White button mushroom on compost
Requisites:
- fermented compost derived from horse dung, produced as described below
- plastic bag or other water- tight container
- casing soil (see below)
1. Substrate selection:
Construct a pile of approximately 800 kg of horse dung and straw.
Add 1 kg chalk (CaCO3) per 100 kg of material.
Spray water till it leaks out from the stack.
2. Compost preparation:
Turn the pile over after 6 days, than after 5, 4, 3, and 2 days
consecutively.
During the process the compost should be moist, but not wet.
- If water leaks out: add straw
- If feeling dry: add water.
- Under extreme climatic conditions: protect with a plastic sheet.
The ready compost should smell like fresh bread
3. Inoculation:
- mix 1 portion of spawn (mycelium on rye) with each 15 kg of
compost.
- fill 30 cm thick layers into boxes or plastic bags
- gently press the surface
- cover with plastic against drying
4. Incubation:
Place the substrates preferably at room temperature.
It takes 3 to 4 weeks at 15 to 25C till the mushroom mycelium has fully
overgrown the substrate
5. Casing:
cover the incubated substratum with a 5 cm thick layer of casing soil,
which is composed of:

- half soil without parasites: e.g. drawn from a dept of at least 60 cm
- half peat, mixed with 10 % ash or calcium carbonate.
When protected by plastic, mycelium filaments will appear on top of the
casing soil after 1 more week of incubation.
6. Fructification:
Loosen the casing soil by means of a fork, place the substrate in a humid
environment (light is not necessary), and keep the surface moist by
regular watering.
The mushrooms will appear as a series of growths (called "flushes") every
1 to 2 weeks. The substratum will be exhausted after 5 or 6 such flushes.
