Ingredients

Ingredients

1 onion, chopped
2 cloves garlic, finely minced
2 tbsp olive oil
1 1/3 cup water
2/3 cup black bean liquid
1/4 cup black beans
1 cup long grain rice
Salt
Pepper
Scallions and fresh cilantro, to garnish

zucchini, diced
yellow summer squash, diced
3 baby bella or white mushrooms, sliced
cup long grain rice
1 cup water
1 tbsp olive oil

Instructions
1. Chop the onion and mince the garlic cloves. Put into the Lekue Rice Cooker with a
pinch of salt and pepper and olive oil.
2. Cook in the microwave for 2 minutes at 800watts.
3. While that is cooking, drain the black beans, saving the liquid.
4. Remove the rice cooker from the microwave; add the water, black bean liquid, rice,
and black beans. Stir all together.
5. Cook in the microwave and cook for 16 minutes at 800watts.
6. Remove from the microwave, let rest for 1 minute.
*To serve, garnish with chopped scallions and fresh cilantro.

Instructions
1. Dice the zucchini and yellow squash, and slice the mushrooms.
2. Place all ingredients into the Lekue Rice Cooker with a pinch of salt and
pepper.
3. Cook in the microwave for 16 minutes at 800watts.
4. Remove from the microwave and let sit for 1 minute. Enjoy!

Broccoli and

Curried

Ingredients
1 small onion, diced
1 clove garlic, minced
tsp mustard powder
1 tsp curry powder
cup long grain rice
cup water
cup lite coconut milk
1 tsp salt
Procedure

Instructions
1. Place all ingredients into the Lekue Rice Cooker.
2. Place in the microwave and cook for 14 minutes at 800watts.
3. Leave to rest for 30-45 seconds.
4. Remove the lid, the rice will look creamy on top.
5. With a spoon gently mix together.
6. Serve with chopped scallions.

cheese rice

1. Put all ingredients, except the cheese,

Ingredients
1/3 cup canned sweet corn, drained
1 small onion, chopped
1 banana pepper, seeded and deveined,

cup long grain rice
1 cup water
1 tbsp olive oil
2 tsp salt
1 tsp chili powder
1 tsp ground cumin

Instructions
1. Place all ingredients into the Lekue Rice
Cooker.
2. Place the rice cooker into the mi-

crowave and cook for 14 minutes at

800watts.
3. Remove from the microwave and enjoy.
