Water goes always with ice inside the pitcher.

If the passenger wants plain water, you serve it on the table, using the snout of the bottle to
serve.

If the passenger wants water with ice, you pick up the glass and serve it from the side of the
passenger to avoid any accidents, using the side of the water pitcher to serve.

For any prepared, canned or bottled beverage, we ask for the card to charge for it as soon as
the passenger orders.

The amount of water to be served is 3/4.

2. Ice Tea: this goes also free

Have Ice-Tea pitchers ready, at least two.
Have ice tea cups ready to serve together with ice spoons, or with straw.
Serve ice cubes half the cup
Drop a lemon slice into the glass
Serve the ice tea leaving two fingers of space not filled

Pick up the cup from its bottom, never from the upper side.

3. Soft Drink: (sodas) any kind of sodas we offer onboard are canned.

You bring the glasses and set up the table before you serve.

Open the canned soft drinks with one hand.

Apperitive liquor and apperitive cocktail are not the same.

Wine

An alcoholic beverage, 99 % made of fresh grape juice under a fermentation process. 1% of
other fruits; apple, berries, fermented rice, cherries, etc. it contains 12-14 % of alcohol.

Beer It is a diuretical beverage. It helps to expulse anything out of our
kidneys. It contains 5-7 % of alcohol.

1. Fermentation: Means that the sugar from the grape juice is converted into ethyl alcohol and
carbon dioxide. Grape Sugar + Yeast Ethyl Alcohol + CO

Fermentation of Sparkling wines takes 3-6 months
Fermentation of champagnes takes 1.5 to 3 years

2. Vinification: process to make wine.

To make a wine, the 1
st
step is the harvest.

Vinification begins with the crushing process, then the stilling and then the fermentation
process that usually takes 14 days. For wines that dont need any maceration, they go straight
to the filtration process, then the bottling process, then the labelling, then the storing, selling
and consuming.

Charmat Method: second fermentation process to make sparkling wines which takes place in

It is possible to make white wine from black grapes by fermenting just the pulp of the grapes
without the peel.

To make Rose/Blush wines, ferment the grapes for a shorter period of time, and do not let it
have much contact with the peel of the grapes.

Chardonnay grape is the only one that can be consumed up to 4 years. This is the best grape in
the world. Because it is the only white grape that can age in a wooden barrel and in a stainless
steel. It usually picks up vanilla overtones in its aromas and flavor.

White grapes do not produce tannin by themselves.

Tannin is a black grape element that allows wine to age for a long time.

Black grapes can age longer. E.g. Cabernet Sauvignon from 5 to more years.

Tasting Wines

When tasting wine, each wine tastes different to each person.

Why do wines show different flavors?

Because there are usually other fruits in the same land that transmit their flavors through the
soil and water.

Sauvignon Blanc: (Fum Blanc) wine that usually shows a melon flavor when it grows in
regular weather conditions, but when it grows in a cool climate, it will show herbal or grassy
aromas and flavor.

If you drink a Sauvignon Blanc and read the label and it says it grew in a cool weather
condition, it will have a grassy flavor.

Pinot Blanc: (At Napoleons time considered the poor mans Chardonnay) It has the capacity to
adapt and produce white wines, light dry or pleasant.
It has to be consumed young because after 2 years the fruit flavors disappear and it doesnt
taste the same anymore.

Parmentier introduced Pinot Blanc in the court

Chenin Blanc: it makes white aromatic and fragrant wines with high acid level. It can also make
dry or very sweet wines.

Riesling: it makes very fruity white wines with high acid levels as well and zesty aromas and
flavors.

Zesty the outer peel of a citrus fruit, skin of citrus fruits.

Gewrztraminer: its noted for its floral fragrance and its spicy flavors. It is often paired with
spicy foods.

A spicy wine at the contact with the palate and saliva will feel prickly and effervescent.

Black Wine Grapes

Barbera: From Piedmont region in Italy. It looks like Cabernet Sauvignon but it has a high acid
level. The higher acid levels make it an especial match with full flavored foods with tomato
sauce involved.

Nebbiolo: from Piedmont region in Italy. It has a lot of tannin and it can age very well. It is the
grape responsible for the production of two of the three most popular reserves or aged wines
in Italy, that are Barolo and Barbaresco.

Reserved wines have to have at least 5 to 6 years of aging.

Grenache: (Garnacha Tinta) is a grape widely grown in Spain. It makes fruity red wines but
with light red color (clear) alike a Ros.

All red wines will have a red fruit, black fruit, chocolate or wood flavors.

Merlot: grape, it doesnt have much tannin. It has low tannin so the wines will mature faster
and they will have a softer texture. It usually shows a ripe berry flavor and aroma in its wines.

Malbec: grapes that make super red wines, inky red color wines almost violet. It is commonly
used in blending. E.g. in France Malbec is blended with Merlot and Cabernet Sauvignon to
create Bordeaux.

Cabernet Sauvignon: Its the best black grape but it also depends on its time of aging. It
produces very good red wines with tannin levels and with a long aging potential. The average
aging potential for Cabernet Sauvignon is 5 to 10 years. When it grows under regular weather
conditions, its wine will usually show a dark cherry, cedar, tobacco or black currant flavors and
aromas, but if it grows in a cool climate, the wines that it makes will have a green pepper or an
olive flavor and aroma.

This grape can last more than a hundred years depending on the condition.

Shiraz: (Syrah) it makes full rich wines of intense color and flavor. In warm climates like
Australia, Shiraz grape produces wines with sweeter and riper tasting. But in cool weathers like
in France, it will have a pepper and spicy aromas and flavors.

Gammay: (Womens wine) it produces wines with low alcohol levels, very fruity and with acid
levels. Any bottle of Gamay has to be drunk young similar to the white wines (within 2 years)

Pinot Noir: One of the three authorized grapes to make champagne. It requires special
conditions for its growth such as warm days and cool nights.
During the growing season if Pinot Noir grape receives too little heat, the wines will be thin
and pale (no color). But if the growing season is too warm, the wines will be overripe or
cooked, flavors and aromas.
The most common flavors and aromas in Pinot Noir wines are strong cherry and Strawberry.

Pinot Meunier: one the three authorized grapes to make Champagne. It makes light and fruity
wines. This characteristic fleshes out the champagne that it makes adding softness and
fruitiness.
