What is tannin?
Wine dryness, which provides palate-like structure for red wine,
comes from tannin, a natural chemical compound of grape skins,
seeds, stems, and oak. Its a key component of red wine and, if
uncontrolled, gives wine harshness and astringency. It can do the
same to wine as it does to a cup of hot tea after it cools down
make it bitter and hard to drink.
The majority of wine tannin is extracted during juice
maceration and fermentation. Naturally, red wine, by virtue of its
longer contact time with grape skins, has significantly more tannin,
that is, dryness, than white wine. A secondary source of tannin
comes from the oak barrels in which wine is aged. Wood tannin
contributed by barrels varies, depending on the type of oak and
toasting temperature.
Tannin also acts as a wine stabilizer, helping it age longer by
protecting aroma and flavor. It enables long-term aging in bottle, a
reason why you dont find as many old white wines as red.
Typically, a cabernet sauvignon will show significantly more of its
dry, firm tannin at two to three years old than it will after it has
aged in the bottle for say, 10 years or longer. In extreme cases, a

As you are driving on the 101, nestled right between the cities of Arroyo Grande and
Nipomo, you cannot help but notice a pristine vineyard to the east. This gorgeous piece of
land was first planted with grapes in 1982 and is now the source of sustainably-produced
wines that are not only finely crafted from start to finish, but are considered among the
highest quality wines in California.
Owner Selim Zilkha has many passions in life including renewable energy solutions and
sustainable wine operations, but one of his greatest joys is harvest and it is a good thing it
is because Laetitia has one of the longest harvests on the Central Coast stretching a span of
three months, sometimes longer.
The process begins in early August with the harvest of Pinot Noir grapes destined for
sparkling wine from the estate vineyard and Laetitias winemaking vision begins to come to
life a vision that is considered one artistic process from vine to glass, no phase, person,
grape or bottle stands alone. Harvest does not concluded until Syrah is carefully picked at
the end of October/beginning of November from their Santa Barbara Highlands Vineyard.
Seeded deeply in this process is the passion for sustainability, a concept rooted in every
aspect of the estate including everything and everyone it touches. From vines to employees
to community, Laetitia aims to ensure longevity for all the places we live, work and play
here on the beautiful Central Coast. Being consciously aware that their vineyard

The 11th Annual Paso Robles Olive Festival, a Paso Robles Main
Street Association event, will be held Saturday, August 16, 10am5pm, Paso Robles Downtown City Park (free admission and fee for
wine and beer tasting only). There will be a breakfast held the
morning of the event from 7-8am where presentations will be made
to the winners of our Olive Oil Tasting Competition and an
opportunity to met the olive growers.
The Olive Festival features Olive Oil and Olive vendors both
locally and outside our county featuring their products along with

Winemakers and Sommeliers team up to educate and challenge
your senses in a blind tasting of SRH wines. A two hour seminar, led by
Josh Raynolds of Stephen Tanzer's International Wine Cellar, will

The Santa Ynez Valley in Santa Barbara wine country is erupting with
new wineries both large and small. There are over 200 wineries providing a
wide diversity of wines and styles and many dont have their own tasting
room. Thats where Terravant The Winery Restaurant comes in. Located
just off Highway 101 in Buellton, Avant is virtually everything you need to
understand Santa Barbara food and wine under one roof.
Avant is a unique place; part restaurant, part wine tasting room and part
winemaking collaborative, so it is an ideal spot for a full meal, a light snack,
a taste of diverse wines or even a full bottle. We offer 52 wines, and over
80 bottles and our guests can choose a taste (one ounce), a half glass (three
ounces) or a full glass (six ounces), says proprietor Joe Padilla. Many of the
wines located on their Wine Wall which extends the length of the
restaurant are rotated weekly so theres always something new to sample.
The majority of these wines are made below the tasting room in the
Terravant Wine Company, a custom crush facility which you can see from
the second story restaurant window. There are about 25 local, small
wineries who make their wine here. The Wine Wall selection allows you to
sample through whites like Sauvignon Blanc, Viognier and Chardonnay, to
deep reds of Syrah, Cabernet Sauvignon and Pinot Noir, to even a few
dessert wines. This way you can check out a breadth of Santa Barbara wines
without the expense and time of visiting multiple tasting rooms.
Wine of course needs food and you will find plenty of flavorful choices
like apple wood smoked bacon wrapped dates with goat cheese drizzled
with balsamic reduction, lobster rolls and sliders. And, the best part is, you
can easily find a wine to pair with whatever food is on your plate. You

In 2006, the Crist family started their venture into winemaking by beginning to farm
their now-pristine estate vineyard located in Santa Ynez, which resulted in their first wine
vintage in 2009.
The Crist family is certainly admirable as they embrace the true meaning of a family
owned and operated winery. The passion, determination and unity shared by each family
member creates fine wines that hold true to the concept of love and family. In fact, the
name Cinque Stelle (cheen-kweh stell-lay) is Italian for five star and each star holds a
very special meaning as they represent the individual members of the Crist family and
their unique contributions and undeniable value in each step of the winemaking process.
Harvest is considered the most exciting time of the year at Cinque Stelle because as the
grapes come off the vines, the extraordinary transformation into fine wines begins.
Winemaker Matthew Crist focuses on producing only small-lot, premium wines
principally sourced from their estate vineyard and strategically made to optimize each
varietals unique characteristics. The vineyard yields limited quantities of ultra-premium
fruit specializing in Italian and Spanish varietals such as Pinot Grigio, Albarino and
Tempranillo. Matthew then makes all of the wines in oak barrels which gives their white
wines truly unique flavor profiles.
Ready for a taste? Visit Natalie Crist at Cinque Stelles tasting room located in the quaint
downtown of Los Olivos where the charming California community has embraced the
family winery since they opened their doors in town just two years ago. In addition to fine
wine, the Los Olivos location has a womens boutique graced with fine clothing and
accessories. You wont be able to resist its European flair and comfortable atmosphere that
warmly invites you to sip on a glass of Pinot Grigio as you browse the fine selection of

The Niven family, pioneers of the Edna Valley AVA, known for building their business by successfully creating
innovative and timely projects, has announced a revolutionary change in the look of their Baileyana wines. A
daring move, from a cream-colored Old World influenced text-driven label, to a decidedly New World imagebased design. Founded over 30 years ago by Catharine Niven, Baileyana's estate Chardonnays and Pinot Noirs
have played an integral role in the history and heritage of the Edna Valley.
Created by Sarah Berger of Makers & Allies, the new artwork is an abstract impression of a Baileyana Acacia
tree blossom. Artfully printed by TAPP Label Technologies, with sculpted gold emboss on a black background, it
beautifully redefines the brand, and well represents the quality of the wine in the bottle.
"We have of course made tweaks over the years," says John H. Niven. "The label has served us well no doubt,
but as we continually look at every aspect of our brands, and consider the choices presented to our consumer, it
became apparent that the opportunity existed to make much more of an impact with Baileyana. This new
package perfectly supports our efforts to relate the personality of each of our brands directly to the consumer."
Everything inside the bottle remains the same - Chardonnay and Pinot Noir grown exclusively in the
Firepeak blocks on the Niven's estate SIP Certified vineyard in the Edna Valley, and made by Burgundian-born
veteran winemaker Christian Roguenant. The wines are distributed nationally and will hit shelves soon, as
shipping of the first vintage (2013) in the new package just began.
NFWE is a true family wine company - Jack Niven pioneered winegrape planting in the Edna Valley in the
early 70s, and the second and third generations of his family currently manage the business together. They
believe in sustainability, quality, community, innovation, tradition when warranted, and keeping consumers
interested in the ever-changing world of wine. Recognizing the diversity of their SIP Certified Sustainable estate in
the cool-climate Edna Valley, they make an extreme range of wines in a wide array of carefully focused styles. No
other wine company, whether corporately held or family owned, grows grapes and makes wines of such
diversity from a single cool-climate estate. Rather than group all of these efforts under one wine brand, the

Zotovich Estate Vineyard & Winery may be a small, family-run
entity, but its handcrafted wines produce big results. Wine critic
Stephen Tanzer gave Zotovichs 2011 Pinot Noir, Chardonnay and
Syrah a high rating each receiving 92 points.
The road to success wasnt easy, however. Steve Zotovich said that
he didnt walk into a ready-made and profitable vineyard. When he
first bought the vineyard in 2004, it needed a lot of work. The weeds
in the vineyard were taller than the vines, he said. He removed a
grove of Eucalyptus, and made many other improvements. We
started out grassroots to get to where we are today, Zotovich said.
He credits his nephew, winemaker Ryan Zotovich, with
emphasizing the production of serious wines. Ryan created a team
when he joined Zotovich in 2010 with a focus on experimenting and
producing distinctive wines. Stephen Tanzer ratings of Zotovich wines
show that others find their varietals noteworthy.
Zotovichs tasting room is distinctive as well. It is located directly
across from the Lompoc Wine Ghetto, in the Santa Rita Hills Wine
Center. While the word ghetto is usually associated with negative
connotations, wine connoisseurs know that this industrial section of
the city is a hidden gem. Visitors can try wines from a variety of
different vineyards without getting in their car.
In January, Zotovich Estate Vineyard & Winery is going to hold its
5th Annual Release Party. Zotovich said he is expecting about 200
people to attend the event. It is going to be held January 24th and
includes wine tasting, dinner and a chance to socialize with family and

Scott Cellars
Scott Cellars did not set out to become a Sangiovese house, it just
happened. It was more of an evolution. Owner and winemaker Peter
Scott Fraser started making the usual Chardonnay, Pinot Noir, Syrah
etc. However, in 2007 his wife Jennifer suggested Sangiovese after his
Italian heritage. With that first vintage, it became obvious that Fraser
had a knack for the challenging varietal. One vineyard slowly
expanded to six and now the hunt is on to find more and better
vineyards. In 2012, Fraser decided to devote his winery to crafting
great Sangiovese from California.
Fraser quickly discovered how difficult it was to grow Sangiovese
well. In many respects, Fraser extols, It is just as challenging to grow
and make as Pinot Noir. It is a thin skin, finicky grape that growers
tend to put in overly hot climates. Through his close work with the
varietal, Fraser has discovered that it shows tremendous character
variation from vineyard to vineyard. This led him to name his wines
after the soil and not the vineyard. I name these wines after the
predominant soil characteristic of the vineyard, not the owners name.
Sand Dune, West Slope, Rolling Loam and Flatlands all refer to the
distinct vineyards used to create both vineyard designate wines and
Reserve style blends. As each vineyard brings its own voice to the
wine, solo and a capella versions
are created using individual
components to create wines of
