What was first known as the El Segundo State Theater, a charming 188-seat

On a recent visit to the 188-seat Music Hall, a group of third-graders watched a silent movie as part of a local field trip. Their appreciative laughter and clapping could be heard in the small foyer of the theater. This field trip is offered annually to kids from all the nearby El Segundo schools, and they get to see a unique theater while experiencing a silent movie and listening to the historic organ. They love the silent movie, sing-a-long, and having the organ played for them, says Field, who took organ lessons as a child and loves keeping the treasured organ in the local community. Bill Coffman passed away in December of 2001. Bill Field proudly continues the Music Halls grand tradition of screening movies and showing off the beautiful organ of the theater. The Music Hall is located at 140 Richmond Street in El Segundo, and is open Friday through Sunday for screenings. Group tours and theater rentals for fundraising events are available. Upcoming entertainment includes the Adventures of Sherlock Holmes, the Sedalia Ragtime Orchestra, and an All Star Comedy Festival with an audience sing-a-long.

For 45 years, Field has been playing this organ at his theater. He tells the story of how his partner, Bill Coffman, had first seen an ad in the Daily Breeze about a theater for rent, and after seeing the space and deeming it as perfect for their needs, they brought the organ in and set about refurbishing the building. The theater started running silent movies, but eventually the format was changed to include sound movies and musicals. The first sound [movie], we had a line clear down the corner waiting to get in, says Field.

Entrepreneurship came early to Lido di Manhattan owner Lisa Hemmat. As a high school student, she started an under-21 nightclub, selling tickets to her classmates. During college, shed fly home to her native Seattle for the summers, where shed bake homemade pies with an assistant and sell 100 a day at the fabled Pike Place Market. So it was only natural that, in her 20s, shed become one of the South Bays youngest restaurant owners. Hemmat recently chatted with South Bay Digs about food, wine and the evolution of the South Bay foodie.

South Bay Digs: You bought the restaurant in 2004 and its gone through some changes since then. Whats your formula for success? Lisa Hemmat: We stand out because were one of the few independent restaurants on Rosecrans, surrounded by corporate giants. People who come here are looking for a small, family-run feel. I dont have a lot of staff turnover, so the servers remember faces; they remember what people like to order. I also think the quality of the food sets us apart. We make everything from scratch and I try to update the menu a few times a year and offer interesting daily specials. We also have a really good selection of wines. I want to give customers a reason to keep coming back. We want this to be the place where you can come in, relax, have some wine and get away from it all. SBD: What changes have you seen in the typical South Bay restaurant customer over the years? LH: I definitely think diners are more aware of what they are eating, especially in L.A. and South Bay. People want to be on the healthier side, and there are certain dietary needs we have to accommodate. We offer gluten-free and vegetarian items, because if you cant accommodate people with dietary needs, theyll find another place to go. My chef is good at fulfilling special requests. Also, people want to know where their food comes from, so weve switched gears in the last year and a half and gone to more organic produce and wild-caught seafood. Before, Id have menu items that werent in season, but now I wont offer them. SBD: How did you get interested in food and wine? LH: When I took over the restaurant, I knew nothing about wine. I learned about it by going to different tasting events and wineries. I started taking it seriously about five years ago when I changed the focus of Lido to give it more of a wine bar theme, and I became a Level I sommelier. Theres a huge passion for wine in the South Bay, which is why I created Thursday wine tasting nights. The set-up is similar to walking into winery. Well feature a winery from one region, offer five different wines and a sampling of different appetizers. Its fun to serve less common wines by the glass to help educate customers and get them to try something they wouldnt normally order. SBD: Sounds like a great way to learn about wine. LH: Its fun to experience wine with food, so well

host winemaker dinners four times a year. Ill bring in the owner and the winemaker. Typically well do pairings with five different wines. It takes time and effort, but its rewarding and fun. SBD: Whats your philosophy on food and wine pairing? LH: I think people should do what theyre comfortable with, however you should keep in mind that wine can change the dynamics of a certain food. The right pairing brings out the acidity and flavors of the wine. Personally, I like to drink wine that doesnt need food. Sometimes a nice cheese plate goes with a variety of wines. I do think pairing guidelines are important; you dont want a big Cab with seafood. Pinot Noir is usually a safe bet.

On the Menu
One of Lido di Manhattans signature dishes is the Vodka Penne Pasta, which you can serve as a first course for six or as a main dish for four.

ingredients:
1 ounce olive oil

SBD: Are there any secrets or tricks of the trade youd like to share? LH: I love to go to the farmers market. My mom was a great chef and loved to cook, so we were spoiled with family meals! I do like cooking with wine. I mean, drinking it while Im cooking [laughs]. With my schedule I dont have that much time to cook. If I shop for a lot of ingredients, they end up going bad unless Im having a dinner party. SBD: What are the three most common mistakes home cooks make? LH: People make the mistake of not tasting as they are preparing, which results in textures and flavors getting out of balance and not tasting quite right. Recipes dont always call for the right amount of seasoning, and cooking times are generally estimates. Results can vary depending on your ingredients, your stove, the altitude and a million other factors. Your palate is the real judge. Also, dried herbs have much more potent flavors than fresh herbs, so you have to be careful when subbing out fresh ingredients. It goes back to tasting and adjusting your recipe as you go so that you can be aware of the changes in flavor as you add ingredients. Last but not least, know your cooking equipment. Dont overfill your pan, and know the quirks of your oven and stove. Sometimes one side is hotter than the other, and restaurant equipment and what you see on TV is much different from home cooking equipment. You can adjust to the right temperatures, but practice makes perfect.

1 teaspoon chopped shallots 1 teaspoon chopped garlic 1 pinch crushed red pepper 2 ounces chopped prosciutto 1 ounce vodka 1 cups prepared marinara sauce cup heavy cream 1 tablespoon chopped fresh basil Salt and pepper to taste 1 tablespoon chopped fresh parsley (garnish) 4 cups cooked penne pasta Grated Parmesan cheese (optional)

Method:
Heat a large saute pan over medium heat, then add olive oil, shallots, garlic, crushed red pepper and prosciutto. Sautee all ingredients until the shallots and garlic are lightly browned.

Add the vodka and stir, then add the marinara sauce and heavy cream and mix together. Reduce the sauce 4-5 minutes, then add the basil and salt and pepper to taste.

Toss with cooked penne pasta and parsley, and add Parmesan cheese if desired.

Born in 1870, Frederick Law Olmsted Jr. was the son of the Central Park architect Frederick Law Olmsted. He took over the firm together with his stepbrother, John Charles Olmsted, when his father died in 1895, renaming it Olmsted Brothers. Frederick had two substantial impacts on the planning of the South Bay. The original developer of the City of Torrance, Jared Sydney Torrance, engaged him to create a master plan of the city in 1911. Olmsteds overall Torrance plan was innovative for its time. It divided the original town into three districts: the business district at the citys core, which we know now as Old Torrance, the industrial district to the north and east of the city core, and

the residential district to the west. Perhaps Fredericks most influential impact was in his firms ground breaking landscape design for the City of Palos Verdes Estates. They laid out Palos Verdes Estates roadways and prepared the landscape design for Malaga Cove Library, Malaga Cove School, and the La Venta Inn. Over 10,000 trees and shrubs were planted during the early days of development. To promote landscaping by the new homeowners, a large nursery was created in Lunada Bay to sell plants at cost. Mr. Olmsted also decided to make the Peninsula his permanent home and became the first person in Palos Verdes to build directly upon the edge of the bluffs on Rosita Place. The most impressive part of his designs for Palos Verdes Estates was his design for the entrance to Palos Verdes Estates from Redondo Beach on Palos Verdes Drive. The sweeping flow of the drive into the city seems to bring the visitor into another world of lush landscaping and eucalyptus trees The resulting Malaga Cove Plaza and surrounding area remains one of the most beautiful urban locations in the South Bay to this day. In 2000, a small parcel of parkland was created in Olmsteds honor in the Plaza and named Olmsted Place. The overall master plan for Palos Verdes Estates was developed by Charles Henry Cheney, an architect and city planner. This was one of the earliest examples of a master planned community. More than 120 miles of paved roads were drawn into the plans. Over 4,000 acres were reserved for parks and playgrounds and recreational areas. Even 1,000 acres were set aside for a university campus that was included in a proposal for the new UCLA campus. Mr. Cheney also developed the deed restrictions which still govern architectural standards in the city through its Art Jury. Mr. Cheney was also a consultant to the city planning commissions for the cities of Fresno, Berkeley, Palos Alto,

Velzy-Stevens Pier-to-Pier Paddleboard Championship, MB Pier, North side Presented by the South Bay Boardriders Club. Paddlers must provide their own paddleboards. However, the L.A. County Lifeguards will provide a limited supply of soft paddleboards on the morning of the race at the pier. These are available on a first come first serve basis. Entries must be received by August 3 or a late charge will be assessed.

Like many mothers, designer Lorenza Bozzoli would consistently come home from work and find her son in front of the television. However, in an interesting twist, hed be there sitting on the seat of an old chair with its legs removed. After seeing that same image countless times, Bozzoli had a thought. What if she created a floor rocker that was lightweight, portable and could be used anywhere in the home? Enter DEDONs Fedro chair, which the company began selling in November 2012. Named after her son, Bozzoli created a design that provides optimum comfort and little stress on the body. It balances on two narrow skids and allows anyone to rock back and forth, using their legs and feet to control the movement. A handle on the back of the chair makes it especially easy to carry and an attached cushion for the head makes it quite comfortable. It was very important to find just the right ergonomics for the chair, Bozzoli said. The great thing about Fedro is that it fits in poolside, on the beach, in the grass, on a city patio and anywhere indoors. Her background can especially be seen in the three vibrant color options for the Fedro chair. Those choices include: flamingo, colibri and quetzal, which are all based on tropical birds from Latin America. Because of its bright colors and the ability to move the chair indoors or outdoors, it really is the perfect summer chair, Bozzoli said. The chairs fiber is made in DEDONs headquarters in Germany, before the piece, which costs $715, is hand-woven with high-density polyethylene in the Philippines. Getting interest in the chair from across the globe, Bozzoli believes it has universal appeal and is ideal for smaller spaces. Designing a product is about designing a state of well-being, Bozzoli said. The secret lies in the love with which these objects are created.
