Milk Substitutes

For those that can tolerate reduced lactose milk, the use of drops and pills from companies such
as Lacatid or DairyEase is a possible option to using a milk substitue.

called9 +etter Than MilkB, subtitled a CDairy Free Tofu +e3erage Mi5.C +ut don6t let that scarry
subtitle stop you, it ins the taste test ith me hands don.
2t comes in a canister, much like some of the other milk alternati3es. )n the can itself it says that
the product is caseinate free, cholesterol free, has natural +8D, is lactose%free, is rich in calcium
(?=E of the .D' in one ser3ing*, and is gluten%free.
2t isn6t sickeningly seet like the rice drinks, or too funky like the soy be3erages in bo5es. 2t6s
pretty much Fust right, as far as taste and color go. 1oe3er, tastes tend to be -uite subFecti3e, so

found it a3ailable in good health food stores. 2t is -uite e5pensi3e hen bought in small packets,
but a ? lb. package (hich they say yields A.K gallons hen mi5ed ith ater, although you can
adFust the proportions* costs ConlyC GH=.
The taste is onderful, and makes particularly good hot chocolate hen mi5ed ith a good
cocoa. 2t also mi5es ell ith the taste of dairy, for those ho can ha3e dairy too. 2 like to use it
as the li-uid in +ette 1agman6s .ice .icotta Pancakes.

1oe3er, there are se3eral changes taking place. (8* the name is changing to &ance6s DariFree,

2 thought 26d mention our fa3orite dairy substitute. My son is highly allergic, and this product
contains no gluten, soy, or rice.
DariFree is a potato%based $F milk substitute. 2t6s completely hypoallergenic and contains as
much calcium as milk. The fla3or is milder and more pleasant than soy or rice milk, in my
opinion. /ot something 2 personally drink by itself, but nice in cereal or blender shakes. My son
drinks it like it6s ambrosia, but he liked some cookies 2 once made that tasted like cabbage...

The blend of rice and soy tasted better than regular soy milk. 2t as less beany and there as

Since many casein%free milk%like be3erages, such as .ice Dream, ha3e gluten hidden in the
bron rice syrup used as a seetener, 2 am pleased to announce another product that is gluten%
free. Pacific 4ltra /on%Dairy +e3erage, from Pacific Foods in Tualatin, )regon, is gluten%free
according to a spokesperson in their lab.
The nice thing about Pacific 4ltra is that it has calcium (H=E 4S.D'*, 3itamin D (H=E
4S.D'*, ribofla3in (H=E 4S.D'*, 3itamin ' (8=E 4S.D'*, and iron (8?E 4S.D'* added.
2t also contains lactobacillus acidophilus and L. bifidus in unspecified amounts.
2t tastes okay to me, and Dylan drinks it plain or ith /estles chocolate. 1e also uses it on his
$F cereals.

the rice. 2 had been arned of this fact by !alifornia /atural Products, hich ... uses these barley
en,ymes for making Q.ice Dream6sR rice syrups. !alifornia /atural Products told me that
although they do their best to ash out all the barley, there is the potential for gluten residue and
they cannot certify their product as gluten free.
Da3id said that many !eliacs report using .ice Dream ithout ha3ing a problem. Each person
must make their on decision about this issue. Some !eliac support groups arn that there is no
established minimum le3el of gluten ingestion ithout damage.....
2n addition, Da3id confirmed that the 3anilla used in &anilla .ice Dream is prepared from grain
alcohol. Many celiac groups arn that products prepared ith grain alcohol can also contribute a
gluten residue to the end%product (unless it is 8==E corn alcohol*...Qothers disagree ith thisR

used barley en,ymes, and 2 anted to get an update on their product.
2magine Food purchases the component hich uses barley from !alifornia /atural Products.
'ccording to Leannette, !/P has been unsuccessful in its attempts to find a suitable non%barley
source for these particular en,ymes. Leannette maintains that the amount of gluten remaining in
.ice Dream is in the Cparts per millionC, but they ha3e no lab assay to back up their statement.
2 then spoke ith Loe 1all at !/P. 1e appeared -uite illing to help 2magine -uantify the
ma5imum possible gluten content in .ice Dream, and promised to fa5 his calculations as soon as
they are a3ailable.
2 also recommended that 2magine and"or !/P get their product tested at a commercial lab so that
!eliacs can get more definiti3e information about its gluten content. +oth promised to look into

calculations are correct* and should be of concern to most !eliacs. )n the other hand, if .ice

P.S. 2n my prior phone call ith 2magine, they also told me that they could not guarantee that the
3anilla fla3oring (found in some .ice Dream fla3ors* did not use a grain alcohol base. Some (but

cause discernible intestinal changes in celiacs. Each study had its on limitations and cannot be

So.... e are each going to ha3e to make our on decision as to hether or not to include .ice

clarify a fe points. Sorry to complicate things, but there are actually H gluten issues for .ice

problem for .ice Dream be3erage, but not a problem for the puddings and fro,en desserts.
(D* $rain alcohol used in the natural fla3oring. This as also co3ered in yesterday6s post. For
those ho deem grain alcohol off%limits, this is an issue ith most puddings and fro,en desserts.
!heck the label % if it says Cnatural fla3orsC, this issue e5ists.
(H* Some of the fla3ors of the puddings and fro,en desserts use barley malt as a product
ingredient, particularly chocolate and carob candy. !heck the label for CmaltC.

2 ha3e been using a soy poder from De3ansoy Farms named Solait. They ha3e a plain and a
3anilla, and 2 much prefer the plain. 4nlike most soy milk products, hose taste 2 find nearly
repulsi3e, Solait6s taste is really -uite good. 2t is seetened ith rice syrup.
2 ha3e called De3ansoy to ask hether Solait is gluten free. They claim it is. 2 challenged them
on the rice syrup, and 2 asked them to 3erify that it did not contain barley en,ymes. They claim it
does not. +ut on a somehat negati3e note, they refused to di3ulge the name of the company that
they use for their rice syrup, so 2 am not able to independently confirm that their rice syrup is
clean. So far 2 seem to digest it 3ery ell, and 2 ha3e been using it as a milk substitute in all
recipes.

So /ice soy drink from Soyaorld is gluten free, lactose free O has added calcium (great for
menopausal celiac omenS*. 2t comes in shelf tetra containers as ell as one O to litre cartons
for the dairy refrigerator sections of stores. 2t comes in a 3ariety of yummy fla3ors.
/ote that this company also makes So $ood soy drink O this product originates in 'ustralia
here heat starch is considered okay by the coeliac guidelines. 2 definitely reacted to it O ill
not use it again. 2 kno that lots of other folks can tolerate So $ood, but then there are celiacs
ho eat oats, too, ithout a problem.
To my knoledge, these products from Soyaorld are a3ailable in !anada O the States. The toll
