St. Paul’s Lutheran Church
in Ellicottville will be holding
a Benefit Spaghetti Dinner on
Saturday, Sept. 19. Spaghetti
Dinners, from November to
March, have become a tradition
at St. Paul’s for many years.
This early start to the season
is to raise money to benefit a
local family that has suffered
a tragic loss and to give aid
to local flood victims. All the
proceeds from the dinner will
go to help them put their lives
back together. Come and enjoy
a meal with us and help us
help these deserving families.
Have all-you-can-eat of the
most delicious spaghetti and
meatballs in town, with chef
salad, Italian bread, pie and
beverage all for only $7.50 for
adults and $4.50 for children.
You may eat in or take-out.
Opportunities to help the
people of our area are always

St. Paul’s is collecting good
used men’s boots and shoes
for the City Mission in Buffalo
to give to homeless men. In
May, after St. Paul’s Trash and
Treasure sale, 20 bags of used
clothing were taken to the City
Mission. At that time, it was
learned that men’s shoes and
boots were in short supply. It
seems men just can’t part with
their shoes and boots until they
become “holy.” If you would
like to donate your good used
men’s shoes and boots that
have been sitting in the back of
your closet for way too long,
you may put them in the box
in the coatroom of the church,
or you may leave them under
the canopy to the new entrance
to the church. Take a look
around St. Paul’s new addition
while you’re there and come
join us for worship. One load
of shoes and boots has already
been taken to the Mission and
we hope to take several more.
We know they are out there.
Let’s get them where they will
help someone.
St. Paul’s Prayer Shawl
Ministry is making Prayer
Shawls available to those
who are ill or grieving. The
important element of a Prayer
Shawl is the prayers knit into
it as it is being made. Supplies
are running low. There is a
great need for knitters and
crocheters to keep this mission
going. Experienced or new
knitters may use any pattern
they like. Prayer Shawls are
available to members of the
community as well as the
church. Call Mary Fox at

in joining the Prayer Shawl
Ministry or would like one to
give to someone you know.
Sunday School begins Sept.

Gooseneck Hill Waterfowl To Benefit The Lions Diagnostic Center

Sanctuary, a 501c3 not-for-
profit organization and home of
the two largest covered aviaries
in the world, is rebuilding after
it was destroyed by floods on
Aug. 9-10. A brook became a
raging river 50 feet wide by 12
feet deep and destroyed about
80 feet of the dyke on one of
three ponds located in the lower
aviary. All three ponds were
filled with five feet of stone
and muck. About 50 birds were
killed by the undertow and rocks
in the stream.
Gooseneck Hill is really
fortunate to have all the labor
and equipment for repairing
the aviary supplied by Jim
Smolinski from Operating
Engineers Local 17 Training
Center and his apprentices.
They have been working with
an excavator and skid-steer for
three weeks and are doing a
tremendous job. The 210 tons
of stone are being supplied at
50% off by Gernatt Stone &
Gravel and County Line Stone.
The fencing is being repaired by
Creative Fence. There are still a
lot of bills that have to be paid.

Three Major Additions Highlight This Weekend’s Event in Olean

OLEAN - The City of Olean
and the Greater Olean Area
Chamber of Commerce have
scheduled a new event: the
Greater Olean Area Outdoor &
Rec Sports Show to be held this
weekend, Sept. 12-13, 2009.
The show will encompass the
William O. Smith Recreation
Center, War Veterans Park, and
Bradner Stadium.
As more individuals and
families travel shorter distances
from home and take shorter
vacations or mini-vacations,
the Rec/Sports Show will
provide an opportunity for the
public to learn more about a
variety of outdoor recreational
opportunities close to home.
Exhibits will include but are
not limited to: camping, paddle
sports, hiking, cycling, all-
terrain vehicles, hunting, snow
and waterskiing, snowmobiling,
bird watching, fishing, health
and fitness, scuba, parks,
destinations, sporting equipment
and related equipment and
accessories.
The show dates and times
are Saturday, Sept. 12 from
10am-8pm, and Sunday, Sept.
13 from 10am-4pm. This new
show will provide attendees
with a wonderful opportunity to
learn about outdoor recreational
choices, attend meaningful
seminars, search for and
purchase recreational equipment
and accessories, as well as plan
experiences the entire family
will enjoy. Cutco Knives (the

fee to drive or participate in the
event. Allegany Skate Park will
feature its park’s Team Riders
in two demonstrations Saturday

feebles while the riders perform
on BMX bikes, inline and
skateboards. Lake Lane Resort,
a private hunting/fishing resort

The end of summer is
always bittersweet; a bounty
of produce at the farmer’s
market with the promise of
a wonderful meal, but the
reminder of fall in the air
and in the produce section.
There are so many fruits and
vegetables to choose from,
and there is a variety of great
recipes to prepare for all of
them, but one of my favorites
is the eggplant.
This vegetable (well, actually
a gigantic berry) is a member
of the nightshade family, like
tomatoes and potatoes. It
comes from a family with
many toxic members, and
its bitterness is a hint at that
relationship. But eggplant is
a very versatile food, and has
been prepared in India and
Eggplant: A Late Summer Treasure
throughout the Mediterranean
region since ancient times.
Salt and a bit of cooking
will help to dispel some of
that bitterness, and in some
recipes, it is recommended to
salt and drain the vegetable
before beginning to cook with
it.
Unfortunately, many recipes
for eggplant call for frying.
This is of course, unhealthy,
especially when dipped in
whole eggs and crumbs
beforehand. But even more
importantly for me, it is
time consuming. I want to
enjoy my meal after a short
preparation time, and I don’t
want to stand over a stove for
a lengthy period, particularly
on these beautiful September
days.
This recipe is much simpler
and a bit healthier. The
eggplant is roasted with a bit of
salt and some olive oil to help
sweeten it before filling it with
a mixture of seasoned crumbs.
Yes, there are still eggs
involved, but only one yolk,
and the oil is reduced greatly,
so the result is a satisfying but
much lighter dish that can be
served as a side dish or on its

It’s been said, home is where
the heart is and the American
dream is never too far out of
reach for anyone who seeks to
dream it. In the Preamble to the
Declaration of Independence, it
is stated that all have the rights
of “life, liberty, and the pursuit
of happiness.” Well, that is
exactly what Natalia Asatiani set
forth to do. In Natalia’s opinion,
“that is the essence of America.”
Natalia, from Georgia, Russia,
embarked upon the long journey
to America back in 1995 in hopes
of a new cultural experience and
life. Just a short time later she
became a United States citizen
when she married the true love
of her life, her husband Jacek.
Georgia is where she is from,
Ellicottville is where she calls
home. A small town nestled
within the beautiful Enchanted
Mountains of Cattaraugus
County, it has been a beacon
of hope for countless visitors,
tourists and cultures alike from
around the world, boasting
astounding landscapes, quaint
shops full of interesting and
nostalgic goods along with ski
slopes that take your breath
away. A gateway into a surreal
experience where many cultures
have been blended together in
the omni present melting pot
of America that we have all
become accustomed to. It was a
dream come true, and thinking
about it still makes her happy.
Natalia, who works for the
U.S. Embassy in Georgia,
Russia, always felt a calling
from deep within, leading her
to a place where if one tries,
dreams really do come true.
Recently, twenty-eight year old
Catherine Bichiashvih, Natalia’s
niece, decided it was time to take
her first trip to America to visit
with her aunt and experience
the American culture. I recently
had the opportunity to sit down
with both of them and discuss
what they thought about the
Untied States and the whole
experience thus far. In both their
words, “America is a country
that possesses a great feeling
of freedom and has beauty all
around. It’s not necessarily
something you can see, but you
must feel.”
She has felt this feeling from
the booming and exciting
streets of New York City where
Catherine visited for the first
beautiful village of Ellicottville.
Catherine, being both a graphic
designer and artist stated that
“these feelings I get from the
big cities to the small towns is
absolutely breathtaking and it
was much more beautiful than
I had expected. The people of
the Untied States are cultured,
open, very friendly and when I
go out, I see the culture within
the people themselves.”
The feeling she has experienced
from her visit is unlike any
other, the same feeling her aunt
has felt since her first day here.
In their words, “America can’t
be found in a book, or movie - it
has to be seen and experienced
in person first hand in order to
truly capture the full experience
and beauty.”
Coming to America, for both
these women has been a dream
come true and they still cannot
believe they are able to witness
it. Because Natalia and Catherine
seek to discover new cultures
and life outside of their own,
they are truly what represents
the real essence of America, and
the pursuit of happiness.
There is the Statue of Liberty.
She stands in the harbor to
remind us of “the poor, huddled
masses” that we as a nation
have welcomed to and protected
within our shores. A great
melting pot where everyone
of different cultures can get
together and enjoy the fruits
of each others’ labors. These
feelings can be found in every
aspect of our lives. When a
person from another country
goes out to eat, they go to one of
the local traditional restaurants.
Well, here in America we
can sample every dish of the
world all in one night without
having to search the globe. This
diversification is what drives the
American people.

oversight in the music world
that is tantamount to sin, but
that mistake is about to be
rectified. Sometime, in the next
few weeks, many of you will be
overcome with an urge to move,
an almost primal need to shake
off the chains that your day-to-
day routines have bound you in.
Many more of you will simply
need to sit and listen. Pull your
cars over and let your eyes
close. Just listen. Ladies and
gentlemen. The Beatles.
That may seem a bit dramatic
to some of you but, to even the
casual music fan, the sin of
omission that is The Beatles

the backbeat? Where was
Paul’s bass? It was all an
anemic mess. It sounded like
the entire band was playing
inside a giant garbage can! In
‘87 that was to be expected.
The CD format was new and,
surely, the problem would be
fixed with future pressings.
Not so with The Beatles. As
all of their contemporaries
released remastered versions
of their catalogs, the Beatles
languished. Tomorrow,
9/9/09, a new day dawns.
Something else happened in
the late eighties that I’d like to
thank the rest of you for. While
all of you were scooping up
shiny plastic junk that sounded
like shiny plastic junk, I was
scooping up your old albums.
Now, with the resurgence of
the vinyl album format, I have
a head start on the rest of you.
Don’t get me wrong, albums,
for a while, had been relegated
to antique stores, flea markets
and hard-to-find specialty
dealers, so I had to buy CDs to
soothe the beast, so to speak.
But I always kept my albums
and, as technology caught up
with the past, I updated my
turntable as often as possible.
I’m now the proud owner
of an mp3 turntable that is
capable of being plugged into
my computer and digitizing
my vinyl collection without
compromising the sound
quality. Sometime soon,
however, I’ll be updating my
Beatles collection to include
the newly remastered CDs.
Here’s why. Until I bought
my new turntable, vinyl always
had one major drawback. You
can’t take it with you. For
years now, at work, in cars, on
the radio, I’ve been forced to
listen to inferior versions of
the music I love. With time
