Rheological Terms Shear Stress: the amount of force/presure that is applied to a sample in order to cause movement at some rate. Viscosity: the relationship of shear rate to the shear stress applied. Newtonian rheology: at a given temperature, the viscosity measured is constant as the shear rate vaires (examples are water and thin motor oil). Newtonian fluids in rality are not very common. Most fluids are Non-Newtonian; i.e. as the shear rate varies, the shear stress does not vary proprotionally. Pseudoplastic rheology: viscosity decreases as shear rate increases (shear-thinning). Thixotropic rheology: rheology decreases over a measurable period of time as shear rate increases (time-dependent shear-thinning). KELTROL & KELZAN Xanthan Gum
KELTROL and KELZAN Xanthan Gums are produced by a fermentation process using the bacterium Xanthomonas campestris. The composition and structure of xanthan gum produced by commercial fermentation is identical to the naturally occurring polysaccharide formed by Xanthomonas campestris on plants belonging to the cabbage family. Xanthan gums pseudoplastic flow behavior provides high viscosities at low shear rates to improve suspension and emulsification, and low viscosities at high shear rates to give good flow properties when poured or pumped. The slight increase in viscosity resulting from very low use levels imparts the sensation of enhanced body.
GENU Pectin
GENU Pectins are partially methyl esterified, anionic polysaccharides derived from naturally occurring structural components in fruits and vegetables. Because of its traditional uses in food products, pectin is well known by consumers and accepted as label friendly. The major commercial raw material source is citrus peel, although CP Kelco also produces pectin derived from sugar beets. There are two basic types of GENU pectin, differing in Degree of methyl Esterification (DE): High methylester (HM) pectin, DE higher than 50, forms gels and structured liquids under conditions of low pH and low water activity (for example, at high concentrations of sugar, sorbitol or glycerol). Low methylester (LM) pectin, DE lower than 50, forms gels in the presence of divalent cations, such as calcium and magnesium.

The exceptional thickening and stabilizing characteristics of CP Kelcos xanthan gum family provides a versatile performance for a range of consumer products. Xanthan gum solutions are pseudoplastic. At rest, they are viscous. When mixed, pumped, sprayed or poured, the solutions thin. Once shear is removed, the solution recovers to starting viscosity almost immediately. Xanthan gum has outstanding stability to pH, salt and/or heat, and excellent compatibility with other ingredients. It is readily soluble in both hot and cold water. CP Kelcos xanthan gum grades are specifically designed for use as hydrophilic colloids to thicken and stabilize emulsions, foams and suspensions. Unique combinations of properties allow CP Kelco xanthan gum products to perform beyond the limits of many other commercially available hydrocolloids. The KELTROL CG xanthan gum family is designed specifically for cosmetic and personal care micro requirements. All KELTROL CG products are tested to ensure compliance with the purity criteria defined in the monographs for xanthan gum in the current editions of the US Pharmacopoeia/National Formulary (USP/NF) Japanese Pharmaceutical Excipients (JPE), and European Pharmacopoeia (EP). Formulators can choose from, a family of KELTROL CG products designed to meet specific needs and processing conditions.

KELZAN industrial grade xanthan gum products have been designed to meet the demanding environment of various industrial formulations. KELZAN grades are specially designed to meet formulation criteria including long-term suspension and emulsion stability in alkaline, acid and salt solutions; temperature resistance and pseudoplasticity. KELDENT xanthan gum is designed for use as a toothpaste binder. It gives a smooth, transparent and shiny paste which is easy to extrude from the tube or dispenser. KELDENT xanthan gum is also compatible with cellulosics, such as CEKOL cellulose gum. The XANTURAL xanthan gum family has been designed to meet the specific needs of the pharmaceutical industry. All XANTURAL xanthan gum products are manufactured according to bulk pharmaceutical excipient guidelines published by the International Pharmaceutical Excipients Council (IPEC) and are certified to meet the requirements specified in the USP/NF, European Pharmacopoeia and Japanese Pharmaceutical Excipient monographs. In addition, certain XANTURAL products also comply with Chapters 61/62 of the current USP Monograph.
Xanthan gum is a high molecular weight polysaccharide produced via fermentation. Its unique functionality compared to other commercial polysaccharides is provided by the actual structure of the xanthan gum molecule. The polymer backbone is made up of -1,4-linked D-glucose residues and, therefore, is identical to the cellulose molecule. A trisaccharide branch containing one glucuronic acid unit between two mannose units is linked to every other glucose unit at the C(3) position.

The CP Kelco carrageenan family of products has an established position within the consumer products industry as uniform gelling and texturizing agents. CP Kelco carrageenans are purified hydrocolloids extracted from selected species of red seaweed Rhodophyceae and are highly purified carrageenans. All CP Kelco grades of carboxymethyl cellulose are water-soluble polymers derived from cellulose by introducing carboxymethyl groups onto the cellulose backbone. The formed anionic cellulose molecules hydrates and dissolves readily in water. Through our manufacturing expertise and a deep knowledge of end-user requirements, CP Kelco offers the most extensive range of CMC products in the market today. These versatile products serve as water soluble stabilizers and thickeners widely used in consumer products applications such as toothpastes and personal care products. CEKOL grades are stable over a wide pH range and can be used in products within a pH range of 4.0 - 10.0. All CEKOL grades have a purity of minimum 99.5% and fully comply with FCC and BP/EP/USP regulations. Specially designed CEKOL toothpaste grades have very good water binding properties and provide a thick mouthfeel, as well as very good process versatility and compatibility to a wide variety of formulations and processes. FINNFIX CMC is a proven anti-redeposition aid. The use of FINNFIX CMC in powder detergents is one of the products oldest and most well-known applications. FINNFIX functions as a soil-suspending, anti-redeposition agent in powder detergent formulas. The pH of the wash water and the presence of anionic and non-ionic surfactants do not affect the adsorption of FINNFIX. During the rinse cycle, FINNFIX desorbs from the fabric surface, as a result of the reduced ionic strength. Gentle agitation of a weak gellan gum gel, after it is set, is also sufficient to form a smooth, pourable gel. This means that fluid gels can be formed using standard filling operations. GENU pectin is first and foremost a gelling agent and is used to impart a gelled texture to products, traditionally used in food products such as jams and jellies. The gelling ability is further utilized where stabilization of multi-phases is required, either in the final product or at an intermediate stage in the process. GENU pectins are finding increasing use, particularly as gelling agents, but also as viscosity builders, protective colloids and stabilizers in a variety of consumer products. CP Kelco works in close contact with the industry to develop new pectin types to meet specific technology and regulatory requirements in the marketplace. To that end, GENU pectin USP/100 and GENU pectin USP/200 are tested to comply with Chapters 61/62 of the current USP monograph. Another unique property of GENU pectin is the ability to adjust the skin back to its natural pH when used in products such as creams, lotions, shaving products, or as a complimentary treatment following harsh products (such as bleaching, dipilatory and acne products). GENU pHresh pectin can be used to help protect the skins acid mantle and provide a normalizing effect to skin pH after being exposed to harsh conditions like washing or abrasion. Unlike other acidic materials such as alpha Hydroxy acid or citric acid, which penetrate the skin and cause irritations, GENU pectin is a longchain polysaccharide which means it is an exceptionally mild acid.

Structure of Pectin
Pectin is a purified carbohydrate product obtained by aqueous extraction of appropriate edible plant material usually citrus peel. Pectin consists mainly of galacturonic acid and galacturonic acid methyl ester units forming linear polysaccharide chains and is normally classified according to its Degree of Methoxylation/Esterification (DE). There are three classifications of pectin: HM (High Methoxyl) LMC (Low Methoxyl Conventional) LMA (Low Methoxyl Amidated) These pectins vary in their reactivity with calcium and what is required to form a gel. HM pectins require a certain amount of soluble solids and a low pH for gelation. LMC and LMA are less dependent on pH and soluble solids, but do require the presence of calcium or other divalent ions for gelation. LMA pectins provide processing tolerance and a controllable gel performance, while LMC pectins provide a softer, more shear tolerant system.
