Ingredients
For the pasta:
2 eggs
7 oz four
A pinch of salt
For the lling:
1 lbs. spinach frozen
(thawed and drained)
1 lbs. ricotta
4 tbsp grated
Parmesan
A pinch of nutmeg
(optional)
Salt
Instructions
For the lling: Place the drained spinach in the middle of a clean cheese cloth or kitchen cloth and
squeeze out any excess water.
Place the spinach in a medium bowl; add the ricotta cheese, Parmesan, a pinch of grated nutmeg
and some salt.
Using a fork, mix until combined. Set aside.
For the pasta: on a work surface put the four and the eggs, add a pinch of salt and start mixing,
once the four is absorbed continue kneading until the dough is smooth.
Wrap the dough in plastic wrap and refrigerate for 30 minutes.
On a foured work surface roll out the chilled dough, not too thin, into a rectangular shape.
Transfer the dough on the already prepared kitchen cloth and spread the lling evenly leaving
inch around the edges. Then, with the help of the kitchen cloth, start rolling the dough into a log.
Secure the ends of the kitchen cloth with kitchen twine.
Bring a large pot of salted water to a boil over high heat. Reduce the heat to a simmer. Lower the
log into the water and cook for 20 minutes. Using 2 pairs of tongs to hold the twine, remove the
log and place on the prepared baking sheet until cool enough to handle.
Using a sharp knife cut the log into 1/2-inch thick slices.
Cover the bottom of a baking pan with some marinara sauce and then fan the slices in
overlapping rows, spread some more sauce on the top of the layers and sprinkle some grated
Parmesan.
Put in the oven at 350 for an hour and serve.

ANOTHER SCHOOL YEAR
ANOTHER 10,000 SANDWICHES
ICD HUNGER BUSTER VOLUNTEERS GO ON SUMMER HIATUS
Our ICD Hunger Busters volunteers are embarking on a very well
deserved hiatus during the months of July and August after having
assembled over the 2013-2014 school year an estimated ten thousand
sandwiches wrapped and bagged along with fruit or pudding cups,
and cookies for distribution to food insecure students in the Dallas
Independent School District. The DISD provides the students with
breakfast and lunch and the children then take the bagged food home to
serve as their third meal of the day.
Our volunteers will end their hiatus on Wednesday, August 27 when
they resume their work at Hunger Busters Sylvan Avenue location in
west Dallas for the 2014-2015 school year.
In no particular order, many thanks to our volunteers Julie and Carmine
Nittolo, and Julies sister Marie Lopan who, when visiting from Las
Vegas, was drafted as a Hunger Buster volunteer; Fred and Elfriede
Napurano; Livia and Nicola Tamburrino; Charles and Carol Castellano;
Fred Hansen; Lynn Hartsell; Rae Gene and Luigi Mungioli; Dee
Mellette; Brenda Finch; Tina Neal; Semira Pacico and her mom Maria
Iannantuono also recruited while visiting from Montreal; Ken and Jan
Venuso; Nick Parigi and Dottie Parlapiano. You are all appreciated more
than words can tell. Best wishes for a happy and safe summer to you all.
See you near the end of August.

ITALY IN THE DFW AREA
For the rst two weeks of May you could shop the streets of Italy as
easily as going to one of the local Central Market stores. This year
Central Market featured Italy with Passaporto Italia. Wonderful
products from all over Italy were the specialties featured and merchants
from Italy were on hand to offer the samples. The Italian Club was asked
to participate in this celebration by adding traditional dancing to the
mix. I Colori Italiani and I Piccoli Colori performed at the Plano store
on May 1, May 3 and May 10 and also performed at the Lovers Lane
store on May 4. Of course we had a great time dancing among the wine,
cheese and prosciutto. The childrens group, I Piccoli Colori enjoyed
performing so much they did not want to stop.
Make a point to shop at the Central Markets as they have kept many of
the Italian items as part of their available inventory. You will not have to
pack it in your suitcase when you return from Italy.
JUNE BOOK CLUB NEWS - SCHEDULE CHANGE
Until further notice, the Book Club is moving its meeting days from
Thursday evenings to Wednesday evenings. With this move, the
Club will avoid incurring utility and air conditioning charges to open
on a night it would otherwise be closed. Junes meeting will be on
Wednesday the 25, at 7:00 p.m. to review The Popes Last Crusade:
How an American Jesuit Helped Pope Pius XIs Campaign to Stop
Hitler, by Peter Eisner. Eisner, an award winning journalist, relies
upon recently released information from Vatican archives and eyewitness
interviews to shape his account of a planned but never released encyclical
by Pope Pius XI. According to Eisner, the encyclical would have
scathingly condemned Hitler and the Nazis for atrocities against the
Jews, and Mussolini for his complicity in Hitlers great moral wrongs.
The Pope would have called upon Christians everywhere to uphold
the fundamental values of the faith and to resist evil. But Pius XI died
before issuing the document and, according to Eisner, the next pope,
Pius XII suppressed the encyclical in fear that such a confrontational
approach would put Catholics and the Church in danger. If you
would like more information about the Book Club, please contact the
Coordinator, Norma Iacovo at 972-386-4321 or niacovo@tnsk.com.

JUNE 2
On June 2, 1946 Italy and Italians, just out of the catastrophe of the
Second World War that had left a legacy of pain and misery, were
called to the polls for the referendum that would decide the future
constitutional foundations of the country. The choice fell between the
Republic and the Monarchy. It was the frst real consultation by universal
suffrage in the history of Italy. The turnout was very high, about 90 %,
and 24,947,187 citizens went to the polls.
The result marked the victory of the Republic with 12,717,923 votes
against 10,719,284 for the Monarchy .
The vote of June 2, 1946 also erased the already fallen myth of the strong
man of fascism as the living embodiment of the spirit of the people,
guide and beacon of a community otherwise unt to pursue their own
interests.
That disastrous experience was replaced by a new idea of popular
sovereignty, a new shared ethos that in republican structures, such
as the drafting of the Constitution, saw its sublimation. It gave birth
to a new course based on the theme of democratic participation and
representation. Ultimately the vote of June 2, 1946 represented a new
start for Italy .
The vivid memory of that time today still permeates the conscience of
many Italians. The preservation of the achievements outlined by the
Constitution, together with the defense of the republican foundations of
the nation, acts as a moral imperative for every citizen.
On June 2, 1946 Italy with a new start regained pride and dignity. On
that day Italians launched a strong appeal for peace and democracy that
after 68 years they are still called on to actively respond to several, and at
times, enormous challenges.
