Yolk Prawns By Amy Beh Ingredients 500g fresh water prawns cup cornflour tsp pepper 2 salted egg yolks 3 tbsp dried prawns, soaked and chopped 2 stalks curry leaves 4 bird?s eye chillies, chopped 1 tsp chopped garlic 2 tbsp oil 60g butter Seasoning (combined) 1-1 tbsp sugar or to taste tsp salt tsp chicken stock granules Method Rinse prawns and trim the feelers; dab dry completely. Combine cornflour and pepper and toss the prawns in this mixture. Steam salted egg yolks for 3-4 minutes and mash while still hot. Set aside. Heat enough oil in a wok and deep-fry the prawns for 1 minute or until shell s are crisp. Heat 2 tbsp oil in a clean wok, fry dried prawns, curry leaves, bird?s eye c hillies and garlic until aromatic. Add butter; once butter melts, add salted egg yolks. Keep stirring until mixture turns foamy. Return prawns to the wok and add combined seasoning. Toss and fry briskly un til prawns are well combined. Dish out and serve immediately. -------------------------------------------------------------------------------------------Salted Duck Egg Yolk Prawns Recipe Ingredients: 400 grams of Tiger Prawns/Large Prawns (shelled apart from the tails and deveine d) 3 Salted Duck Egg Yolks (pre-cooked & mashed with the back of a fork) you can ge t them from most local Asian groceries and they come pre-cooked in a package. Or you can follow my recipe here to make your own batch :) 2 Tablespoons of Peanut Oil 1 Tablespoon of Butter 1/2 teaspoon of Sugar 2-3 cloves of Garlic (finely chopped) 1 Red Chilli (finely chopped) Salt & Ground Black Pepper to taste Spring Onions, Cherry Tomatoes, sliced Chillies and Coriander (for garnish) saltedDuckEggPrawns_cook

Procedure: In a hot wok, heat 2 tablespoons of peanut oil. Stir fry the garlic and diced ch illies until fragrant. Add the butter and toss in the salted duck egg yolks and mix it around with a spatula until it evenly breaks up and starts to froth. Add in sugar. Toss in the prawns and fry until cooked ensuring that they are thoroughly coated with the egg mixture. Season with salt and ground black pepper to taste. Plate up and garnish with sliced chillies, coriander, cherry tomatoes and sliced spring onions. ------------------------------------------------------------------------------Fried Prawns With Salted Egg Yolk Adapted from Flavours magazine (May-June 2011) Serves 2-3 10 large prawns, deveined and skewered with bamboo toothpicks to straighten the prawns Marinade 1 egg white 1 tablespoon cornstarch 1 teaspoon concentrated chicken stock (I used anchovies stock) 1 teaspoon sugar 1/2 teaspoon salt 4 tablespoons vegetable oil 60g butter 6 salted egg yolks, steamed for 7 minutes and roughly mashed while hot 1 egg, beaten Method: 1. Mix prawns with marinade ingredients and refrigerate for 1 hour. 2. Heat oil in a wok over medium heat and fry the prawns for 2 minutes. 3. Set aside and remove toothpicks. 4. Melt butter in the wok over low heat and mix in the mashed salted egg yolks u ntil it forms a smooth paste. 5. Add the beaten egg and stir continuously until the egg mixture turns lumpy. 6. Add the cooked prawns and toss to coat. Serve immediately.
