Foreword

Raymond Blanc
Unlike this foreword where my words will still be the same 12 months from now my philosophy with ingredients is focused on change, keeping them fresh as we work with the gems that Mother Nature throws our way season by season. I know I am on familiar turf here with the food lovers of Bristol and Bath seasonality seems to be in your blood and there is a clear passion in this part of the world for using fresh, local, natural foods. If food is seasonal then it is fresh and more than likely from close to home. It generally has better avour, nutrients, colour and texture whats not to love? It is up to each and every one of us be it consumer or chef to make responsible food choices. We are starting to look at food from the inside now, and understand the impact we have when we impose aesthetic ideals on Mother Nature today, we can all appreciate the beauty of a knobbly imperfect carrot. We have a talented set of chefs here in the West that utilise what is available to them naturally in the locale. It gives me great pleasure to introduce some of that talent to you in the following pages of this Bristol & Bath Food & Drink Guide. These chefs are united by the common inspiration provided by the two historic cities they call home and the surrounding countryside. The cities diners therefore have every type of cuisine going available to them, from the best in traditional British dishes and European cuisine to excellent street food, superb world food and plenty of award-winners. When we opened Brasserie Blanc in Bath in 2012, I was privileged to meet many wonderful local people involved in the food industry, from suppliers to producers and retailers all of whom I am sure have the words quality, fresh food tattooed on them from head to toe. Diners of the West are a lucky bunch indeed. I have long championed a culture that takes a more considered, sustainable approach to food, something which seems to be at the heart of Bristol and Baths food scene. I truly believe, as I know many of you do, that good food ethics are essential to our planets healthy future and they provide us with exciting everchanging avours throughout the year. Enjoy exploring what these two cities have to offer.

To start, I plumped for smooth, rich beetroot and cider soup with parsnip crisps and homemade focaccia, while my companion enjoyed the melt-in-the-mouth homemade shcake. These delectable starters were followed by succulent lemon sole with caper butter and minted new potatoes for me and tender rump of lamb with Mediterranean veg, carrot pure, rosemary jus and a side of moreish hand-cut chips for my partner. My dessert of vanilla pannacotta was beautifully light and creamy and came with yummy homemade shortbread, and my companions chocolate torte with berry coulis was devilishly good. My partner and I shared artisan breads whilst mulling over the varied menu. As we dipped the fresh slices into accompanying olive oil, balsamic reduction and delightful aioli, we decided to start with box-baked Camembert with thyme and garlic, and duck and venison terrine with lightly spiced pears. The cheese was perfectly oozy, while the latter dish was clearly made by a skilled hand. To follow, I ordered the llet of salmon with herb-crushed new potatoes, wilted baby spinach and a citrus butter sauce. My partner opted for the mixed grill a plate of lamb, gammon and steak from Church Farms; local sausage; grilled mushroom and tomato; watercress; Dauphinoise potatoes and a Dijon mustard sauce. The Muset
Location 12-16 Clifton Road, Clifton, Bristol, BS8 1AF t: 0844 683 9804 w: www.themuset.com e: eat@themuset.com Amongst Cliftons pretty residential streets sits a restaurant that bets such an exclusive location. The Muset has a reputation for accomplished cuisine and exemplary service and has been awarded two AA rosettes it is certainly easy to see why. Creative young chef Jethro Lawrence (chef prole page 78) is at the helm of the kitchen, while experienced manager Jonathan Bowker heads up the front-of-house along with the rest of the dedicated staff, they make for a dream restaurant team. On our Tuesday evening visit, the resident guitarist was skilfully strumming some mellow blues tunes. The atmosphere was rened yet relaxed and the decor stylish and pleasingly unfussy; this is an unpretentious venue equally suited to special occasions as to laid-back dining. The menus reect this Jethro and his culinary crew have not only put together an accomplished la carte selection, but also some amazingly well-priced set menus. The xed-price dinner menu offers two courses for 19 and three for 22, while at lunch you can get two courses and a glass of wine for an unbelievable 10, and three for 13 which, for such high-calibre food, is an absolute steal. We were served fresh bread followed by a bouillabaisse amuse-bouche, which suitably whetted our appetites for the treats to come. While I decided to sample some of the la carte creations, my companion plumped for dishes from the xed-price evening menu. I began with the trufed potato with girolles, quails eggs and butternut squash; cutting into the crisp potato revealed a yielding melt-in-the-mouth centre, which was divine when combined with the velvety quails eggs and tangy butternut squash pure. My companion, meanwhile, couldnt stop singing the praises of the decadently rich duck pat. My main of Loch Duart salmon aked at the touch of a fork and came with plump ravioli and shellsh consomm. I couldnt resist sampling some of my companions pork belly; crunchy on the outside and juicy and tender on the inside. Dessert more than matched the high standard set by the previous two courses. My partners pannacotta was a light and creamy delight, and my Granny Smith parfait showed off Jethros adventurous cooking style; the fruity tang of the parfait paired with earthy espresso granite and silky sweet honeycomb was innovative and memorable. The residents of Bristol are lucky to have such an exciting establishment on their doorstep Jethros sophisticated yet playful cuisine means a meal at The Muset is guaranteed to satisfy and surprise in equal measure.

Goldbrick House
Location 69 Park Street, Bristol, BS1 5PB t: 0844 683 2247 w: www.goldbrickhouse.co.uk e: info@goldbrickhouse.co.uk If you have walked up and down Park Street, youll have noticed Goldbrick House and probably have thought that its a simple little caf. But let me tell you, there is a lot more to Goldbrick House than meets the eye.

...hearty, honest and unashamedly classic...

Bypassing the caf on the ground oor, we were shown to the restaurant upstairs. The room boasts opulent decor with luxurious owered wallpaper and distinctive porcelain chandeliers. Much like the surroundings, the restaurant menu is not ouncy, uffy or frilly its hearty, honest and unashamedly classic. A blackboard propped in the corner details a list of the days specials (and theres a healthy selection) offered alongside the main la carte menu. It was clear head chef Matthew Peryer had spent time crafting the stunning seasonal menu, which was full of winter warmers like Goldbrick lamb Wellington and classic dishes such as moules frites in white wine and shallots. We started our meal with sh dishes Mediterranean sh soup for her and smoked salmon accompanied by a freshly poached egg, Hollandaise sauce and rocket salad for me. Both were lovely ways to start; the hot sh soup was exceedingly well-balanced and the accompanying crostini achieved particular applause. With more than 15 main courses offered, ranging from braised pork belly with apple mash, braised red cabbage, roast shallots and cider sauce, to butternut squash and red onion tart ne with walnut, rainbow chard and Stilton salad, nobody could accuse Matthews menu of appealing to a niche market. Both dishes we chose were plentiful and, unlike many ne-dining affairs, left us wanting for nothing more. The conversion of two Georgian houses and a Victorian former bread factory, Goldbrick really is a house to explore. Looking at the wall, I noticed that Goldbrick House has been the proud holder of two AA rosettes from 2007 to 2013. Now coming into its eighth year, Goldbrick House is becoming the institution that Bristol deserves.

Dipping fresh bread rolls into caramelised orange vinegar and rosemary oil certainly helps when making your decision from the menu. Walter William Hughes had a vision in the 1860s, to build a luxury hotel away from the congestion of Bristols central streets. It was a huge success and today the Bristol Marriott Royal Hotel is a testimony to that dream, continued with the recent 21 opening of Walters restaurant. Blossoms specked with tiny lights bring an element of to romance to Walters surroundings. The ambience has an immediately soothing effect; 29 its peaceful atmosphere a million miles from the hustle of Park Street. The menu at Walters clearly demonstrates its claim to seasonal avours, including regional treats such as South Coast scallops and breaded Cornish goats cheese. The grill selection features 16oz rib-eye, rump and sirloin hailing from British herds and aged for at least 35 days. The menu is also peppered with tasty vegetarian options. We decided to try a few of the more unusual-sounding dishes. I plumped for the intriguing potted hazelnut and black pudding mousse with eggy bread. Not usually Open: Mon-Sun a fan of black pudding, this dish blew my socks off. Light, smooth mousse; subtle, slightly sweet and highly addictive, 5pm-10pm this is the kind of dish that makes you want to bribe the chef for the recipe. My main course comprised wild South Coast sea bass with bacon and puy lentils and a side of cauliower cheese. Of course, it was no ordinary cauliower cheese but breaded and lightly fried orets served with a seperate jug of cheese sauce. Finishing off with local ice cream, we were sure that Walter Hughes would smile to see his legacy still impressing, and his name on such a ne restaurant.

Papas
Location 20 Waterloo Street, Weston-super-Mare, BS23 1LN t: 0844 683 6751 w: www.papasukltd.com The task of reviewing this Weston-super-Mare restaurant was a mouth-watering prospect. There arent many sh-loving folk in the Bristol and North Somerset area who havent heard of Papas, so it was with high expectations that we visited one Saturday afternoon. Owner Adam Papa took the reins of this multi-award-winning restaurant some 18 years ago and hasnt looked back since. The rst thing we noticed on arrival was how immaculately clean the tastefully decorated dining room was. Specials boards adorned the walls detailing the latest catch and drawing attention to the wine selection, and the uniform-wearing waiting staff were plenty in number. The kitchen area is partially in view, so we were able to watch the efcient operation of the kitchen in action.

The menus ample choice caters for all tastes with fresh, sh-based dishes complemented by a selection of burgers and steaks. My partner and I went for two mainstays of the Open: Mon-Sun 11.30ammenu, the scampi and the plaice, both 10pm (last takeaway orders of which truly lived up to the hype. For dessert, we ordered ice cream from the 10.30pm) board, although a separate full dessert menu was also available. Papas is very family orientated, with special offers for children and senior citizens, as well as special deals at certain times of the day. Papas sh and chips are exceptional, so whether you take a seat or take away, youll enjoy freshly made, delicious, value-for-money food.

Guerrilla Burger

CC This burger bar with a difference enjoyed great success as a pop-up restaurant and is set to do the same with its rst permanent residence in Bristols city centre. Burgers are, of course, the name of the game here however, if you turn up expecting your * average patties, think again. Instead the menu lists a choice of sliders, which are 10 to gourmet mini burgers you can mix and match as desired. 15 We began with crispy mushroom bombs button mushrooms stuffed with herby goats cheese, wrapped in lo pastry and lightly fried and cheesy potato croquettes. I also sipped an expertly made Frozen Strawberry Daiquiri, available as both a cocktail and a mocktail. Our sliders came charmingly served in cardboard trays. We enjoyed the panko chicken topped with melted blue cheese; the Spanish, featuring a beef and chorizo patty with Manchego cheese and quince jelly; and the blue cheese with bacon and avocado. I could taste the quality in every bite of these petite burgers only local free-range meat is used to hand-make the patties in-house and they are Open: Mon-Fri noon-3pm, served in rich brioche buns (or gluten- 6pm-11pm; Sat & Sun free buns if required). Starters and 5pm-late sides are also handmade daily on-site. Marco hails from Northern Sardinia and is proud to serve produce from his home country wild boar and suckling pig abound across the island and both can be found at Marcos. My companion raved about the quality of the meat while devouring a bowl of braised wild boar with olives, but not before we had sampled an enormous sharing platter for starters. To get a real taste of traditional Sardinian food I decided to try a dish that Marcos mother used to cook lamb marinated for a few hours then cooked with artichokes, olives and cherry tomatoes. On Baldwin Street, a delightful corner of Italy is discretely tucked away from the bustle of the city centre. With Giuseppes having been recommended to me 15 several times, it was with high expectations that I nally paid my rst visit to and what a thoroughly enjoyable evening it turned out to be. 25 Greeted like old friends by the cheerful Giuseppe himself, we were soon sipping wine and browsing the tantalising menu. Following the welcome advice of our cordial and knowledgeable waiter, I opted for the baked aubergines in Parmesan and tomato sauce to start. Meanwhile, my companion required no assistance in selecting his delicious-sounding fresh mussels with spicy tomato sauce. Both dishes were wonderful ways to begin what was to be a superb meal. You can simply hop off the ferry and head inside for some delicious food, top-quality ale and a guaranteed good time. In the summer, people spill out onto the pretty patio and the steps leading down to the water, whilst winter sees diners hurrying inside for some cosy comfort food. This was our mission when we visited on a typically Bristolian rainy day, and we werent disappointed. Comfortably seated with a steaming coffee, we read the menu. I plumped for the beef and ale pie, whilst my companion couldnt resist the traditional Sunday roast beef with all the trimmings. When the food arrived, I was reminded of pub lunches of years gone by hearty and satisfying. The pie was lled with tender chunks of beef cooked in real Butcombe ale, with a crisp puff pastry lid and creamy mash. After a helping of warm chocolate fudge cake and a slab of blackcurrant swirl cheesecake, we stayed a while and took in the view of the water, with Cliftons spectacular suspension bridge in the background.

Open: Tues-Sun noon-3pm, Namaskars range of cocktails was impressive, boasting both classic concoctions and 6pm-10.30pm innovative blends. My Taj Mahal mlange, said to promote tranquillity, comprised Bar Open: Tues-Thurs Agwa de Bolivia, a herbal liqueur made noon-11pm; Fri & Sat noonfrom the coca leaf, and offered delicious midnight; Sun noon-11pm hints of lychee, coriander and lime. Passionate director Ben Washbrook described the approach at Namaskar as almost holistic they believe in the healing power of spices and wholesome, quality ingredients. Chef Arjun Khanal and his team cook with brown rice and vegetable oils none of those nasty hydrogenated types and are happy to tailor a meal to any dietary requirement. Whats more, if you linger after your meal you might catch some of the live music Namaskar regulars love.

Cliftons elegant Regent Street is where youll nd Joyraj a favourite haunt of visitors and city residents alike. Having heard very good things, our expectations were high as we made our way down the steps just inside the entrance and 20 emerged into a smart and serene restaurant area. With incense curling in the air to and pretty lamps lighting the tables, it looked the ideal spot for some delicious 25 Indian cuisine and a quiet natter. Once seated, the obligatory poppadoms and tasty fresh chutneys owed, and we relished starters of sheek kebab minced lamb, spices and herbs, barbecued on a skewer and Bengal sh, spiced and barbecued in the clay tandoor. These were promptly followed by equally well-executed mains. My tandoori king prawn masala offered huge juicy prawns marinated, grilled and cooked in a creamy almond and cashew sauce, while my companion, still undecided, was helpfully recommended the chunky chicken karahi in a tomato, pepper and onion sauce. Open: Sun-Thurs 5.30pmA side of super creamy sag panir 11.30pm; Fri & Sat complemented both beautifully, 5.30pm-midnight alongside a sweet peshwari naan. A good selection of desserts was the icing on the cake we just about managed to squeeze in the hazelnut crunch ice cream with caramel sauce. The team here have clearly perfected the art of good service our evening was seamless and we were treated with the utmost courtesy. Chatting with new owners Salim and Sohail, we learned of future big plans for Joyraj watch this space. Indian CC 18 25

...the highest quality, authentic Indian food...

The unpretentious Raj has some of the friendliest staff in the business, who ensure that their customers keep returning year after year, not just for the tasty fare, but for the whole dining experience. Whereas some restaurants have a high staff turnover making it difcult to establish character Raj very rarely changes the faces that meet and greet; all of whom are true professionals, rather than part-timers, and passionate about food. They make sure you enjoy your visit whether you are a holiday-maker or regular local. While skilled use of spices is key to a good curry, the chef also insists on the best quality ingredients and you can certainly taste the difference. The Raj is a fairly small, intimate restaurant and while parties are welcomed, larger groups would be well advised to book in advance. There are two special menus outside peak times, offering outstanding value for money: the Early Bird and the Night Owl. Book a table, see the menus or nd out more by visiting their website. Having worked in top Indian restaurants across the UK, staff are experts in what makes diners tick they can even go off-menu and have the chef put together a feast tailored to your tastes, if you so desire. On our visit, the manager worked his magic and conjured up two specials one featuring soft, tender, melt-in-themouth lamb, the other packed with juicy, succulent chicken along with uffy rice Open: Sun-Thurs noon-2pm, and ultra-light chapati bread. We 5.30pm-11.30pm; agreed both dishes offered exactly Fri & Sat noon-2pm, what one looks for in an Indian meal; 5.30pm-midnight they were punchy and aromatic, yet the spices were expertly blended and never overpowering, allowing the meats natural richness to shine through. While already an established name, Raj Pavillions always looks to the future no wonder this unique and ever-evolving local favourite has so many regulars.

Jones menus are inuenced by high-quality seasonal ingredients and local suppliers, rather than a particular style or region. Martin began his career at the Royal Crescent in Bath with Michael Croft, having graduated with distinction from Brunel Technology College, Bristol. Martins rst taste of a Michelin-starred establishment was at Pied Terre under Richard Neat. The opportunity to work with Raymond Blanc at Le Manoir aux QuatSaisons beckoned, and Martin gradually worked his way up. It was here that Martin met John Burton-Race. With Burton-Race, Martin moved to LOrtolan, where he was soon promoted to head chef at the age of 27. Eventually they moved to The Landmark Hotel in London and achieved two Michelin stars in one year. In 2003 Martin returned to the West Country where he became head chef for the opening of Whatley Manor. He is recognised for his acclaimed cuisine served in The Dining Room, attaining his rst Michelin star in 2005. In 2008 the AA awarded The Dining Room four AA rosettes and then in 2009 Michelin awarded Burge a second star. After appearing in the semi-nals of Masterchef: The Professionals, Martin is now a familiar face to many and rightly so.

Chef Jethro Lawrence is coming to the end of his second year at The Muset and what a time its been. Hes taken the restaurant to the nals of the Bristol Food Awards and the Trenchermans Awards in both 2012 and 2013, as well as maintaining its position as one of the top 300 restaurants in The Good Food Guide and helping it scoop two AA rosettes. Jethro has always seen fresh produce prioritised his mum grew lots of veg in the garden, which provided a great introduction to fresh produce for a budding chef fascinated with tastes and textures. He trained at the Plas Hyfryd Country Hotel in Pembrokeshire, starting at the bottom of the ladder as an apprentice commis chef but quickly moving up. He says his competitive streak, his desire to combat every section of the kitchen and his time spent travelling the world have all fuelled his passion for cooking. Jethro prefers to mix up his cooking style rather than stick with a trademark dish at the moment his favourite is the beef llet with smoked leek, crisp tongue and cheek, celeriac and horseradish. Getting great feedback on such dishes is what makes all the hard work worthwhile for Jethro, who strives for constant creativity, discipline and fearlessness.

Gordon Jones Menu Gordon Jones Pg 13

If you havent experienced Gordons food then you havent experienced sheer culinary poetry. A forager by nature and one of the best chefs to have recently come into the limelight, Gordon Jones cooked up a storm at The Royal Crescent in Bath before opening his rst restaurant, Menu Gordon Jones, in January 2012. Gordon spent his childhood in Scotland digging up his own vegetables for his mother to cook, and his rst brush with catering was washing dishes at the age of 14. After training under Martin Wishart and Martin Blunos, the extent to which Gordons upbringing has inuenced him only became apparent when he began writing his own menus. His unique style, incorporating Scottish and Scandinavian inuences combined with an ethically sound approach to ingredients, has brought prestige to the restaurants he has run. In his own restaurant, Menu Gordon Jones, his signature dish changes from week to week (like his menus) depending entirely on what is in season and inspires him. The winner of Best Chef at the Bath Good Food Awards in December 2012, Gordons popularity continues to grow; his restaurant is fully booked for weeks ahead with eager diners hoping to get a glimpse of the genius at work.

Having started his career sharing kitchens with some of Bristols restaurant royalty, Dan Snelling has now settled at his own award-winning foodie home. A culmination of his experience, his travels around Italy, his love for provincial French cuisine and inuence from some of our nations best-loved chefs has led to the creation of Dans own particular brand of Italian cooking, gaining Rosemarino the Best Italian and Best Breakfast titles at the Bristol Good Food Awards 2012. He is passionate about British ingredients, sourcing locally whenever he can, creating dishes of exciting textures and avours and often experimenting with cooking unusual cuts of meat in a number of interesting ways. As with many chefs, Dans rst taste of the culinary world came about through his parents his father was a chef who encouraged a young Dan to taste everything and really get excited about food. Years later, its still the creative aspect of the job that fuels his enthusiasm and gains endless appreciation from his Clifton customers and beyond.

Euan Campbell The Rose of Denmark Pg 53

The term no nonsense best describes Euan Campbells cooking style; you wont nd any fancy foams or nicky details, just good, honest, home-cooked food. This is a chef with an impressive repertoire; his career has taken him around the world, including to Australia and New Zealand, so he is well-versed in global gastronomy. In fact, he once cooked 23 different types of cuisine in one week, which is no mean feat for a chef who learned on the job.

Chef Prole

...he is well-versed in global gastronomy...

Euan doesnt have a signature dish; instead he specialises in being able to cook anything. It is unsurprising, then, that the creativity involved in being a chef is what keeps him interested; at The Rose of Denmark, he changes the menus daily in line with both the seasonal ingredients available and his latest culinary ideas (of which he has a never-ending supply). His versatility makes him an expert at catering for functions and keeps The Rose of Denmarks regulars coming back for more.
