Chicken & Cashew Stir-Fry Recipe

Ingredients (Serve 4)
cup cashews
1 cups chicken stock
2 tbsp orange juice
2 tbsp soy sauce
2 tsp cornflour
2 tsp sesame oil
4 chicken breast fillets (about 2g each)
1 green capsicum
2 tbsp vegetable oil
4 spring onions! choppe"
1 large carrot! slice" into thin strips
1 cup bean sprouts
1 packet (#hinese) egg noo"les
Method
1$ %oast the cashews in a large frying pan or wok over me"ium heat until

WHITE CHOCOLATE MUD CAKE
Ingredients:
250g butter chopped
150g white cooking chocolate chopped
2 cups (440g) caster sugar
1 cup (250 ml) milk
1 cups (225 g) plain flour
cup (75g) self raising flour
1 teaspoon vanilla essence

Preheat: oven to moderatel slow. *rease deep 20cm round cake pan/ line base and side with
bake paper.
Combine: butter0 chocolate0 sugar and milk0 in medium saucepan/ using wooden spoon0 stir
over low heat0 without boiling0 until smooth. $ransfer mi1ture to large bowl/ cool fifteen
minutes.
Whisk: in flours then essence and egg/ pour mi1ture into prepared pan.
Bake: in moderatel slow oven one hour. &over pan loosel with foil, bake about one hour.
2iscard foil0 stand cake in pan ten minutes then turn onto wire rack/ turn topside up to cool.
Pa!e: cake on serving plate0 spread all over with white chocolate ganache.

bowl0 stir with wooden spoon until chocolate melts. &over bowl/ refrigerate0 stirring
occasionall0 about thirt minutes or until ganache is of a spreadable consistenc.

1 cup rolled oats
1/2 cup caster sugar
3/4 cup desiccated coconut
2 tablespoons golden syrup or treacle

250g butter, softened
1 1/2 cups ra" caster sugar

1/2 cup self-raising flour
1 tablespoon brown sugar
1 egg
1/2 cup skim milk
2 small bananas
Olive oil cooking spray
Method
Sift flour into a bowl. Add 2 teaspoons brown sugar. Using
a fork w!isk egg and milk in a "ug. Stir into flour mi#ture
until "ust combined. $as! 1 banana and stir into flour
mi#ture.
%eat a large non-stick frying pan over medium !eat. Spray
lig!tly wit! oil. Using 2 tablespoons batter per pancake
cook pancakes 2 at a time for 2 to & minutes or until
bubbles appear on t!e surface. 'urn over and cook for 2
minutes or until golden. (emove to a plate. )over and keep
warm. (epeat wit! remaining batter spraying pan wit! oil
between batc!es.
Add remaining 2 teaspoons brown sugar to frying pan. Stir
in 1/2 cup warm water. )ook wit!out stirring for &
minutes or until t!ickened slig!tly. Slice remaining banana
into 12 pieces and add to frying pan. )ook for 1 minute or
until "ust warmed t!roug!. (emove from !eat. 'urn banana
to coat in sauce.
