HISTORY
OF ICE
CREAM
First Century Fiddler
Fathers Fountain Fantasies.
Believe it or not the whole thing started back
when Emperor Nero played his fiddle. Nero
had the brilliant brainstorm that led to the fab-
ulous discovery of ice cream. It was Emperor
Nero, in the first century, who sent fleets of
slaves to the mountains to bring back snow
and ice to cool and perhaps freeze the fruit
drinks he favored.
Then in the “Gay Nineties” of the thirteenth
century a world traveler named Marco Polo
brought back from the Orient a recipe for mak-
ing water ices, which he said had been in use
in the region for thousands of years. Nero fid-
dled while the ice cream froze.
Who Was Charles of the
Fizz?
Actually 300 years ago, he was Charles the
First of England. The King's French chef had
concocted a frozen dessert or cream ice which
the assembled gourmets received and con-
sumed with delight. The King was so pleased
with this culinary masterpiece that he invoked
executive privilege by pensioning the cook
with a 500 British pound annual stipend just
to restrict the recipe to the royal table. (See….

The Sigh Heard ‘Round
the World
Seventy-five years before the shot was fired at
Lexington, the soon-to-be-Americans were
oohing and aahhing over ice cream delicacies
made by a New York caterer named Phillip
Physic (no phooling, that was his real name.)
President George Washington, knowing a
great tradition when he saw one, had pewter
ice cream pots and ice cream making machines
in his Mount Vernon home. (His favorite was
strawberry.) .
President Madison’s wife, Dolly, kept things
jolly in the White House by introducing ice
cream to the Executive banquet table and by
then, ice cream was as American as apple pie.

When News Breaks, We Fix It!
Ice Cream Cone is World’s
Fair Favorite
The Ice Cream Cone was introduced at the St.
Louis World's Fair in 1904. It has remained a
favorite to this day where as many as 4,500,000
are sold each year.
Syrups, Sodas, & Sundaes
Back when Andy Jackson was still in the back-
woods of Tennessee, the folks there were sip-
ping carbonated water thanks to a fella named
John Mathews. Soda water was known in those
days to give you health, vitality and long life.
Soda shops popped up all over the country. It
wasn’t long until syrup flavorings were added
to sweeten the taste. One summer in 1874 a des-
perate concessionaire who ran out of syrup dur-
ing the noon rush, scooped ice cream into a
glass of bubbly water and the ice cream soda
was born.
A few years later prohibitionists in Evanston,
Illinois, declared soda water intoxicating and
outlawed sodas on Sunday. An ingenious drug
store operator found a loophole. He left out the
soda water and simply served the syrup on the
top of ice cream. The result was the world’s first
ice cream “Sunday”. The spelling was changed
to Sundae when town fathers objected to using
the Sabbath’s name. (If your soda hasn’t arrived

The Ice Cream Age
From the Stone Age, to the Iron Age, to the
Nuclear Age, to the Ice Cream Age civilization
marches on. Today, of course, the craving for ice
cream has spread to the four corners of our
planet. As a fiddler, Nero was not so hot, but
Nero is a hero in the ice cream world.
HISTORY OF
FARRELL’S
Our Founder, Robert Farrell
Farrell’s was founded in September, 1963, by
Robert Farrell and Ken McCarthy of Portland,
Oregon. Bob’s the man who brought back the
good old 1900’s American Ice Cream Parlour. He
did it with an unbeatable formula of fantastic

fountain fantasies, fabulous food, frolicking fun-
filled surroundings, and family type wholesome-
ness. At Farrell’s peak the chain numbered over
130 stores across the United States. Under Bob’s
leadership there was great success and no store
failures. He later sold the restaurants to a major
corporation in 1971. As it sometimes happens
with large companies, the spark was gone.
During its ownership tenure, the company began
a divestiture of restaurant assets. By 1995 only
one store remained. Keep reading because this
story has a happy ending.
Farrell’s Rebirth
In 1996, a new company, whose mission is to
bring back the heydays of Farrell’s past, acquired
Farrell’s. Our organization is staying true to
philosophies upon which the original company
was founded. Bob Farrell still resides in Portland
and runs several successful restaurant chains
and conducts speaking engagements. His “Give
‘em the Pickle” presentation has been heard by
hundreds of companies nationwide. Bob Farrell
is with us each step of the way as we bring
Farrell’s into the Twenty First Century. We
appreciate your presence here today and hope
you enjoy Farrell’s with us. Oh, what’s the “Give

Dating back as far as 1884, the hamburger became immensely popular in the 1950’s and it
looks like Americans will never tire of it. At Farrell’s we have selected variations from
around the country. Thick, juicy, and cooked to perfection, all burgers are served on an
original Farrell’s bun and Farrell’s own sauce served with fries. Any of our hamburgers can
be substituted for a turkey or veggie patty. Please add $1.25 to the price below if you want

SANDWICHES
When a savvy 18th-century servant layered some meat between two slices of bread for the
fourth Earl of Sandwich, who wouldn’t leave the table during a card game, John Montagu creat-
ed culinary history. Although the British population never sank its teeth into this idea,
Americans embraced the concept and found endless variations. Around the time of the
American Civil War, sandwiches were being served as a simple supper. By the mid-20th century,
the sandwich had become a major mealtime tradition.
