Certified Sommelier last May. Were bringing back Merlot in the character of great Bordeaux varietals in the traditional Old World style. Our Bon Courage is outstanding. Weve blended 63 percent Merlot, 22 percent Cabernet Sauvignon and 15 percent Cabernet Franc, using French oak. One hundred cases will be released before fall. Wine Club members will receive first-come, first-served privileges. Other fans of Lions Peak may reserve wines also if they hurry. Lions Peaks 2010 Sister Lionness blends 42 percent Cabernet Sauvignon, 41 percent Merlot and 19 percent Cabernet Franc. This vintage and a new Zinfandel Port just might fly out the door, not unlike Jennifers BFF blend, but will soon return. An art and music lover, Jennifer enjoys focusing on gathering friends, near and far. Live classical guitar music is featured in the tasting room on alternate Saturdays and Sundays. A Wednesday gettogether is also in the works to enable a midweek respite with cheese, chocolate and community to enhance a glass. Wine is an art, says Jennifer. Rancho Sisquoc Winery is one of the oldest wineries in Santa Barbara County having started growing grapes in 1968 with Cabernet Sauvignon and Riesling. Today it is still a family owned winery and their 310 acres of vineyards overlooking the Sisquoc River are home to unique micro-climates which allow them to grow diverse varieties such as including, Malbec, Merlot, Syrah, Pinot Noir, Cabernet Franc, Sangiovese, Chardonnay, Sauvignon Blanc and the obscure German grape Sylvaner. To the Chumash Indians who once lived on this land the word Sisquoc meant a gathering place and wine seekers still gather down a long dirt road amid lush green pastures and fruit trees at the winery tasting room, truly getting a feeling of early California. The vineyards are warmer than vineyards in the lower Santa Maria Valley, but Rancho Sisquoc is cooler than the Santa Ynez Valley just 20 miles south due to what is known as the transverse range; coastal mountains which running west-east, not north-south, that bring cool winds and fog inland from the Pacific Ocean, tempering the vines. Winemaker Alec Franks abides by a simple philosophy for the 18,000 cases he makes; create high quality wines in limited quantities, and offer them at a reasonable price. Tasting fees are $8 for

any six wines from their wine list and there are usually a dozen wines to choose from, and a stemless logo glass is included. You can bring a picnic to the beautiful and quiet grounds any time you like. Rancho Sisquoc is truly a throwback to another time. Firestone Vineyard was one of the first commercial estate vineyards planted in Santa Barbara and true to that progressive thinking, they continue to look forward with new wines, new markets and a commitment to making the best wines in Santa Barbara County. The Firestone name is probably familiar to most people; they were the family that created Firestone tires. Today winemaker Paul Warson, who came on board at Firestone after 14 years making wine in the Napa Valley, is putting his own stamp on Firestones aromatic white wines and their traditional Bordeaux reds. Warson oversees over 400 acres of grapevines which translates to about 100,000 cases of wine each year, making them a major player in Santa Barbara County. Its been a whirlwind threeand-a-half years since I took over the winemaking here at Firestone Vineyards, Warson says. It seems that we need to move faster and faster to stay in the same place, or keep up with the latest accomplishments for that matter. We have received some terrific accolades from the media and press in the last year which has gone a long way in expanding Firestone into new markets. And Firestone is also one of the few wineries in the area who offer complimentary public tours daily at 11:15 a.m., 1:15 and 3:15 p.m. After the 30-minute in-depth tour you can picnic outside on the verdant lawns and see for yourself the vineyards which have been

planted on a series of mesas, which have gravelly sub-soils, perfect for keeping the vines healthy and well-drained. The vineyards sites are ideally oriented to capture the sun and breezes for perfect exposure to maximize the grape flavors. At the winery things are busier than ever, says Warson. Last year saw the inaugural release of Proximity 26, our flagship red wine. In the next few weeks Paul says he will be bottling the 2010 vintage of Proximity 26, and a new addition to the Firestone family, Proximity 26 Cabernet Sauvignon. As usual our wine club releases continue to highlight our tasting room only wines, notably our Reserve Chardonnay, Clone 174 Syrah and our Cabernet Franc, Warson adds. So if youre a newbie wine lover or a confident connoisseur you will find wines that are compatible with your personal tastes. The spacious tasting room is replete with soft wood tones, and tiled floors, reminiscent of a ranch house with views out to one of their vineyards. The tasting room also offers a plethora of gift items in addition to wine. Their bottle prices range from $15 to $60, with a vast majority being under $25. Their Firestone Concert Series, which are normally held every Friday starting in May until the end of September 2013, and are the

ideal way to spend clear warm summer nights in Santa Barbara wine country under the stars with good tunes and great friends. The concerts run from 6 p.m. to 9 p.m. and are free to attend and all the current releases of Firestone wine are available for purchase throughout the event. Big Toms BBQ is on hand with tri-tip sandwiches, pulled pork sandwiches, burritos, tacos and more so you wont go hungry. But all the busyness isnt reserved for the winery only. Diversity is truly the spice of life and with nearly three dozen tasting rooms in Los Olivos, how does a winery stand out? For Cimarone thats easy. You see, Cimarones tasting room is the only tasting room representing the newly formed Happy Canyon of Santa Barbara AVA in all of Los Olivos. But what exactly does that mean? Well, it means that Happy Canyon is becoming known for Bordeaux grapes like Cabernet Sauvignon, Merlot and Sauvignon Blanc, and this federally recognized growing area is unique in all of Santa Barbara since these grapes are less common here. After walking countless properties, we were finally introduced to what would become the Three Creek Vineyard, says owner Roger Higgins. This site possessed all the elements of an ideal vineyard locale: rocky, well-drained soils, steep hillsides and south-facing slopes, all within the Happy Canyon of Santa Barbara AVA. Here we could plant and grow a superb vineyard utilizing low-yields and sustainable vineyard care. Their goal is to always produce handcrafted, high-quality wines under two distinct labels Cimarone and 3CV, whose wines hover in the $20 range, both with an emphasis on Bordeaux and Rhne varietals. Of course to make great wine you need a great winemaker and the Higgins tapped winemaker Andrew Murray who, as Roger says, embodies our goal of making thoughtfully constructed serious

wines. Currently they are making about 3,000 cases and its not uncommon to find Roger and his wife Priscilla behind the counter in their tasting room pouring wine and chatting about their project. A vision to re-plant the older portions of Zaca Mesa Vineyards began almost twenty years ago. Zaca Mesas head winemaker Eric Mohseni notes, When Zaca Mesa first started in 1973, it was kind of like the wild frontier, and no one really knew what to grow. They just took the models off different wine regions we had Pinot Noir and Cabernet here at one point. There was a lot of Zinfandel on the property; there was a lot of Riesling. It is too hot here for Pinot and too cold for Zinfandel and Cabernet, but Syrah and other Rhne varietals really thrive. Rather than merely grafting over the unsuited varieties as a quick but inferior method of switching, plans were approved by the ownership, the Cushman Family, to embark on the long and expensive process of ripping out the older mismatched blocks and update the vineyards with higher density spacing, lower trellis wires, better suited clones and low-vigor rootstocks. Vineyard equipment has been the one of the major limitations on grapevine spacing in the past. When Zaca Mesa first planted its vineyard in 1973, tractor size prevented planting a tighter spacing than 12 feet between rows and 7 feet between vines (12' x 7'). 12' x 7' was the standard spacing back in the 70s, dropping to 10' x 6' in the 80s, and then 8' x 6' throughout most of the 90s. It wasnt until the late-90s that we really started experimenting with true highdensity spacing of 6' x 4' and 6' x 3'. We found that the vineyards

with the combination of tighter spacing and lower trellis wires were causing the grapes to ripen almost two weeks earlier and with higher quality, says Jeff Newton of Coastal Vineyard Care. Jeff also explains that with these new highdensity blocks we are now focused on pounds per vine rather than tons per acre. aWe have been able to drop individual vine yields from around 10-15 pounds of fruit per plant to around 4 pounds per plant. A 40-year pioneer, Zaca Mesa Winery has been updating their estate vineyard with more than 80 acres of highdensity spacing, comprising nearly 40% of its total planted acreage. Winemaker Eric Mohseni sums it all up: Our new high density blocks are really exciting for us. We have already seen the benefits in our fruit quality and each year we are increasing the percentage of these new blocks in our core wines. 6' x 4' and 6' x 3' is probably where we are going to stay for now; you could go with the Burgundian model of 3' x 3', but you would need really skinny people to work those rows! Santa Maria is a bit of a difficult place to describe to Pinot-philes who havent been there. Its basically a cowboy town full of ranchers and farmers and big, manly trucks. Lots of cowboy hats, cowboy boots and big belt buckles. Not exactly not the backdrop most imagine of when daydreaming about wine country, especially that of the refined Pinot Noir. Owner/winemaker Steve Clifton lives by this philosophy in his effort to vinify the wines of Palmina. We produce solely Italian varietals from Santa Barbara County, California. We found that the climate and soil types in our own Santa Barbara County are similar to those in our adopted Northern Italy. Another parallel is that Santa Barbara County features a unique transverse mountain range, running from east to west that funnels oceanic influence into the valleys. The Alaskan current runs along the Pacific coastline until Point Concepcion where it juts in and pushes the cold air into the valley. Morning maritime fog rolls in slowly and finally meets the warm desert air flowing from the east and the Los Padres National Forest. These unique areas of microclimates Piemonte, Friuli and Santa Barbara County feature cold air pushing warm air to create growing conditions that provide enough sunlight to help fully develop fruit flavors, and cool night temperatures that maintain the grapes natural acidity levels, and which allow Steve to create food wines with a balance of fruit, tannin and acid. Conway Family Wines Deep Sea Tasting Room


The Conway family is actively involved in their winery business. With two different labels covering the best of the California Central Coast, Conway Family Wines might just become your familys wines. They offer two labels to choose from including Deep Sea wines which are made from grapes grown in Californias moderate coastal climates including offerings of Chardonnay, Viognier and Sauvignon Blanc to Syrah and Pinot Noir. Vineyards along Californias coastline are cooled by fog and ocean breezes which translate to distinctively different grapes from those grown in warmer interior areas. Its the job of the Conway winemaker to preserve these differences so the wines reflect their oceanic terroir. Conway purchases fruit from noteworthy vineyards in Santa Barbara, San Luis Obispo, Monterey and the Napa Valley, contracting specific blocks, actively managing individual vines and working with growers to formulate viticultural practices so that the grapevines are farmed to Conways exacting specifications. Their Rancho Arroyo Grande wines are made from grapes grown at their estate vineyards in San Luis Obispo County including Mourvdre and Zinfandel from this 1880s era property. These are limited production wines, small lots, for the fine wine connoisseur who wants something uncommon. The most common tasting experience is a Wine Bar Tasting. You step up to the bar where typically a list of wines being poured is displayed. Expect to pay a tasting fee between $10-$40. Some tasting bars will offer you the option to taste a library or reserve wine. Exercising this option increases the fee, but will allow you to taste very unique, old or rare wines.

A Sit Down Tasting usually requires an appointment, and there may be a slightly higher fee than a wine bar fee. Seated in an elegant room, you are poured several wines by your winery host. Expect your host to describe the unique characteristics of each wine and how it was made.

 

       

  

Walk Around Tasting


A Walk Around Tasting is a combination of a tour and a tasting. Your host brings along several bottles of wine on your tour, and may take you to a garden area of the winery to pour the first round. Then you move to another place within the winery to sample the next wine. This experience continues until all the wines are tasted.

 

    

 

  

Barrel Tasting
         
Another popular tasting experience that can be part of a tour or a Walk Around is a Barrel Tasting. Your guide takes a wine thief, a special siphon placed into a hole in the top of a barrel to extract tasting samples of a maturing wine. The sample allows you to taste what the wine is like in the middle of developing its full potential.
