squares, chopped FROSTING: 1 cup (150 g) confectioners (icing)
sugar Few drops green food coloring Few drops peppermint extract
2 tablespoons boiling water 3 oz (90 g) dark chocolate, melted Cookies: Preheat the oven to 350F (180C/gas 4). Butter two cookie
sheets. Melt the chocolate and butter in a double boiler over barely
simmering water. Whisk the egg and sugar in a large bowl then stir in the
melted chocolate. Stir in the flour, baking powder, and chocolate squares.
Cover the bowl with plastic wrap and refrigerate for 30 minutes. Shape the
dough into 25 walnut-sized balls and place on the cookie sheets. Bake
for 810 minutes, until firm. Let cool for a few minutes. Transfer to a
rack and let cool completely. Frosting: Mix the confectioners
sugar, food coloring, peppermint extract and enough water
to obtain a spreadable frosting. Spread frosting on
each cookie. Drizzle with melted chocolate.

CAKE POPS 1. Prepare the cake pops
as explained on pages 89.
2. Melt the white chocolate in a
double boiler over barely simmering
water, or in the microwave. Dip the ends
of the lollipop sticks into the chocolate
one by one, then insert into the cake pops.
Wipe away any excess chocolate. Chill until the
chocolate is set, about 10 minutes.
DECORATION 3. Melt the white chocolate in a
double boiler over barely simmering water, or
in the microwave. Stir in the vegetable oil
and enough green food coloring to
make a bright green coating.
4. Prepare a polystyrene foam block to hold
the cake pops (see page 12).
5. Dip the cake pops into the melted
chocolate mixture one by one, turning to
coat and allowing the excess to drip
away. Stand the cake pops i n the
prepared foam bl ock and l et dry
completely.
6. Use the white chocolate writing pen to add
spirals and lines. Add a candle to the top
of each cake pop.
7. Stand the cake pops in the foam block until set
and dry.

WHOOPIES 1. Preheat the oven to 350F (180C/gas 4).
Set out two 20-cavity silicone whoopie pie
or macaroon baking mats. Alternatively,
line several baking sheets with
parchment paper.
2. Sift the flour, baking powder,
baking soda, and salt into a bowl.
3. Beat the butter, sugar, and vanilla
in a bowl until pale and creamy. Add the eggs one
at a time, beating until just combined after each
addition. Gradually beat in the flour mixture,
alternating with the milk, lemon juice, and zest.
4. Spoon or pipe walnut-size balls of
batter onto the silicone mats or baking
sheets, spacing about 2 inches (5 cm)
apart.
5. Bake for 1012 minutes, until pale
golden brown. Transfer to wire racks and let
cool completely.
FILLING 6. Beat the cream and sugar in a
bowl until thick. Stir in the candied lemon.
7. Sandwich the whoopies together with the
filling. Dust the tops generously with confectioners
sugar. Chill until ready to serve.
