Belgium Comes to Michigan


From the very beginning, Ashleys has been about enriching peoples lives through great beer. Were proud to have been an early part of the ongoing success story that is Michigan craft beer. Well always support the passionate people of our states now more than 100 independent breweries producing fresh, flavorful brews many of which are recognized as among the best in the country. But we also believe great beer knows no borders. When we traveled to Belgium to survey one of the Featured Brewery for the 2013 Festival: worlds most intriguing and respected beer cultures, we The Musketeers, Brewers of Troubradour Beers were awed by what we discovered. Also like Michigans craft brewers, Belgiums traditional family-owned breweries face an uphill battle against the international mass-production conglomerates which are squeezing them through massive ad budgets rather than better beer. The smaller breweries know they need to reach out to markets outside of Belgium if they are to survive. So the annual Ashleys Belgian Beer Festival was born to experience the world of Belgian beer. Weve brought to Michigan a wide range of amazing, boutique Belgian beers. Many are lesser known or were previously unavailable in our state. What youre not going to see at this Festival are Leffe, Hoegaarden, Palm, Stella, etc. as we want to focus (as we always do) on the craft brewers. This Festival is also pure Belgian beers. Although Michigan and American craft brewers are brewing Belgianstyle beers we are going straight to the source. There are several special events throughout the Festival. We have multiple brewers coming over from Belgium for the festival, if you speak Flemish, this is your chance to practice up. Last year we expanded the Festival to 11 days Beer Meets Food to include more dinners, pairings, seminars, special guests In Belgium, beer is incorporated into all aspects of Belgian and events as well as to give you more time to savor your cuisine. Beer may be included in the preparation of food or simply as a beverage to enhance the flavors of the food. The favorites. In order to provide a broader your Valentine.
Belgian beer experience, we have prepared mussels with four different broths, each featuring a different style of Belgian beer. Since the Belgians claim to have invented the chipped fried potatoes that we know commonly as fries, our mussels are served with a side of fries (frites) accompanied with a tomato basil mayo for dipping. A portion of freshly baked baguette is also provided to savor the extra broth.

We hope you enjoy your time exploring the culture, cuisine, and, of course, the beers of Belgium at this Festival. It already ranks among the largest of its kind anywhere. Mussels
Mussels or moules are the national seafood dish of Belgium. Traditionally they are served in a large steaming pot of savory broth with a side of Belgian frites and homemade mayonnaise. The trick to eating mussels like the Belgians is to use a discarded shell as a spoon to scoop out the plump little delicacies and of course the flavorful juices. All of our mussels are steamed in beer. We recommend a glass of the beer they are cooked with.

Brouwerij The Musketeers


This brewery was created in 2000 by 4 brew-engineers, after being graduated from KaHo St. Lieven in Gent, the best known brewing school of Flanders. Their names: Kristof De Roo, Rikkert Maertens, Stefaan Soetemans and Sven Suys. Just out of school, it was soon pretty clear to them that brew-master jobs are not easy to get in the Belgian beer world. Family traditions and brewing secrets are kept closely guarded within the brewing family. Like the real French Musketeers of the 18th century, the 4 friends bundled their enthusiasm and efforts, and created the Musketeers brewing company. After investing in some brewing equipment, many experiments in the garage, and several trials and errors the results were a great beer that all 4 brew-masters loved and believed in: a semi-strong BLOND. The first phase of the BIG dream had been accomplished. The challenge now was to produce the beer commercially and get people to drink it in restaurants and bars. First new problem: what name to give their new creation? After many brainstorming sessions, while drinking their new godly beer, the 4 friends settled on TROUBADOUR. The troubadours of the medieval times were young men wandering from village to village, from court to city, bringing with them joy, music, traditions, poetry, history and legends of other places. The 4 brewers believe the Troubadour beer brings the same joy and entertainment to todays drinkers. Proud of their delicious creation, the 4 brewers, or should we say 4 Musketeers, want to extend the rich brewing traditions of Belgium not only to the citizens of Belgium, but to the rest of the world as well, just like the Troubadours of old. In 2003, the urge to experiment again and to create another great beer, together with a clear demand by the market, lead the 4 friends back into an experimental, creative bliss. This resulted in a stronger dark beer: the TROUBADOUR OBSCURA, a mild stout. Indeed, Belgium also has a tradition of brewing very black beers. They are sweeter, though, than the Irish or English stouts-- especially the Belgian stouts with low alcohol content. The OBSCURA, though, is a high alcohol stout (8.5 %), not real sweet but rich, round mouth feel and very complex.Stouts were popular in Belgium during the 19th century, up to the second World War, with men doing physical labor, for example in the sea-ports, the coal-mines, and other heavy industries. These stouts had great restoring power. A typical practice was to break a raw egg in your glass of stout, and drink it. Well, you are ready to lift a 100 pound bag, and hundreds more, after drinking this concoction. People recovering from an operation were served the same drink in hospitals.

You may not think that beer and chocolate go together. But Belgian beers do pair well not only with savory foods but also sweets. Their rich malt flavors and very mild hop bitterness compliment sweet desserts and chocolates. For the festival we contracted with Schakolad Chocolate Factory in Ann Arbor to create some exclusive chocolates not only to pair with beer but made with beer. They made a rich ganache center for their truffles with bittersweet chocolate, heavy cream and four different beers. The ganache centers were then covered with either Milk or Dark chocolate. Schakolad was blown away and said they were some of the best chocolates they had ever tasted. A Brief History of Belgian Beer


Beer has been brewed in Belgium since the Middle Ages. Although there is no written proof, it is believed that beer was brewed at monasteries during this time. Today, approximately 125 breweries are in operation in the country of Belgium and they produce roughly 800 standard beers. When including one-off beers, such as those brewed for specific holidays and celebrations, the number increases to nearly 8700. Belgian beers are unique in that they do not adhere to the idea that water, barley, yeast and hops should be the only ingredients used in the brewing process. In some instances, they also disregard the conventional practice of pitching yeast and allow the wild yeast of Belgium to ferment their beer; the result of this spontaneous fermentation is the wild ale. In Belgium, brewing is a family affair. Generations of brewers simultaneously pioneer experimental brewing processes while upholding the traditional brewing practices of Belgian beer. Some of the most famous beers from Belgian are those of the Trappist monasteries. There are only seven Trappist monasteries in the world, six of which reside in Belgium, the other of which is in the Netherlands. In order to be deemed a Trappist beer, the brewery must be in a monastery, the monks must be involved in the production and policies, and the profits from the sale of the beer may only be used to support the monastery or social programs. The breweries that currently maintain a Trappist certification are Achel, Chimay, Orval, Rochefort, Westmalle, Westvleteren, and La Trappe (previously Koninshoeven, Netherlands). Westvleteren is the only beer that is unavailable for sale in the United States. Although the monasteries continue to brew their beer following age old traditions, other brewers are engaging in more experimental brews. Due to a growing demand for more than yellow fizzy stuff, brewers look to one another for inspiration. There is evidence of American influence on Belgian beer in those such as Troubadour Magma and Urthel Hop-It, in which a much more liberal use of hops is apparent in the aroma and flavor. These beers, in turn, have led to an increase in the production of Belgian IPAs in the United States. At the same time, some of the most raved about American Breweries, such as Jolly Pumpkin, The Lost Abbey, and Russian River are brewing ales using the most traditional Belgian-brewing practices. This menu features a wide variety of beers that originate in Belgium. With over a hundred breweries and thousands of beers, it is nearly impossible to provide a complete education on Belgian beer in one sitting. In order to better appreciate the beer, it is important to have an understanding of what each beer is meant to accomplish. Please refer to this menu, in combination with Ashleys Beverage Guide to direct you through a tour of Belgian beers.

The Glass and The Pour


Before tasting a Belgian beer, it is important to understand what you are seeing and smelling. Often times, the novice beer drinker is put off by the Belgian beer glass. Do not be afraid of the glass; it serves a greater purpose than the ignorant heckling of your friends. As soon as the beer enters the glass, the color, aroma and taste are transformed. Unseen distinctions come to light, colors glisten, and the overall experience of the beer becomes complete. If you were to order a beer in Belgium, when you receive your beer, it would be accompanied by a glass specifically engineered for that beer. In fact, some breweries have been known to design beer to fit the glass, rather than the glass to fit the beer. Unfortunately, Michigan law prohibits the use of glassware with logos when serving beer onpremise, however, Ashleys does its best to provide a glass similar in shape and size to enhance the Belgian beer experience. The shape of the glassware also affects the development and retention of the head of the beer, which is important because the foam acts as a net for several of the volatiles in beer. Such aspects include compounds that create aroma, yeast fermentation by-products, spices, fruity esters and additional ingredients. Different levels of head and retention are desired with different styles of beer. So, rather than regard the Belgian beer glass as an affront to ones masculinity, resist the temptation to request a normal glass, and recognize that the glass is designed to enhance the flavor of the beer. The next time your buddies poke fun at you, use the opportunity to educate them, and know that the glass provides you the ultimate experience of that particular beer.

For Ashleys Belgian Beer Festival we have obtained special permission to use beer branded glassware (normally not legal in Michigan). This is only valid February 7 - 17. Ashleys went through a lot of trouble to get this exception, please respect your fellow guests and do not take any glassware home (you could be charged with a liquor violation and fined). The Styles (Belgian Beer 101)


Although some beers may seem to fall into several categories of style, understanding the expectations set for a particular style makes it less of a surprise to the palate. We wish to provide you with a clear idea of some of the most common Belgian beer styles. The following specifications are derived from the Beer Judge Certification Program (BJCP).

Flanders Red Ale

Belgian Blonde Ale

Appears light to deep gold in color. The flavor is initially smooth with light to moderate Pils malt sweetness, but finishes medium-dry to dry with some smooth alcohol becoming evident in the aftertaste. Medium hop and alcohol bitterness to balance. May be spicy or earthy and has a very soft yeast character. History: A relatively recent development to further appeal to European Pils drinkers. Appears dark amber to copper in color, with an attractive reddish depth of color. The aroma of the beer gives way to the flavor: rich, complex medium to medium-full malty sweetness on the palate, yet finishes moderately dry. Complex malt, ester, alcohol and phenol interplay (flavors of raisin are common, as well as dried fruit flavors, and potentially clove-like spiciness). Balance is toward the malt. History: Originated in monasteries in the Middle Ages and revived in the mid1800s. Appears deep yellow to deep gold in color. The tripel is a union of spicy, fruity and alcohol flavors that are supported by a soft malt character. Low to moderate phenols are peppery in character. Scent is citrusy, often orange or lemon. Alcohols are soft, spicy, and often a bit sweet and low in intensity. Substantial carbonation and bitterness lends a dry finish with a moderately bitter aftertaste. No diacetyl. History: Originally popularized by the Trappist monastery in Westmalle. Appears yellow to medium gold in color. Flavor is a combination of fruity, spicy alcohol flavors supported by soft malt character. Scent is reminiscent of pears, oranges or apples. A low to moderate spicy hop character is often present. Bitterness is typically medium to high from a combination of hop bitterness and yeast-produced phenolics. Substantial carbonation and bitterness lends to the dry finish with low bitter aftertaste. No diacytel. History: Originally developed by the Moortgat brewery after World War II as a response to the growing popularity of Pilsner beers. Appears deep amber to deep coppery-brown in color (dark implies that it is darker than golden). The aroma is indicative of the flavor. Moderately malty and sweet with a variable finish, depending on the interpretation of the style: it may finish dry or sweet, few being slightly bitter. The complex and varried flavors should blend harmoniously. History: Most versions are unique in character reflecting characteristics of individual breweries. Grand Cru is a term that is borrowed from vintners (the wine world) and refers to a special offering, release and/ or vintage dated selection. The term was coined by Pierre Celis when he labeled his annual release the Celis Grand Cru and in Belgium, it was a stronger version (with additional spicing) of his regular witbier that was only brewed for special celebrations.

Expect this beer to be a deep red, burgundy to reddish brown color with average to good head retention. It maintains an intense fruitiness, commonly including plum orange, black cherry or red currant flavors. A mild vanilla and/or chocolate character is often present. Spicy phenols can be present in low amounts for complexity. Sour, acidic character ranged from complementary to intense. An acidic, tannic bitterness is often present in low to moderate amounts and adds a red wine-like character. Diacetyl is perceived only in very minor quantities, if at all, as a complementary flavor. History: The indigenous beer of West Flanders, typified by the products of the Rodenbach brewery, but reflective of earlier brewing traditions. It is aged for up to two years, often in large oaken barrels which contain the resident bacteria necessary to sour the beer. Appears as dark reddish-brown to brown in color. It tends to be malty with fruity complexity and some caramelization character. Fruitiness commonly includes dark fruits such as raisins, plums, figs, dates, and black cherries. A malt character of caramel, toffee, orange or chocolate is also common. Spicy phenols can be present in low amounts for complexity. A slight sourness often becomes more pronounced in well-aged examples, along with some sherry-like character, producing a sweet-and-sour profile. The sourness should not have a notable acetic/vinegary character. History: An old ale tradition, indigenous to East Flanders, typified by the products of the Liefman Brewery. It was historically brewed as a provision beer that would develop some sourness as it aged. It is not aged in oak. It will appear pale yellow to deep golden in color, but age tends to darken the beer. Young examples are often noticeably sour and/or lactic, but aging can bring this character more in balance with the malt, wheat and barnyard characteristics. Fruity flavors are simper in young lambics and more complex in older. Served uncarbonated. History: Spontaneously fermented sour ale from the area in and around Brussels stem from a farmhouse brewing tradition that is several centuries old. It is typically not found in bottle form, but may be found on draught in and around Brussels from traditional brewers such as Cantillon, Drie Fonteinen, and Giardin. Appears golden in color. A moderately sour/acidic character is classically in balance with the malt, wheat and barnyard characteristics. A low, complementary sweetness may be present But higher levels are uncharacteristic. While some may be more dominantly sour, balance is the key and denotes a better gueuze. History: See Straight Lambic. Geuze is traditionally produced by blending one, two, and three-year old lambic. Young lambic contains fermentable sugars while old lambic has the characteristic wild taste of the Senne River Valley. Gueuze is served with carbonation. (Can also be spelled Geuze) Appearance is generally determined by the variety of fruit, although a lighter colored fruit may have little influence on the color. The flavor of the fruit added to the beer should be evident. A sour and acidic character are often present. As it ages, the flavor of the fruit will fade and the flavor of the lambic will dominate. Not to be confused with the more recent development of untraditional fruit lambic in which the fruit is added post-fermentation as opposed to the traditional addition of fruit half-way through aging the lambic. The addition of fruit after fermentation gives way to a sweeter drink because the yeast does not ferment the sugars from the fruit. The most common fruit flavors used include framboise (raspberries), kriek (cherries), and druivenlambik (muscat grapes). Overly sweet lambics (Lindemans), may be categorized as Belgian Specialty.

BBBourgondier Barleywine
A dark bottle-conditioned ale. Brewed with malt, hops, candi sugar, valerian and lemon balm, yeast and water. Lemon balm is an extract that gives a citrusy note to the beer. As the BBBourgondier is very malty with a high sugar content, valerian is used as an experimental bittering agent in conjunction with hops to further balance the beer. Valerian is a popular herb used as a sedative to promote sleep and as a calmative agent. 12% ABV. 11.2 oz 10.00

Achel 8 Blond Trappist

La Biere de Belil* Bire de Garde


One of Belgiums most historic castles is a few miles from Dupont. Belil once housed a brewery on site and made a beer called Saison Roland. Belil has a rich white meringue head and a beautiful hazy amber red color. Achel Bruin Trappist

Boon Kriek Fruit


KRIEK BOON is obtained via fruit maceration. This method is known from the wine culture and demands that the fruit is added whole to ferment together with the beer. A fresh, soursweet, nicely foaming red colored beer with an authentic taste of cherries. 375 ml 12.00

Cantillon Foufoune Sour


To create this astounding and unique fruit beer, the Cantillon brewers buy apricots from a vineyard in Bordeaux and pour them into casks of aged lambic. Over three to four months, the fruit dissolves and ferments, and is infused into the beer. The result is a wonderful peachy-apricot aroma and taste, combined with the tart, earthy flavor of honest, wild-yeast fermented lambic beer. 5% ABV. 750ml 55.00

Boon Framboise Fruit


Made from old and young Lembeeks lambic beer matured in oak vats with at least 250 grams of fresh raspberries are added per each liter of beer. De Dolle Stille Nacht* Xmas


A prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27 degrees Pl). It has been boiling for many hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops gives an extra bitterness to balance the extreme sweetness due to the density. A blonde beer brewed according to the ancient Saison tradition of the province of Hainaut. Troubadour Magma* Hoppy


Three Versions: Simcoe Hopped Cascade Hopped Sorachi Ace
A formidable hop presence inspired by the American IPA with the fruity characteristics of a Belgian tripel. Its distinct aroma can be attributed to the hop, but the fruitiness comes from the yeast during fermentation. 9% ABV. 25cl 7.75 / 12cl 4.25

Vicaris Triple with Gueuze* Sour


A richly sweet, almost honeyed Tripel made dry and crisp with a complex tannic character by perfectly balanced blending with Girardin Gueuze. 750ml 35.00 25ml 8.75/ 12ml 4.50

Westmalle Dubbel Trappist


A reddish brown trappist ale, malty and fruity, featuring a three week secondary fermentation. Bottle conditioning provides a fluffy, pillowy head and a crisp mouthfeel. Very low levels of hop create a malty masterpiece on the tongue. Westmalle Monastery. 7% ABV. 11.2oz 9.50

Troubadour Obscura* Dark


Dark in color, as expected from a stout. The flavors are deep, rich and pronounced: malty, clearly roasted with hints of coffee and chocolate. A complex aftertaste with hints of licorice and ends with a slight bitterness. Brewery The Muskateers. 8.5% ABV. 25cl 7.75/ 12cl 4.25

Westmalle Tripel Trappist


Pours a gorgeous golden color with abundant carbonation. Yeasty, light banana and close scents. The taste is an amazing cream and biscuit flavor. Has a succinct hop tinge with notes of earth and herbs. Described by many as the perfect beer. . Westmalle Monastery. 9.5% ABV. 11.2oz 10.00

Troubadour Westkust* Dark


Dark, almost black beer with 9.2% alc. by vol. with a hoppy aroma, roasted malt, coffee and light notes of chocolate and vanilla. The taste is a balance between the taste of roasted malt and coffee followed by a strong but pleasant bitterness that slowly gets the upper hand and ensures a long hoppy finish. 9.2%ABV 25cl 7.75/ 12cl 4.25

Witkap Simulo Single


Witkap Singel is the lightest of the Trappist style beers and is typically drunk at the midday meal. A blond beer that sparkles like champagne, it has an extremely estery nose with typical abbey notes of banana and berry. Unusually, this is followed by a light body and lemony finish. 6% ABV. 750ml 16.00

Troubadour Imperial Stout* Dark (Stout)


Almost black body and a large tan and lasting head. Bitter with a strong roasted coffee and malty flavor. The aroma is dry, roasted, licorice and smoky. The beers strong bitter chocolate impression ends in a nice bitter finish. 9.2% ABV. 25cl 8.00 / 12cl 4.00

Wittekerke* Wit
Charming character, smooth taste and a unique, delicious aroma. Light in alcohol with crisp and refreshing flavor. Toward the end of the beer, more flowery and spring flavors will be apparent. Bavik Brewery. 5% ABV. 33cl 5.50 / 12cl 2.50

Val Dieu Blond Blond


A blond ale from the Cistercian Abbey du Val-Dieu, crisp and clean, with an interplay of creamy, nutty maltiness. Hoppy bitterness, and lemony finish. 6% ABV 11.2oz 8.50

Wittekerke Framboise* Wit


Wittekerke Wit as its base and the brewer adds fresh raspberries and all natural sweeteners to the liquid to produce this refreshing brew. The beer has a nice pink tint and is perfect for a hot summer day. 4.3% ABV 33cl 6.75 / 12cl 3.00

Val Dieu Brown Dubbel


Garnet color, lively aromas and flavors of bitter chocolate, coffee, nougat, passion fruit and raisins. 8% ABV 11.2 oz 8.50

With a color of golden plums, very delicate aroma, nutty, clean maltiness, and a drying finish reminiscent of garden mint. 9% ABV 11.2oz 8.50

Wittekerke Winter White* Wit

Brasserie de LAbbaye du Val-Dieu


Aubel, Liege, Wallonia, Belgium Est. 1216 (Abbey), est. 1997 (current brewery) The only non-Trappist brewing abbey in Belgium is a Cistercian Abbaye du Val-Dieu (Valley of God) which dates from 1216. This monastery is near the village of Aubel, in the region known for Herve cheese, between the Belgian city of Liege, the Dutch city of Maastricht and the German city of Aachen. The brewery is located on the abbey ground and offers four main products: Val-Dieu Blond 6% abv, Val-Dieu Brown 8% abv, Val-Dieu Triple 9% abv, and Val-Dieu Grand Cru 10.5% abv ale. Based on the original recipes perfected centuries ago by the abbey monks.
